MUSSELS (LEMON GARLIC STEAMED)
Mussels are the perfect easy recipe for your next date night!

Steps:
- Rinse and inspect mussels individually, discarding any that are open or have cracked shells. Remove the beard (short pieces of "hair" sticking out of the shell) if necessary. (Just give it a good tug and wiggle).
- Set mussels aside and in a large pan or pot, on the stove top bring butter, garlic, and onion powder to a gentle simmer until garlic becomes fragrant. Add chicken stock and lemon juice, then bring back to a simmer.
- Pour butter and stock mix into a heat proof container and bring the now empty pan up to high heat.
- Add mussels to the very hot pan, pour butter and stock mix over mussels and cover. Reduce heat to low and cook 5 - 7 minutes (stirring or giving the pan a shake occasionally) until mussels have opened.
- Enjoy! Preferably with some no knead beer bread or crunchy french bread!

- Melt some butter in a large sauté pan and add the frozen mussels. Place a lid over the pan and steam until all the mussels are open, shaking the pan occasionally. Note: discard any that will not open.
- Remove the lid and add the cream, garlic, and lemon juice, and continue to cook until the sauce starts to thicken. Test for seasoning and add salt and pepper as required.
- Transfer the mussels and the broth to a serving bowl, and sprinkle with chopped parsley. Serve immediately.

- Rinse the mussels under cold running water while scrubbing with a vegetable brush. Discard any with broken shells. Heat oil in a 6 to 8-quart stockpot. Saute the shallot, garlic and thyme to create a base flavor. Add the mussels and give them a good toss. Add wine, lemon juice, chicken broth and red pepper flakes; cover the pot and steam over medium-high for 5 minutes until the mussels open. Toss in the tomato, parsley and butter, recover the pot, and steam for another minute to soften. The tomatoes should keep their shape. Serve with plenty of grilled garlic bread to sop up the broth.

- Clean mussels. In large pot heat wine. Add garlic, onion, and parsley. Bring to a boil and add mussels. Cover and steam until mussels open. Serve with Italian bread.
STEAMED MUSSELS WITH LEEKS, GARLIC, THYME, WHITE WINE, AND BUTTER

- Rinse the mussels under cold running water while scrubbing with a vegetable brush. Remove the stringy mussel beards with your thumb and index finger as you wash them. Discard any mussels with broken shells.
- Heat 1 tablespoon olive oil and 1 tablespoon butter in a large pot over medium heat. Add the leeks, garlic, and thyme and cook until the vegetables cook down to a pulp, about 5 minutes. Add the mussels and give everything a good toss. Add the white wine. Cover and steam over medium-high heat for 10 minutes, until the mussels open. Stir occasionally so that all the mussels are in contact with the heat. Add the remaining 2 tablespoons butter and a drizzle of olive oil to the sauce remaining in the pot and swirl to incorporate. Season with salt and pepper. Sprinkle with the parsley and serve immediately.
MUSSELS IN A LEMON, GARLIC, AND WHITE WINE SAUCE
I created this in an effort to emulate a dish we liked at a local Italian restaraunt. I think it's pretty similar, but would have to eat the restaraunt version again to be sure! Either way, my boyfriend loved it...he rated it an enthusiastic A-Plus!! I live nowhere near an ocean, so this recipe calls for frozen mussels...I couldn't even begin to tell you how to modify the recipe using fresh mussels.

- Saute the garlic in the olive oil and margarine over medium heat.
- Stir in the wine, lemon juice, tomatoes, parsley, red pepper flakes, salt and pepper, and liqueur from the mussels (keep mussels warm).
- Bring to a simmer. Let simmer for about 10 minutes.
- Sprinkle cornstarch over top and stir in with a whisk. Stir vigorously enough to also break up the tomatoes.
- Return to a simmer and stir frequently, until sauce has thickened a little (will still be fairly thin).
- Add mussels, cover, and let simmer for about 15 minutes, stirring occasionally.
- Serve over noodles.

- Heat broiler. Put olive oil in a large heavy-bottomed soup pot or Dutch oven over medium heat. Add the minced garlic and red pepper and let sizzle for 30 seconds without browning. Add the mussels, stir to coat and increase heat to high. Add the wine or water, and put on lid. After 2 minutes, give the mussels a stir, then replace lid and continue cooking until all mussels have opened, 6 to 8 minutes.
- Paint cut sides of the baguette pieces with oil and place cut side up under broiler to toast. Rub toasts with the remaining garlic cloves.
- Stir the chopped parsley into the mussels, then ladle mussels and broth into bowls. Serve with the garlic toasts.

- Melt the butter in a large pan with a tight-fitting lid. Add the chopped carrot, onion, and celery, and cook over a medium heat for 8-10 minutes until softened. Add the garlic and cook for a further 2 minutes.
- Meanwhile, clean the mussels by rinsing them under the cold tap. Make sure all the shells are tightly closed and discard any that don't shut when tapped.
