This Asian salad dressing is delicious in a salad or on stir-fried vegetables. It will last, sealed in a Mason jar, in the refrigerator for about six weeks. A tablespoon of ground ginger may be used in place of fresh. -Judy Batson, Tampa, Florida

1/4 cup rice vinegar
1/4 cup olive oil
1 tablespoon sesame oil

Steps:

  • Place all ingredients in a jar with a tight-fitting lid; shake well. Refrigerate until serving. Shake dressing again just before serving.

Steps:

  • Whisk the vinegar, honey, fish sauce and Sriracha together in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Whisk in sesame seeds and a few grinds of pepper.

3 large cucumbers - sliced lengthwise, seeds scooped out, and cut into 1/2-inch thick half rounds
2 teaspoons salt
1 tablespoon soy sauce
1 tablespoon white sugar
3 cloves garlic, thinly sliced
2 teaspoons rice vinegar
1 ½ teaspoons toasted sesame oil
1 teaspoon hot chili oil
½ teaspoon red pepper flakes

Steps:

  • Place cucumbers into a colander, sprinkle with salt, and let drain at least 30 minutes. Shake off excess liquid but don't rinse the cucumbers.
  • Whisk soy sauce, sugar, garlic, rice vinegar, sesame oil, hot chili oil, and red pepper flakes in a salad bowl. Stir in cucumbers to coat with dressing. Chill 2 to 3 hours before serving.

½ cup red peppers (julienned)
Fresh cilantro (for serving)

3 tablespoons rice vinegar
2 tablespoons creamy peanut butter (smooth)
2 tablespoons toasted sesame seed oil

Steps:

  • Cook rice noodles according to package instructions. Most brands of rice noodles only require the rice noodles be placed in boiling water for 5 minutes and stirred a couple times. Drain the pasta.
  • While the rice noodles cook, pour the Tamari sauce, rice vinegar, peanut butter, olive oil, Sriracha sauce, cane sugar, ginger and garlic into a small blender or food processor to make the dressing.
  • Transfer the cooked noodles to a large bowl. Then add the spiralized carrots, red peppers and cilantro to the cooked noodles.
  • Pour the dressing over the rice noodles and vegetables, and toss to combine.
  • Serve with roasted peanuts, chopped green onions, fresh cilantro and lime wedges, if desired.

1/4 cup heavy cream
2 tablespoons soy sauce
2 tablespoons lime juice
1 tablespoon heaping tablespoon peanut butter
2 cloves minced garlic

2 heads romaine lettuce
1/3 head green cabbage - thinly sliced
1/2 red onion - thinly sliced
1 cucumber - peeled and sliced into bite sized pieces

Steps:

  • Combine the dressing ingredients, Mae Ploy Sweet Chili sauce, heavy cream, soy sauce, lime juice, peanut butter, and minced garlic in a saucepan. Heat ingredients over medium heat, stirring until they are all well blended. Remove pan from heat and let the dressing cool down to room temp.
  • In a big salad bowl, combine, the romaine lettuce cut into bite sized pieces, green cabbage, red onion, and cucumber, toss to combine.
  • When salad dressing is room temp, pour it over the chopped salad and toss to combine.
