Steps:
- In a medium container with a lid, mix canola oil, tarragon vinegar, sugar, thyme, dry mustard, and garlic. Cover, and shake until well blended. Place artichoke hearts into the mixture, cover, and marinate in the refrigerator 4 hours, or overnight.
- In a large bowl, toss together lettuce, red bell pepper, carrot, red onion, black olives, green olives, cucumber, and Romano cheese. Season with pepper. Pour in the artichoke and marinade mixture, and toss to coat.

SPICY ITALIAN PASTA SALAD WITH HAM AND PEPPERONCINI
Crushed red pepper and pepperoncini add a little heat to this pasta salad with ham and an easy vinaigrette.

- Bring a large pot of salted water to a boil.
- Whisk the oil, vinegar, red pepper flakes, shallot, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
- Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add to the bowl with the dressing.
- Add the ham, tomatoes, celery, basil, pepperoncini and oregano to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

- Combine the garlic, pepper, red onion, lemon juice, red wine vinegar, olive oil and salt and pepper, to taste, in a large bowl.
- Add the chickpeas, tomatoes, mint, and cilantro. Season with salt and pepper, to taste, and toss in the lettuce.

This is one of my creations that I served with Chicken and Veal Marsala, Fettuccini Alfredo, and Italian Garlic Bread for a dinner I had with company last winter... It was a perfect salad to serve with my special Italian dinner!

- Salad:.
- Add greens to a lg. salad bowl. Mix well.
- Add peppers, onions, artichokes, pepperocini peppers, tomatoes and black olives. Mix well with salad forks or with your hands.
- Season with salt and pepper.
- Make dressing.
- Makes 8 servings.
- Dressing:.
- Mix oil, vinegar, sugar, thyme, dry mustard and garlic together well in a bowl with a whisk.
- Add to salad mix right before serving, and mix well with salad forks.
- Add Parmigiano Reggiano, if using.
- Top with croutons, and serve.

SPICY ANTIPASTO SALAD

- Spicy Pepper Dressing: Into a blender, add sweet red peppers, both hot sauces, oregano, vinegar, lemon juice, and sugar. Purée on medium-high speed. With the motor on, add olive oil, then vegetable oil. Turn blender off. Peel garlic clove, use a Microplane to grate it into the blender, then purée again to combine until the dressing is completely emulsified and smooth.Pour Spicy Pepper Dressing into a lidded container and set aside. Makes around 2 cups. (Store in an airtight container in the refrigerator for up to 2 weeks.)
- Salad: You'll slice the ingredients individually and add them to a large mixing bowl as you go. First, use a mandoline to slice the cabbage into thin strips. (As the cabbage gets closer to the blade, curl your fingers up to avoid accidents!) Cut the stems off the mushrooms and discard; thinly slice the mushrooms. Thinly slice celery. Slice scallions into 3 parts: the white stem, green top, and the middle. Discard the middle section, which tends to collect dirt, and thinly slice the rest of the scallion sections.
- Slice and add the remaining ingredients to the bowl: Stack a few slices of soppressata together and thinly slice into matchsticks; repeat until all the soppressata is sliced. Remove outer rind from provolone, then slice into thin planks. Pull dill fronds from the stems, then roughly chop. Slice olives in half.
- Assemble: Drizzle ½ cup of Spicy Pepper Dressing around the outer edges of the salad. Use two serving spoons to gently toss so the dressing coats all of the ingredients. Add another ¼ cup dressing, or more as desired, and toss again. Transfer to a serving bowl and enjoy right away.
SPICY CHICKPEA SALAD
This is my own creation, I LOVE chickpeas, but I like them spicy hot. So, before you make this recipe, remember we all have different tastes! This is a VERY adaptable recipe, you can add what you want, adjust the heat level, decrease the salad dressing, you name it, this is a very flexible recipe! I serve this over hot toasted pita bread, or just as a side dish. I've replaced the asparagus with sliced zucchini, little broccoli florets, whatever is in the fridge... Note that preparation time does not include the 1 hour resting time in the fridge.
