1 cup oil-packed sun dried tomatoes, drained and chopped
1 (7.5 oz.) jar marinated artichokes, drained and chopped
3-4 green onions, chopped
1/2 teaspoon garlic salt
1/2 teaspoon pepper
Baguette slices, crackers or veggies, for serving

Steps:

  • In a large bowl, beat the cream cheese, sun-dried tomatoes, artichoke hearts, green onions, garlic salt and pepper until well combined.
  • Serve with baguettes, crackers or vegetables. Store covered in the refrigerator for 3-4 days.

Update: My recipe was just published in the Taste of Home Holidays & Celebrations 2011 Cookbook. Tangy & creamy, this artichoke dip boasts the colorful addition of sun-dried tomatoes. Serve with plain or multi-grain baked tortilla chips. Developed for Ready Set Cook #11 - January 2008 Update 2/27/2013: Thanks to Racrgal for a really productive conversation regarding making this recipe in advance. That led me to run a series of tests. *I made four versions and found that it can be made a day in advance and refrigerated before baking, or made months in advance; frozen and then thawed before baking. Both oil-packed and dry-packed sun-dried tomatoes were tested to make sure the oil did not cause bleeding during thawing.

2 (8 ounce) packages cream cheese
1/2 cup mayonnaise
2 shallots, finely chopped
1 tablespoon garlic, minced
1 (6 1/2 ounce) jar artichoke hearts, roughly chopped
1 (10 ounce) package frozen spinach, thawed & drained
3/4 cup asiago cheese, grated
1 cup sun-dried tomato, chopped (can use dry or oil-packed tomatoes)

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 2 quart baking dish with cooking spray.
  • In large bowl combine cream cheese, mayonnaise, shallots & garlic.
  • Stir in artichoke hearts, spinach, tomatoes & cheese. *At this point you can wrap the baking dish in saran wrap and refrigerate overnight, or wrap in 2 layers of aluminum foil and freeze for 2 months (maybe even more). When ready to serve, remove from fridge or freezer and thaw (if needed) on counter before baking as directed.
  • Bake uncovered for 25-30 minutes, or until the cheese that sticks out the top of the mixture begins to brown slightly.
  • Serve with fresh vegetables or baked tortilla chips for dipping.

2 tablespoons unsalted butter
1/2 red onion, cut in small dice
2 jalapenos, seeded, cut in small dice
1 teaspoon salt
Three 12-ounce jars artichoke hearts in water, drained
8 ounces cream cheese, cubed
1 cup sour cream
1 1/2 cups shredded jalapeno Jack cheese

Steps:

  • Melt the butter in a large skillet or saute pan over medium-high heat.
  • Add the red onions, jalapenos and salt and cook until the onions are soft and translucent, 5 minutes.
  • Add the artichokes and cook until starting to fall apart, 8 to 10 minutes.
  • Reduce the heat to medium and add the cream cheese, stirring until melted.
  • Add the sour cream and Jack cheese and mix until well combined.
  • Transfer the dip to a warmer or slow cooker to hold for serving.

1 14 oz. can artichoke hearts; drained and chopped
8 ounces cream cheese; softened
1/2 cup parmesan cheese; grated or shredded
1/2 cup Jack cheese; shredded
1/2 cup sour cream
1/2 cup mayonnaise
1 7 oz. can pickled jalapeños; add more or less for heat
1 tsp. garlic powder
1 tsp. onion powder
salt and pepper to taste
tortilla chips, bread or crackers

Steps:

  • Place all of the ingredients in a large bowl and beat with an electric mixer until combined, about 1-2 minutes. Scrape down the sides of the bowl and mix again. Transfer the dip to a bowl and serve with your favorite chips, crackers or bread slices. Enjoy!

Kosher salt
1 10-ounce bag baby spinach
1 cup packed fresh basil
3/4 cup canned cannellini beans, drained and rinsed
6 ounces Neufchatel cream cheese
1 clove garlic, smashed
1/2 cup low-sodium chicken broth
1 14-ounce can artichoke hearts, drained, squeezed dry and finely chopped
1/4 cup grated parmesan cheese
3/4 cup shredded low-fat mozzarella cheese
Pinch of cayenne pepper
2 or 3 dashes Worcestershire sauce
Freshly ground black pepper
Nonstick cooking spray
Baked chips, for serving

Steps:

  • Preheat the oven to 450. Bring a pot of salted water to a boil and prepare a bowl of ice water. Stir the spinach and basil into the boiling water and cook until bright green, about 30 seconds. Remove with a slotted spoon and immediately plunge in the ice water. Drain and squeeze dry, then roughly chop.
  • Puree the beans, cream cheese, garlic and chicken broth in a food processor until smooth, scraping the sides as needed. Transfer to a medium bowl and fold in the spinach and basil, artichokes, parmesan and 1/2 cup mozzarella. Add the cayenne, Worcestershire sauce, 1/2 teaspoon salt, and black pepper to taste.
  • Mist a deep 1-quart casserole dish with cooking spray. Spread the dip mixture in the dish and top with the remaining 1/4 cup mozzarella. Bake until golden and bubbly, 20 to 25 minutes. Serve warm with baked chips.

1 cup sour cream
1 cup mayonnaise (NOT Miracle Whip or salad dressing)
3 cups cheese, shredded (any combination of cheddar, Colby Jack, Monterray Jack, mozzarella, Parmesan, or other great melting)
0.5 (4 ounce) can jalapenos, diced
1 (4 ounce) can diced green chilies
1 (14 ounce) can artichoke hearts
3 tablespoons parmesan cheese, finely grated (we use the powdery stuff in the shaker)
1/2 teaspoon paprika

Steps:

  • Drain and chop artichoke hearts.
  • Combine artichoke hearts with remaining ingredients. Use as much or little of the jalapenos as you can handle. (When I make this for my family, I use an entire can, but when I make it for guests, I usually only use half of the can.).
  • Pour into baking dish.
  • Sprinkle with grated Parmesan cheese and paprika.
  • Bake at 400 degrees until bubbles around edges.
  • Serve with tortilla chips, crackers, as a sandwich spread, etc.
  • NOTE: Depending on preference, you can do a rough chop on the artichokes for a chunkier dip, or you can put all the ingredients (except for the cheese) in a blender to puree for a smoother dip.

1 cup parmesan cheese, freshly grated
4 jalapenos, seeded, finely chopped
1 (6 ounce) jar marinated artichoke hearts, drained, reserve marinade
2 teaspoons Tabasco sauce, green jalapeno sauce
kosher salt, to taste
fresh ground pepper, to taste

Steps:

  • Use a food processor with metal blade to finely grate Parmesan cheese.
  • Add the cream cheese, mixing well.
  • Transfer cheese mixture to a mixing bowl.
  • Chop jalapeño peppers in processor, add drained artichoke hearts and process just until coarsely chopped.
  • Add artichoke/jalapeño mixture and the jalapeño sauce to cheese mixture.
  • Mix well.
  • If needed, add small amount of additional marinade to obtain desired consistency.
  • Salt and pepper to taste.
  • Refrigerate until ready to serve.
  • Serve with a variety of crackers or chips.
  • Makes 16 servings or yields 2 cups.

2small fresh red chillies , seeded
2 red peppers , seeded and roughly chopped
2 garlic cloves , crushed
1 shallot , roughly chopped
400g can chopped tomato with juice
100g dark muscovado sugar
3 tbsp sherry vinegar

Steps:

  • Blend the chillies, peppers, garlic, shallot and tomatoes in a food processor until smooth.
  • Pour the purée into a stainless steel saucepan, add the sugar and vinegar, then bring to the boil, stirring from time to time. Reduce the heat and simmer for 40-60 mins until thick, stirring regularly, especially in the latter stages of cooking.
  • Pour into large, warm sterilized jars then cool. This will keep for up to 2 weeks in the fridge.
