This spin on Salisbury steak is anything but old-fashioned. With help from the slow cooker, we transformed this comfort food with scratch-made meatballs and a savory onion gravy that perfectly pairs with mashed potatoes.

Steps:
- Spray 5- or 6-quart oval slow cooker with cooking spray. Mix melted butter, tomato paste and salt in slow cooker. Add onions and mushrooms; toss to coat. Stir in broth.
- In large bowl, mix beef, bread crumbs, milk, egg, grill seasoning and soy sauce. Shape into about 24 (1 1/2-inch) meatballs. Place meatballs in slow cooker on top of vegetable mixture.
- Cover; cook on Low heat setting 3 to 4 hours or until meatballs are thoroughly cooked (165°F); stir. In small bowl, beat cornstarch and cold water. Quickly stir into slow cooker; cover. Increase to High heat setting; cook 5 to 10 minutes or until thickened. Serve over mashed potatoes. Sprinkle with parsley.

- Place meatballs in crockpot.
- Add soup, water, dry gravy mix, thyme and bay leaves.
- Cover crockpot and cook on low 3-4 hours on low.
- Discard bay leaves.
- We like to serve over egg noodles.
SLOW COOKER MEATBALLS AND GRAVY
Steps:
- Make the Meatballs: Put the ground beef and pork into a medium bowl. Add the onions, bread crumbs, parsley, egg, milk, Worcestershire sauce, salt, garlic powder, and pepper. Mix until well blended.
- Shape the mixture into 1 1/2-inch meatballs. Heat the oil in large skillet over medium heat. Cook the meatballs, in batches, until browned all over. Using a slotted spoon, transfer the meatballs to a 4-quart slow-cooker. Reserve the drippings in the pan. Cover and cook on high for 15 minutes.
- Meanwhile, Make the Sauce: Add the flour, paprika, garlic powder, and pepper to the same skillet used for cooking meatballs. Stir in the chicken broth until well blended. Pour the sauce over the meatballs. Cover and cook on low for 4 to 5 hours.
- To serve, stir the sour cream into the meatball sauce, cover and heat through. Serve the meatballs with the gravy over egg noodles or mashed potatoes.

- In a large bowl, combine the beef, beaten egg, worcestershire sauce, salt, garlic powder, onion powder, pepper, and breadcrumbs using your hands, just until combined.Form the beef mixture into about 24 meatballs (about 1 1/2 inches in diameter) and set aside on a large plate.
- Heat the olive oil in a large skillet over medium heat.When the oil is hot, add half of the meatballs to the pan and sear on each side for about 2-3 minutes until browned, transfer to the bottom of the slow cooker.Repeat with the remaining meatballs.
- Place the frozen meatballs, sliced onion, and mushrooms in the bottom of your slow cooker. Set aside.
- In a medium bowl whisk together the beef broth, gravy mix, worcestershire sauce, ketchup, and seasonings. Pour mixture over meatballs. Cook on low for 6-8 hours, or on high for 3-4 hours.
- Once cooked, remove the meatballs from the slow cooker and set aside. At this point if your slow cooker was on low, turn it up to high. Mix together the cold water and cornstarch in a small bowl. Whisk the cornstarch mixture into the broth for 1-2 minutes until thickened.
- Return the meatballs to the slow cooker and stir gently to coat with gravy. Serve immediately.

- Shape meatballs: Add all ingredients for the meatballs (EXCEPT for the oil) to a large bowl. Mix well, then shape into firm meatballs (I use about 2 teaspoons of mixture per meatball).
- Brown meatballs: Heat oil in a large skillet over medium-high heat, then brown the meatballs in batches on all sides. Be very careful when flipping them - slide a spatula underneath to keep them from breaking up. Set browned meatballs aside on a plate.
- Make the gravy: Lower heat to medium. Add butter to the skillet and melt, then add sliced onion and cook for 5-10 minutes, until very softened and golden brown. Stir in the flour, then stir in the beef broth until smooth.

- Preheat oven to 450° and line a baking sheet with parchment paper. In a large bowl, combine the ground beef, eggs, panko, and parmesan. Sprinkle with a hearty dose of sea salt and pepper and mix by hand until thoroughly combined. Form mixture onto tablespoon-sized meatballs (coat your hands in a bit of olive oil to prevent sticking) and place on the parchment-lined baking sheet. Mixture should make between 40-45 meatballs. Bake for 15-17 minutes, then remove from oven and set aside.
- While the meatballs cook, heat a large, high-sides skillet over medium-high heat and add the bacon. Cook until fat is rendered and bacon is crispy, about 10 minutes. Remove bacon from pan with a slotted spoon and set aside. Drain all but 2 tablespoons of grease, then add the onions, sprinkle with salt and pepper, and cook until softened and translucent, about 5 minutes. Add the carrots and garlic and cook until carrots have softened and the garlic is fragrant, about 5 minutes more. Stir in the tomato paste and cook for 1 minute.

Add the meatballs to the pan and gently toss to coat, then cover and let cook for 5 more minutes, or until the meatballs have a thick glaze of sauce of them.
