SPICY EDAMAME (SOY BEANS)
Steps:
- Gather the ingredients.
- Cook frozen edamame (in their shells) in boiling water for 5 minutes.
- Rinse quickly with cold water. Drain completely. Set aside, and allow edamame to dry off slightly. Use a paper towel if necessary to remove excess water.
- In a large pan, heat sesame oil and chopped garlic over medium heat until fragrant.
- Add Japanese rayu (chili oil) and cooked edamame (in their shells). Quickly stir-fry, then turn off heat.
- Add shichimi togarashi (7-spice chili peppers) and salt. Gently toss.
- Serve spicy edamame on a platter and garnish with red chili pepper flakes.

SPICY BAKED BEANS
Tangy and sweet old-fashioned baked beans with a little jalapeno. They're easy to make and great at a BBQ, hamburger night, a picnic, etc. My husband's favorite semi-homemade recipe. Says the sweetness and fire create a super depth of flavor. It's not strong enough to overwhelm the sweet home-style of baked beans.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir bacon in a large skillet over medium-high heat to render some fat, 2 to 3 minutes. Stir onion into the rendered fat and cook until the bacon is crisp and the onion is tender, 7 to 10 minutes.
- Stir baked beans, ketchup, brown sugar, Worcestershire sauce, prepared mustard, minced jalapeno pepper, chili powder, and mustard powder together in a large bowl; add bacon mixture and stir. Pour the mixture into a 13x9-inch baking dish.
- Bake in the preheated oven until the liquid has thickened, 45 to 55 minutes.

- Bring a large pot of lightly salted water to a boil. Add the bean sprouts, and cook uncovered until tender yet still crisp, about 15 seconds. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the bean sprouts are cold, drain well, and set aside.
- Whisk soy sauce, sesame oil, chile powder, garlic, and sesame seeds together in a large bowl. Stir in bean sprouts and toss until well coated with the sauce. Sprinkle with green onions and season with rice wine vinegar. Refrigerate before serving.

SPICED UP POTATOES

- Preheat the oven to 350 degrees F.
- Bring the water to a boil on the stove.
- Add the frozen soy beans to the water, reduce the heat to medium low, cover, and simmer for 4 minutes.

- Blend the shallots and garlic with water to help blend smoothly. Fry over medium heat till fragrant in oil.
- Add in the tau cheo and the coriander powder and stir fry for 1 min, then add in the pork and stir fry for another 1 minute. Add 1/2 cup water, the sugar, salt and dark soy sauce and simmer over low heat until the pork is tender, 1 1/2 to 2 hours. Serve with the French loaves, red and green bird's eye chiles as garnish.
- Tips: If bird's eye chiles are not available or it is too spicy for your taste, an alternative is to use jalapeno sliced thinly and garnish over the dish. 1 jalapeno should be enough for 3 to 4 persons.

- Combine brown sugar, oil, prune baby food, egg, applesauce and vanilla in large mixing bowl.
- Beat well with electric mixer, add soybeans and beat again.
- In medium mixing bowl, sift the flour, baking powder, cinnamon, nutmeg, cloves and ginger.
- Stir into the soybean mixture.
- Stir oats into the dough.
- Drop by rounded teaspoon onto nonstick baking sheet.
