I adore asparagus but too often I trim off the tips and much of the stem goes to waste. I decided to take inspiration from one of my favourite recipes here on Zaar, Spicy Fried Celery #23818 by JanS, to create this use for asparagus stems.

20 asparagus spears, stems only, trimmed to 3 inches long
1 tablespoon vegetable oil
1 tablespoon chili flakes, or
1 small red chile, chopped
1/4 cup water
3 teaspoons sugar
2 tablespoons soy sauce

Steps:

  • Cut the asparagus stems in half lengthwise.
  • In a wok, heat the oil until very hot.
  • Put in the stems and chilli flakes or chilli and fry for 30 seconds.
  • Add the water and sugar and cook on a high heat for about 4 minutes or until the stems are nearly tender.
  • This may take longer if your stems are especially thick.
  • Add the soy sauce and cook a minute longer.
  • Serve immediately.

The tips of roasted asparagus should be just crisp and the stalks golden brown and tender.

2 thin bunches asparagus, ends trimmed
2 tablespoons extra-virgin olive oil, plus more for serving
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper

Steps:

  • Preheat oven to 425 degrees. Spread out asparagus spears in a large shallow roasting pan. Drizzle with olive oil; sprinkle with salt and pepper. Shake roasting pan gently so asparagus is completely coated in oil.
  • Roast in oven until spears are just tender. Cooking time will depend on thickness of asparagus, about 10 minutes for medium-thick asparagus. Pencil asparagus will take much less time; thick stalks will take more. Shake pan halfway through cooking time to keep spears from sticking. Just before serving, drizzle asparagus with olive oil and adjust seasoning.

1 pound fresh asparagus, trimmed and peeled (see Cook's Note)
4 tablespoons olive oil
1 teaspoon salt

Steps:

  • Preheat a grill.
  • Place asparagus on a plate. Drizzle oil over the asparagus and turn spears until they are coated. Sprinkle with salt and turn again.
  • Grill asparagus for 5 minutes over a hot grill. Each minute or so, roll each spear 1/4 turn. Asparagus should begin to brown in spots (indicating that the natural sugars are caramelizing) but should it not be allowed to char. Dripping oil may cause flare-ups. Keep a glass, or spray bottle of water handy to spritz on coals, if necessary.
  • Remove from grill and serve immediately (eating spears with your fingers enhances the experience).

We like pickled asparagus in our Bloody Mary drinks and on a relish tray. This is a recipe we have used for years.

3 lbs fresh asparagus, washed and hard bottoms snapped
1 large onion, thin sliced
14 pieces garlic
2 teaspoons dry dill weed
1/2 dried hot pepper, seeds removed
3 cups cider vinegar
3 tablespoons pickling salt
3 cups water

Steps:

  • Sterilize 7 pint canning jars,lids & rings. Keep warm & clean.
  • Wash any sand from asparagus and cut to fit jars.
  • Place asparagus,onion 2 pieces of garlic, 1/4 teaspoons dill and the pepper into each jar.
  • Into a pan place vinegar, water and salt. Place on high heat and bring to a boil for 5 minute.
  • Pour some of the vinegar solution into each jar. Slide a knife carefully around the filled jar to release any air bubbles. Wipe rims and jar sides clean and place lid and ring on and hand tighten. Place on a rack into a boiling water bath,making sure lids are covered with 1 inch of water,bring water to another boil and time for 20 minutes.
  • Carefully remove and place onto a towel to cool. Ready to eat in one month or later.

1 tablespoon butter
1 onion, chopped
24 fluid ounces chicken broth
1 pound fresh asparagus spears, trimmed and halved crosswise
1 large Idaho potato, peeled and diced
1 jalapeno pepper, seeded and minced
⅓ cup heavy cream
salt and ground black pepper to taste
1 dash hot pepper sauce (such as Tabasco®), or to taste

Steps:

  • Melt butter in a large saucepan over medium heat.
  • Cook and stir onion in butter until translucent, about 5 minutes.
  • Pour chicken broth over onions and bring to a boil.
  • Stir in asparagus and potato; cover and cook until asparagus spears are tender, about 8 minutes.
  • Mix in jalapeno pepper.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot.
  • Stir in heavy cream.
  • Season with salt, black pepper and hot sauce.

I love pickled asparagus but got tired of spending so much money on tiny little jars and decided to pickle my own. I also like it spicy but feel free to halve the crushed red pepper or omit it altogether if spice is not your thing.

1 pound thick asparagus spears, trimmed
1 tablespoon minced garlic
2 teaspoons crushed red pepper flakes
1 teaspoon mustard seed
½ teaspoon pink peppercorns
1 ¾ cups distilled white vinegar
1 cup water
1 tablespoon salt
1 teaspoon white sugar

Steps:

  • Place trimmed asparagus in a quart-sized canning jar. Add garlic, pepper flakes, mustard seed, and peppercorns.
  • Combine vinegar, water, salt, and sugar in a medium saucepan over medium heat; bring to a boil. Reduce heat and simmer for 5 minutes. Turn heat off.
  • Pour vinegar mixture over the asparagus. Screw on the lid and let sit until lid has sealed, about 1 hour.
  • Place in the refrigerator until pickled, at least 2 days.

1 bunch fresh asparagus spears
2 eggs, beaten
1 c Corn Flakes cereal, crushed fine
1/2 tsp salt
1/8 tsp black pepper
oil to fry in

Steps:

  • 1. Heat oil until hot enough to fry in.
  • 2. Mix beaten egg, salt, and pepper.
  • 3. Dip asparagus spears, one at a time, into the egg mixture.
  • 4. Then roll in Corn Flake crumbles.
  • 5. Drop into fat and fry until golden brown.
  • 6. Remove from oil and place on a paper towel to drain. Serve while hot.

Asparagus doesn't have to be treated as a delicate, fragile thing, napped only with butter or creamy sauces, or served plain with olive oil and salt. That's fine for the first week or two of the season, but then it's time to dial up the interest factor and add some spice. Asparagus actually stands up quite well to aggressive flavors. A quick toss in a hot wok with garlic, ginger and chiles doesn't overwhelm it at all, at least if you don't overcook the spears. Instead, the vegetable's sweetness becomes accentuated by contrast.

1 1/2 pounds asparagus, medium- or pencil-size
2 tablespoons vegetable oil
6 small dried red peppers
Salt and pepper
1/2 teaspoon Chinese chile paste
1 teaspoon grated garlic
1 teaspoon grated ginger
1/2 teaspoon grated orange zest
1 jalapeño or serrano chile, finely chopped
2 teaspoons sesame oil
1/2 cup roughly chopped cilantro
3 green onions, slivered
1 tablespoon toasted sesame seeds

Steps:

  • Snap off and discard bottoms of asparagus, then cut into 2-inch pieces (halve thicker pieces lengthwise first).
  • Set wok over high heat and add vegetable oil. Add dried peppers and let sizzle, then add asparagus, tossing well to coat. Season with salt and pepper. Stir-fry for a minute or so, then add chile paste, garlic, ginger, orange zest and jalapeño. Continue cooking over high heat for a minute, maybe less, until asparagus is cooked but still firm and bright green. (It will continue cooking off the heat.)
  • Mound asparagus on a serving platter and drizzle with sesame oil. Sprinkle cilantro, green onion and sesame seeds over the top.

30 medium asparagus stalks, trimmed
10 slices peppered bacon
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
1/2 cup mayonnaise
2 teaspoons Sriracha (Asian chili sauce)
2 tablespoons plus 1 teaspoon fresh lime juice
1 tablespoon plus 1 1/2 teaspoons finely chopped fresh cilantro

Steps:

  • Preheat oven to 450 degrees. Separate asparagus into bundles of 3 stalks each. Carefully wrap a piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tip; secure with a toothpick. Transfer bundles to a rimmed baking sheet. Drizzle with oil, and sprinkle with 3/4 teaspoon salt; season with pepper. Roast, flipping halfway through, until asparagus begin to wilt and bacon is brown, 20 to 22 minutes.
  • Meanwhile, whisk together mayonnaise, chili sauce, lime juice, cilantro, and 1/2 teaspoon salt in a small bowl; season with pepper. Sauce can be refrigerated in an airtight container up to 1 week.
  • Transfer bundles to a platter; remove toothpicks. Serve with dipping sauce.

  • In a large skillet, melt butter. Stir in the onion powder, seasoned salt, Cajun seasoning and red pepper flakes. Add asparagus spears, stir gently to coat. Cover and cook 5-7 minutes or until crisp-tender, stirring occasionally.
