Asian Chopped Salad with Sesame Ginger Dressing - So light & refreshing, yet so satisfying! Plus, it's SO easy to put together and you won't need to cook anything!

2 tablespoons low sodium tamari ((sub soy))
3 1/2 tablespoons rice vinegar
1 1/2 tablespoons toasted sesame oil
1 tablespoon agave
1 clove garlic (, minced)
1/2 tablespoon ginger (, minced)
2 1/2 tablespoons liquid from canned mandarin oranges
1 tablespoon sesame seeds
1 cup frozen shelled edamame (, thawed )
1 large head (12 oz) romaine lettuce (, shredded (about 7 cups))
1 1/2 cups red cabbage (, shredded)
1 1/2 cups carrots (, julienne (matchstick) or shredded)
1/3 cup green onions (, sliced thin)
1/2 cup sliced almonds (, raw or toasted )
1 10 oz can mandarin oranges (, reserve liquid)
1/2 cup crispy noodles ((for topping))

Steps:

  • Add all ingredients to a small bowl and whisk to combine well. Taste and adjust seasoning as needed (add a pinch of salt if desired). Place in the fridge while you wash and cut your veggies. This will give the flavors time to marinate. (* Whisk again before pouring on salad)
  • To a large mixing bowl, add the lettuce, cabbage, carrots, edamame, almonds, and green onions. Toss to combine well.
  • If you're ready to serve the salad, add the dressing (*whisk before pouring) and half the oranges. Gently toss to combine. Some of the dressing will settle to the bottom, so if you feel the veggies need more coating, just toss gently again. Top with crispy noodles and the remaining oranges. You can sprinkle on sesame seeds too. Enjoy!

Inspired by California Pizza Kitchen's recipe, this Thai crunch salad with peanut dressing always satisfies.

¼ cup creamy peanut butter
2 tablespoons unseasoned rice vinegar
2 tablespoons fresh lime juice, from one lime
3 tablespoons vegetable oil
1 tablespoon soy sauce (use gluten-free if needed)
2 tablespoons honey
2½ tablespoons sugar
2 garlic cloves, roughly chopped
1-inch square piece fresh ginger, peeled and roughly chopped
1 teaspoon salt
¼ teaspoon crushed red pepper flakes
2 tablespoons fresh cilantro leaves
4 cups chopped Napa cabbage or shredded coleslaw mix (I like to toss in a little shredded red cabbage for color)
1 cup prepared shredded carrots
1 red bell pepper, thinly sliced into bite-sized pieces
1 small English cucumber, halved lengthwise, seeded and thinly sliced
1 cup cooked and shelled edamame
2 medium scallions, thinly sliced
½ cup loosely packed chopped fresh cilantro

Steps:

  • For the dressing, combine all of the ingredients except for the cilantro in a blender and process until completely smooth. Add the cilantro and blend for a few seconds until the cilantro is finely chopped. Refrigerate until ready to serve.
  • For the salad, combine all of the ingredients in a large bowl and toss to combine. If serving right away, drizzle the peanut dressing over top and toss; otherwise, serve the dressing on the side so the salad doesn't get soggy.

Steps:

  • In a large bowl, combine marinade ingredients.
  • Add chicken into the bowl, coat the chicken, and marinate for 30 minutes in the fridge.
  • Fully cook chicken.
  • Cut into cubes.
  • In a mason jar, combine ingredients for the dressing. Shake and set aside.
  • Prep the salad. Add all of the salad ingredients into a large bowl and add the cubed chicken and dressing. Toss.
  • Enjoy!

1 cup drained giardiniera salad (hot pickled vegetables), available in Italian foods aisle or in bulk bins near specialty olives in the grocery store
1 lemon, juiced
Extra-virgin olive oil, for drizzling

1 pound linguine, broken in half
4 tablespoons oriental sesame oil
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1/4 teaspoon cayenne pepper
3 red bell peppers, seeded, thinly sliced
3 cups snow peas
1 large red onion, thinly sliced
3/4 cup honey-roasted peanuts, coarsely chopped
1/2 cup chopped fresh basil

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain very well. Transfer to large bowl.
  • Whisk 3 tablespoons sesame oil, honey, soy sauce, vinegar and cayenne pepper in small bowl to blend. Season with salt. Mix half of dressing into pasta. Heat remaining 1 tablespoon oil in heavy large pot over medium-high heat. Add bell peppers, peas and onion and sauté until just beginning to wilt, about 2 minutes. Add vegetables to pasta. Mix in peanuts, basil and enough dressing to coat. Serve, passing any remaining dressing separately.
