BAKED BEEF IN A BLANKET
I found this in an old Chicago Church Cookbook. 1978. Church cookbooks generally have no pictures. Always good recipes from the church ladies! You might enjoy this one... I have been collecting old church cookbooks for years, traveling throughout America..and I must have 40 or more! Nancy....11/22/12

- Whipe meat with a cold damp cloth. Dice meat. REMEMBER, meat is always sweeter closer to the bone. Make a batter with flour, milk,egg and 1/2 of the salt & pepper. Grease a baking dish (size?) Sorry you will have to judge the pan size. Put meat in. Sprinkle with last of salt & pepper. Pour batter over meat. Bake in moderate (350F.) oven for 1 hour. Serve hot, with your choice of vegetables, maybe a little beef gravy ? ...etc. Note: Lamb may be substituded for beef. Round steak foto from: EDENMEAT.com
BAKED HAM IN A BLANKET
My Mom prepared ham using this recipe for holidays or special occasions, and it always made the house smell wonderful. I remember watching her 'crack' the blanket off the ham, which both flavored it and kept it extremely moist. I've eaten it many times, but haven't made it myself yet.

Steps:
- Preheat oven to 350F; Make a spice dough, combining the flour, sugar, and spices in a large mixing bowl; add enough water or cider to make a stiff dough; roll until it is 1/4" thick and forms a 10x12" rectangle.
- Place the ham, fat side up, in a foil-lined open roasting pan; cover top and sides of ham with "blanket" of dough; bake at 350F for 3 hours (tent with foil if crust becomes too brown).
- Remove ham; discard "blanket" crust; let rest for 15 minutes. Slice ham; serve warm or cold.
REUBEN PIGS IN BLANKETS

- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper. Combine the sauerkraut and relish in a small bowl; set aside.
- Unroll the crescent dough and pinch the seams together with your fingers. Cut the dough in half lengthwise, then slice each half crosswise into 12 strips. Spread about 1 teaspoon of the sauerkraut-relish mixture on each strip of dough, leaving a 1/2-inch border on one short end. Sprinkle with the cheese. Place 1 frank on each strip of dough and roll the dough around the frank, pressing lightly to seal.
- Transfer to the baking sheet seam-side down; brush with the beaten egg and sprinkle with caraway seeds. Bake until the dough is golden brown, about 15 minutes. Serve with Thousand Island dressing and/or mustard.
CABBAGE ROLL CASSEROLE
I use to make regular cabbage rolls until I found this recipe. Now, instead, I make this and it is as good as the regular cabbage rolls and alot easier.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
- In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

PIGS IN A BLANKET
Steps:
- In a pot of salted boiling water, cook the cabbage leave for about 2 minutes. Drain on paper towels and allow to cool.
- Heat oil in a large skillet and cook onions until tender. Stir in green pepper and garlic and cook for three minutes. Stir in crumbled ground round and cook until meat is browned. Add thyme and season to taste. Stir in 1 cup crushed tomatoes and simmer gently for 2 minutes. Stir in cooked white rice and toss to coat. In a small bowl, mix together 1 cup crushed tomatoes and chicken stock and spread out in bottom of baking dish.
- Preheat oven to 350 degrees. Lay each cabbage leaf out flat ad place about 3/4 cup of rice mixture in center of leaf. Fold in sides of leaf and roll up. Place seam side down in baking dish. Cover dish with foil and bake for 20-30 minutes. Serve each cabbage roll up with a little sauce and garnish with chopped parsley

- Preheat oven according to directions on crescent roll package.
- Unroll but leave intact 2 triangles of crescent rolls.
- Pinch seam together and cut lengthwise into 5 strips and then cross-wise to make 10 strips.
- Roll each strip around one sausage and place in baking pan that has been sprayed with non-stick cooking oil.
- Sprinkle each pig with parmesan and garlic salt.
- Bake according to crescent roll package directions.

Steps:
- Lay a square of pastry dough down and coat with mayo, mustard, and garlic powder mixture.
- Wrap around cooked hot dog (hot dog will stick out just a little at both ends).
- With fingers or pastry brush coat the dough with raw egg white. You may sprinkle the dough with sesame seeds at this point.
- Bake in a 350°F oven for about 30 minutes or until the dough is nicely browned.
- Serve and enjoy!

- Preheat oven to 400 degrees F.
- Take buscuits and cut them into three pieces in a lengthwise manner, with the middle piece bieng bigger than the sides. Then cut the middles in half width wise.
- Flatten out each buscuit piece into a rectangle, and roll up a lil smokie in each one. Make sure you roll them good and tight, or they could unroll in the oven while cooking.
- Lightly spray a nonstick baking sheet with a little bit of the nonstick spray.
- Place the lil "pigs" onto the sheet in rows about an inch or so apart.
- Bake for about 15 minutes, or until golden brown.

MEATLOAF IN A BLANKET
Another gem from my sister's family cookbook. This looks like a lot of work, but the steps are really simple and go quickly. The presentation of this is gorgeous -- almost like a "Ground Beef Wellington." Experiment with different breads to give it a different touch each time. Terry adapted this from an early food processor cookbook that advised you to grind the meat yourself. That's not necessary, but PLEASE be sure to use the leanest ground beef and pork possible.

- Preheat oven to 350.
- Slice off a 7-inch circle from the top of the loaf and scoop out enough bread to leave about a 1/2-inch thick shell. Save the top of the crust for a "lid.".
- In a food processor or blender, process the bread into crumbs. (You'll need one cup. If there's extra, save it for another recipe.).
- Put 1 cup bread crumbs in a large mixing bowl, add milk, and let stand for 5 minutes.
- Finely chop parsley and add to bowl.
- Dice tomato and add to bowl.
- Add everything else but the butter to the bowl, roll up your sleeves, and mix well.
- Pack meat mixture into bread shell. Replace top.
- Rub butter on bread.
- Wrap bread in foil and bake at 350 for 2 hours.
- Use a serrated knife to cut loaf into wedges and serve.

ROULADEN -GERMAN PIGS IN A BLANKET
This recipe came from a co worker. Ray always brought this dish to our pot lucks and it was usually the first dish gone! It is a delicious traditional meal that even though can be a little time consuming, it is worth it and can be made ahead of time. Our family requests it especially during the winter months, served over noodles or spatzles.

Steps:
- Trim all fat from meat and if not pounded flat by your butcher, take a metal or wooden cooking mallet and pound the steak until the tissues are broken down and it is pretty thin.
- Cut steak into long thin strips.
- Season flour with salt and pepper.
- Arrange an assembly line for preparation for ease of rolling.
- On each piece of steak, place a dab of mustard and rub it along the steak.
- Add a piece of bacon.
- Add a piece of pickle slice.
- Sprinkle a dab of marjoram.
- From one end of the steak, start rolling the steak, bacon, pickle until completely rolled and secure with toothpicks or string.
- Continue until all steak is rolled.
- Dredge rolls of steak into flour until coated.
- Heat oil in deep fryer pan.
- Brown steak until browned.
- Transfer to casserole dish.
- Continue browning and transferring into casserole dish until done.
- Preheat oven to 350°F.
- Stir and scrape up any browned bits left in frying pan and slowly add 2 cups of beef broth.
- Sprinkle a dash of extra marjoram into gravy and stir.
- Pour gravy over steak rolls in casserole dish.
- Either bake now at 350°F for 1-1-1/2 hours or you can refrigerate and cook later.
