SPICED APPLE PANCAKES

Steps:
- Preheat oven to 450 degrees F.
- Using a 12-inch cast-iron skillet, heat butter, water, and 1/2 cup sugar over medium-high heat until boiling.
- Add apple wedges
- Cook 12-15 minutes (stirring occasionally) or until apples are golden and sugar begins to caramelize.
- In a blender or food processor with the knife blade attached, mix eggs, milk, flour, spice, salt, and remaining sugar. (ADD LIQUID INGREDIENTS FIRST). Blend until batter is smooth.
- When apple mixture in skillet is a deep golden color, pour the batter over the apples.
- Place skillet in oven and bake 15-17 minutes, until puffed and light brown.
- Serve Immediately.

- In a large bowl, whisk together flour, baking powder, cinnamon, ginger and salt.In a medium-sized bowl, whisk eggs, milk and maple syrup. Pour egg mixture into flour mixture and stir to combine. Stir in grated apples and pecans.Heat a nonstick or cast-iron skillet over medium heat, or heat a griddle to 375ºF. Lightly coat skillet with cooking spray.Using a ¼-cup measuring cup, scoop batter into the skillet, a few pancakes at a time. When pancakes start to bubble on top, flip and cook until pancakes are cooked through all the way. Repeat with remaining batter. (Makes 20 pancakes.)Serve pancakes with maple syrup and fresh fruit, if desired.

- Preheat the oven to 200 degrees F. Set a wire rack on a baking sheet and place in the oven.
- Whisk 1 3/4 cups flour, the sugar, baking powder, salt and nutmeg in a large bowl. In small bowl or liquid measuring cup, whisk the eggs with the milk and vanilla extract. Melt 3 tablespoons butter in a large well-seasoned cast-iron or non-stick skillet over medium heat. Whisk the butter into the milk mixture. Add the liquid ingredients to the dry mixture, and whisk just long enough to make a thick batter, (if there are a couple lumps that's okay).
- Using a melon baller or an apple corer, peel and core the apples keeping them whole. Slice the apples crosswise to make 1/4-inch rounds. Put some flour on a plate and dredge the apple slices until lightly coated, shaking off any excess flour.
- In the same skillet over medium to medium-low heat, place 3 apple slices about 3-inches apart in the skillet. Cook without turning until browned, about 3 minutes. Ladle about 2 tablespoons of the batter over each apple ring. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 to 3 minutes. Add a nut-sized bit of butter to the skillet, as needed, and flip the pancakes, cook until golden on the underside, about 1 minute more.
- Serve immediately or transfer to oven to keep warm. Repeat with the remaining apples and batter. Serve with warm maple syrup.
SPICY APPLE PANCAKE/FRITTERS
My boyfriend and I came home one night after a long long long day of work and play. We were starving and oh no, there was NOTHING to eat. I had just been on this whole baking kick weeks prior so there was tons of flour and eggs left from it, so I (very tiredly) concocted this. Its so basic you probably have already made it yourself but its so yummy and hit the spot for both of us. You can serve it up with anything. I used crunchy peanut butter and honey on top and my boyfriend used apple custard. Of course you can top with maple syrup or any thing really... be creative. There is one ingredient, I bet that will surprise you. Enjoy.

Steps:
- Mix all ingredients together well.
- Use a 1/4 cup to scoop up mix and fry in butter, soy butter, oil, non-stick spray, etc. just like you would a pancake. I used avocado butter, but I live in New Zealand now where everything is avocado.
- Keep finished cakes warm in oven on low till all mix is used.
- Top with whatever you want. Eat. They go down best when you eat them with someone you love.
