CREAMY TOMATO CHICKEN AND CHORIZO PASTA RECIPE
This Easy Creamy Tomato Chicken and Chorizo Pasta takes under 30 minutes to cook! And is sure to be a hit with the whole family. With juicy chicken and flavor-packed chorizo sausage, this creamy pasta recipe has so much flavor whilst still delivering a creamy and comforting yet simple dinner. We like this as a chicken penne dish, but you can use any pasta shape you like here. Serve it with some garlic bread and a side salad and dinner is done!

- Peel and chop the onion, then chop the bell peppers and set to one side.
- Slice the chorizo into disks.
- Heat the olive oil a large frying pan over high heat, add the chorizo and cook for 2 minutes.
- Add the chopped onion and peppers and cook for another 2-3 minutes, stirring occasionally.
- Whilst the peppers are cooking chop the chicken breasts into small chunks.
- Add the chicken to the pan and stir around in the oil for 1-2 minutes until lightly golden. Add in the garlic and stir together until aromatic (less than 1 minute)
- Add the chopped tomatoes, Italian seasoning, sugar, salt, and smoked paprika if using.
- Bring to a simmer and then cook gently whilst you cook the pasta.
- Bring a large pan of water to a boil. Add a tablespoon of salt then pour in the pasta.
- Reserve a cup of the pasta cooking liquid then drain the pasta.
- Add the pasta to the tomato sauce mixture and pour in the heavy cream.
- Stir everything together until well coated, thinning the sauce with pasta water as needed.
- Stir through the fresh spinach and allow to wilt. Serve immediately with parmesan and chopped parsley.

- Bring a pot of water to boil, salt it generously and cook the pasta according to the instructions on the package. Reserve a cup of water before draining.
- Meanwhile, heat the olive oil in a large, deep pan and fry the chorizo for 1-2 minutes over medium-high heat until slightly crispy.
- Add the diced chicken breast to the pan and continue to cook for 4-5 minutes until the chicken is mostly cooked through.
- Next, add the red onion and red pepper to the pan and cook for 2-3 minutes until softened. Stir in the garlic, oregano, marjoram, chilli flakes and tomato paste. Add the chicken stock and allow the sauce to get bubbling.
- Lower the heat and stir in the double cream. Allow it to bubble again for 1-2 minutes, then turn off the heat.
- Transfer the cooked pasta to the pan and toss it well. Stir in the fresh basil, parsley and grated Parmesan. Season to taste and serve immediately, with extra grated Parmesan on top if you like.

CHICKEN AND CHORIZO PASTA WITH SPINACH
A very tasty, satisfying chicken and chorizo pasta dish with spinach. Easy to make so perfect for a weeknight dinner.

- Heat the olive oil in a large saute pan, add the onion and cook over a low to medium heat for about 5 minutes.Add the garlic, oregano, smoked paprika and chilli flakes and cook for a minute.
- Now add the chicken and cook over a medium heat until the chicken is cooked, add the chorizo and cook for another 5 minutes until both the chorizo is slightly crispy.
- Pour in the tinned tomatoes, add a little water to the can, give it a swirl then pour that in too. Add the olives, salt and pepper, reduce the heat and simmer for about 10 minutes.
- Meanwhile, cook the pasta according to the packet instructions. Drain when done.
- When the pasta is almost ready, add about 3 tablespoons of the pasta water to the tomato sauce then add the spinach and basil, check the seasoning then add the drained pasta.Gently toss the pasta in the sauce, serve immediately with plenty of grated parmesan and freshly cracked black pepper.

- Heat oven to 200C/180C fan/gas 6. Bring a large pan of water to the boil and cook the pasta following pack instructions. Drain, reserving 1 tbsp of the cooking water. Meanwhile, heat the oil in a large frying pan, add the chorizo and cook for 3-4 mins until crisp. Throw in the spinach, garlic and some seasoning, and cook until just wilted. Tip into a bowl with the pasta and the reserved 1 tbsp cooking water, then mix well.
- Mix the ricotta, milk and lemon zest together with some seasoning. Spoon half the pasta into a gratin dish and spoon over half the ricotta mix. Top with the remaining pasta and dollop over spoonfuls of the remaining ricotta. Scatter with the Parmesan and bake for 15 mins until the cheese has melted. - Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente.
- Meanwhile, heat oil in a large skillet over medium-high. Add chorizo and cook, stirring, until blistered and oil is bright orange, about 1 minute. Using a slotted spoon, transfer chorizo to a medium bowl.
- Add chickpeas and scallions to skillet and cook, stirring occasionally, until chickpeas begin to blister, 2 to 3 minutes. Transfer chickpeas and scallions to the bowl.

- Heat the grill to high. Put the bacon rashers on a baking tray lined with foil and grill for 5 mins on each side until crisp. Leave to cool, then roughly chop.
- Heat the oil in a large saucepan or high-sided frying pan over a high heat. Season the chicken, then brown on both sides. Sprinkle over the oregano and add the garlic, then stir for another minute. Crumble in the stock cube and add 250ml water.
- Bring to a simmer, cover and reduce the heat to low-medium. Cook until the chicken is tender, about 15-20 mins, topping up with more water if the pan looks dry. Transfer the chicken to a board using tongs, then shred using two forks. Return the shredded chicken to the pan with the sauce.
- Whisk the flour into the cooking juices in the pan, turn up the heat and keep stirring until you have a smooth paste that clings to the chicken. Add 500ml water and the cream, then simmer, stirring occasionally for 8-10 mins, or until the sauce has thickened.
- Meanwhile, cook the pasta in a large pan of boiling salted water for about 10 mins until it is just cooked but retains some bite. Drain.
- Add most of the parmesan, the mustard, spinach and half the chopped bacon to the sauce, then season to taste, if needed. Stir until the spinach has wilted, then stir in the cooked pasta.
- Tip the mixture into a large baking dish. Mix the breadcrumbs with the remaining parmesan and scatter over the top along with the tomatoes and remaining chopped bacon. The unbaked dish can now be frozen for up to two months (see below).
- To cook straightaway, heat the oven to 200C/180C fan/gas 6. Bake for 35-40 mins, or until the top is golden and crunchy and the sauce is bubbling.

- Season the chicken breast with salt and pepper. In a small pan, heat 1 tablespoon of the extra-virgin olive oil over medium high heat. Add the chicken and cook for 1 minute. Turn the chicken, reduce the heat, cover the pan and cook for 8 minutes. Remove from the heat and leave covered for 10 minutes, then shred the chicken with 2 forks.
- Meanwhile, in a large pot of boiling salted water, cook the pasta according to package directions.
- In a large frying pan, heat the remaining 1/4 cup of extra-virgin olive oil over medium heat. Add the onion and cook for about 5 minutes, or until it softens. Reduce the heat to low, add 1/2 teaspoon each of sea salt and sugar, and continue to cook for 10 minutes, until the onions are very soft and caramelized. Add the chorizo and chile flakes and cook for 3 minutes, or until the chorizo has cooked through and starts to brown. Add the spinach and cook for 1 minute, until it starts to wilt.
- Add the penne and chicken to the pan and toss it to coat well. Remove from the heat, stir in the 1/2 cup Parmigiano-Reggiano cheese and season generously with sea salt and freshly ground pepper. Serve with extra Parmigiano-Reggiano on the side.
