- Stir together yogurt, onion, lemon juice, garlic, ginger, paprika, cumin, salt and pepper in a large bowl.
- Add chicken and toss to coat with marinade. Cover and refrigerate at least 8 hours or up to overnight.
- Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper.
- Remove chicken from marinade, letting excess drip off.
- Place chicken pieces on baking sheet. Discard remaining marinade.
- Bake until chicken is cooked through, 35 to 40 minutes.
- Alternately, to grill the chicken, prepare a grill for medium heat cooking. Grill chicken until it is cooked through, 7 to 10 minutes per side.

YOGURT-MARINATED CHICKEN SKEWERS

- For the ras al hanout: Add the cumin, cardamom, cinnamon, paprika, nutmeg, cayenne, cloves, allspice, coriander, pepper and turmeric to a jar with a lid. Cover and shake to combine. Measure out 1 tablespoon for the chicken and put in a large bowl. Store the remaining spice for up to 3 months in the jar and use as desired.
- For the chicken: In the bowl with the ras al hanout, add the yogurt, mint, oil, salt, sugar, harissa, garlic, finely chopped onion, juice from half of the lemon and about 12 turns of pepper (about 1/2 teaspoon) and mix to combine. Fold in the chicken to evenly coat, then cover and let marinate in the refrigerator for at least 3 hours and up to overnight.
- Soak 8 wooden skewers in water for at least 30 minutes.
- Thread the chicken pieces on the skewers, adding the bell pepper and onion pieces in between the meat.
- Heat a grill or grill pan over medium-high heat. Cook the skewers, turning them occasionally, until they're deeply browned on all sides and cooked through, about 7 minutes per side. Squeeze with the juice from the remaining lemon half before serving.
SPICED ROAST LAMB

- Stir together the marinade ingredients and season with ½ tsp ground black pepper and 1½ tsp flaky salt. Slash the lamb several times on both sides, then massage the marinade all over it. Seal into a large food bag or non-metallic container and chill overnight (or at least for a few hrs). Let the lamb sit at room temperature for 1 hr before roasting.
- Heat oven to 220C/200C fan/gas 7. Put the lamb into a foil-lined roasting tin and roast for 20 mins. Turn the oven down to 190C/170C fan/gas 5 and roast for 1 hr 20 mins for meat that's pink near the bone. Cover loosely with foil halfway through cooking or once the marinade has charred and the meat looks golden.

- Combine yogurt, lemon juice, and garlic in a medium bowl; season with salt and pepper. Transfer 1/2 cup yogurt mixture to a small bowl and set aside for serving. Stir cumin, coriander, turmeric, and allspice into remaining yogurt mixture.

- Combine the yogurt, coconut aminos, garlic, salt, peppercorns, turmeric, and ginger in a blender. Use a Microplane to grate in the zest of both lemons, then halve one and squeeze in the juice. Reserve the re-maining lemon for another purpose. Blend on high speed until smooth, about 1 minute.
- Rinse the hens under cool water, inside and out, and pat dry very well. Put them in a large bowl or pan and spoon about one third of the yogurt marinade into the cavities of the birds, spreading it around as best you can. Pour the rest of the marinade over the hens, using the spoon to make sure they're completely coated, tops and bottoms, including the wings and crevices between the legs and breasts.
- Cover and marinate in the fridge for at least 16 hours or up to 2 days.
- About half an hour before you're ready to cook the hens, remove them from the fridge to take the chill off. Heat the oil in a wide, heavy skillet over medium heat until shimmery. Add the onions and 1½ teaspoons of the salt. Stir well, and cook, stirring occasionally, until the onions start to soften and release liquid, about 3 minutes. Reduce the heat to a gentle simmer, stirring occasionally, until all the liquid has evaporated and the onions have a creamy texture, turn a deep golden color, and taste very sweet, about 20 minutes.
- Preheat the oven to 450°F. Spread the potatoes on a large sheet pan, sprinkle with the remaining 1½ teaspoons of salt, and toss well. Add the cooked onion mixture, stir well, and spread them to make a bed for the hens-a snug single layer in the center of the pan.
- Take the hens out of the marinade (don't scrape any off, but do leave behind anything left in the bowl) and put them on the potato-onion mixture, with a few inches of space between each one. Roast until the hens are golden brown with some dark patches and poking the thighs reveals juices with no trace of pink (a thermometer inserted into the thickest part of the breast should register 150°F), 40 to 45 minutes.
- Let the hens rest in the pan for 15 minutes, then transfer to a platter to serve.

- Remove the neck and giblets from the turkey and reserve for another use. Rinse and dry the turkey inside and out. Set it in on a work surface or in a large baking pan. Sprinkle the cavity with salt and pepper and put 2 lemon slices and 3 garlic cloves in the cavity. Truss the legs of the turkey by cutting off a 12-18 inch piece of twine and tying the legs together (see photo on the blog).
- Spoon the Aleppo pepper (or the red pepper flakes and paprika) into a large bowl. Add 2 tablespoon of warm water (3 tablespoons, if using pepper and paprika) and stir to moisten the spices. Set aside for 5 minutes. Add the yogurt, tomato paste, olive oil and salt to the bowl. Mix gently with a fork, stirring only in one direction, until the ingredients are just combined. Add the remaining lemons and garlic to the bowl, and gently stir, in the same direction.
- Preheat the oven to 450ºF. Place the oven rack in the lowest position. Make sure the trussed turkey is in your roasting pan – breast side up. Pour the yogurt marinade over the top of the turkey. Lift the bird by the neck and, using your hands, smear some marinade over the bottom of your turkey. Pat marinade over the wings and legs and any areas that are bare. Let the turkey sit with the marinade at room temperature for 30-45 minutes. (Or you can marinate the turkey for up to 24 hours in the fridge).
- Before cooking, mound excess marinade onto the turkey. Remove any garlic cloves from the top of the turkey to prevent them from burning, leaving them in the pan. Gently place some lemon slices around the top – decoratively, if you like. Roast the turkey at 450ºF for 30 minutes. Remove the pan from the oven and set it on a heat-proof surface. Gently pour the melted butter over the top of the turkey. Return the turkey to the oven. Lower the heat to 350ºF and roast the turkey for 2 – 2 1/2 hours longer, or until a meat thermometer inserted into the thickest part of the breast registers 161F – baste every half hour with pan juices – add a cup of stock to the pan when it looks dry – if any part of the turkey is getting too brown, press some foil over it.
