6 HOUR TRI-TIP MARINADE

Steps:
- To make the marinade, mix all of the ingredients except for the beef in a large mixing bowl. Place the trimmed tri-tips in a plastic container and pour the marinade over. Let stand in the refrigerator for at least 6 hours.
- Heat grill to medium temperature.
- Place tri-tips on grill at a 45-degree angle to establish grill marks and cook about 35 minutes, or until cooked to desired doneness. Remove the tri-tips from the grill and let rest about 2 to 5 minutes before slicing. Serve with your favorite side dishes.

If I could use only one marinade for the rest of my life, it would be this one. Redolent with garlic, piquant with fresh lemon juice, and fragrant with extra virgin olive oil, it instantly transports you to the Mediterranean.

- Combine the lemon juice, hot pepper flakes, cracked pepper, and salt in a nonreactive (glass, ceramic, or stainless steel) bowl and whisk until the salt crystals are dissolved. Add the lemon zest, garlic, parsley and basil. Stir or whisk in the olive oil. The virtue of this marinade is its freshness: Use it within 1 to 2 hours of making. Stir again before using.
SPIEDIES MARINADE
Growing up in Upstate NY, this is a classic spiedies marinade for any form of meat (I prefer chicken, though lamb is the traditional) from Binghampton/Endicott area. Here is my personal take that I have switched up some adding ingredients from my time in the South and PacNW. Serve skewers on lightly toasted French bread or a hot dog bun. To eat, squeeze the roll and pull the skewer out - shouldn't need condiments (maybe a touch of hot sauce).

- Combine oil, wine, lemon juice, vinegar, salt, pepper, thyme, oregano, tarragon, red pepper flakes, and cayenne pepper in a bowl. Stir in onion and garlic. Add chicken cubes last; coat thoroughly.
- Pour mixture into a resealable freezer bag, making sure there is as little air as possible in the bag. Wrap bag in a paper towel and slide it into another resealable bag so that the zippers are at opposite ends. Refrigerate, flipping over every 12 hours, for 2 to 3 days.
- Soak wooden skewers in water. Thread the chicken cubes through the skewers, discarding marinade.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill the chicken skewers, flipping halfway, until juices run clear, 8 to 10 minutes.

STEAK MARINADE, QUICK AND EASY
This turns an average grocerty store bought steak into a good restaurant tasting steak. It takes only minutes to prepare and marinade can be for 30 minutes to overnight. Ooh, so good!

- Mix it all together and marinade steak for 30 minutes to overnight.
- Garlic will be stronger the longer you marinade.
- Don't be afraid of the garlic it makes the steak taste wonderful!
- Either grill the steaks or pan fry them in butter.
- Either way they're great!
- I do both; I grill them til they're almost done then finish the cooking by pan frying.
- This turns an average grocery store steak into a delicious good restaurant tasting steak.

TRI-TIP MARINADE
It's our favorite marinade for tri-tip. The original recipe is from the Food Network site, but I've changed it so much that I claim it as my own :) It's SO tender and flavorful!! Marinate for at least 6 hours or over night. This is enough marinade for a 2-3 lb. tri-tip.

Different from previously posted version on Zaar. I love Five Spice Powder and am always searching for new ways to use it in recipes. This version was oringally from a magazine clipping, although I am not sure which one. Marinade is enough to use for 1 pound of meat. (Find sesame oil and Five Spice powder in Asian markets; chili oil is oil flavored with hot chili peppers)

- To USE: Divide mixture in half and use one portion to marinade meat at least 1 hour (chicken, beef, or pork); after meat has marinated, drain and discard and then cook meat according to your preferred method.
