Using cutlets or any boneless meat speeds up cooking time for this quick entree. You can use thin boneless, skinless chicken breast as well. -Margaret Wilson, Sun City, California

1 teaspoon poultry seasoning
1/4 teaspoon seasoned salt
1/4 teaspoon pepper, divided
1 package (17.6 ounces) turkey breast cutlets
2 tablespoons canola oil
2 tablespoons butter
1/4 cup all-purpose flour
2 cups chicken broth

Steps:

  • Mix poultry seasoning, seasoned salt and 1/8 teaspoon pepper; sprinkle over turkey. In a large skillet, heat oil over medium-high heat. Add cutlets in batches; cook until no longer pink, 2-3 minutes per side. Remove from pan; keep warm., In same pan, melt butter over medium heat; stir in flour until smooth. Gradually stir in broth. Bring to a boil; cook and stir until thickened, about 2 minutes. Sprinkle with remaining pepper. Serve with turkey.

1 tablespoon vegetable oil
8 (2 ounce) turkey cutlets (each should weigh 2 oz.)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup sliced green onion
1 medium red bell pepper, cut into 1/4-inch slices
1 cup fat free chicken broth
1/4 cup raisins
1 tablespoon brown sugar
1 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon cumin

Steps:

  • Let the vegetable oil get heated in a large nonstick skillet over medium-high heat.
  • Sprinkle turkey cutlets w/ salt and pepper.
  • Place cutlets in pan; cook 3 1/2 minutes on each side or until done.
  • Remove cutlets from pan and keep warm.
  • Add in onions and bell pepper to skillet; stir/saute for 2 minutes.
  • Add in remaining ingredients; bring to a boil, cook until reduced to 1 cup (about 3 minutes).
  • Serve sauce with turkey; couscous goes well with this.

1 package (17.6 ounces) turkey breast cutlets
1/4 cup all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper
1 large egg
2 tablespoons water
1 cup soft bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup butter, cubed
Minced fresh parsley

Steps:

  • Flatten turkey to 1/4-in. thickness. In a shallow bowl, combine the flour, salt and pepper. In another bowl, beat egg and water. In a third shallow bowl, combine bread crumbs and cheese. , Dredge turkey in flour mixture, then dip in egg mixture and coat with crumbs. Let stand for 5 minutes. , Melt butter in a large skillet over medium-high heat; cook turkey for 2-3 minutes on each side or until meat is no longer pink and coating is golden brown. Sprinkle with parsley.

1/3 cup all-purpose flour
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1/8 teaspoon white pepper
1 package (17.6 ounces) turkey breast cutlets
4 teaspoons canola oil
1/4 cup white wine or reduced-sodium chicken broth
1/2 teaspoon cornstarch
1/3 cup reduced-sodium chicken broth
1/2 cup reduced-fat sour cream
1 teaspoon spicy brown mustard
Paprika, optional

Steps:

  • In a shallow bowl, mix flour and seasonings. Dip cutlets in flour mixture to coat both sides; shake off excess. In a large nonstick skillet coated with cooking spray, heat oil over medium heat. Add turkey in batches and cook 2-4 minutes on each side or until no longer pink. Remove to a serving plate; keep warm., Add wine to pan; increase heat to medium-high. Cook 30 seconds, stirring to loosen browned bits from pan. In a small bowl, mix cornstarch and broth until smooth; stir into skillet. 1 eggplant, cut into 1-inch cubes (about 1 pound)
1/4 cup rice vinegar
2 tablespoons sesame oil, divided
1 tablespoon finely chopped fresh ginger
1 tablespoon fish sauce or 1 tablespoon soy sauce
1 tablespoon sugar
1 small red bell pepper, diced
1 small green bell pepper, diced
1 red onion, diced
2 jalapeno peppers, seeded and very finely chopped
1/3 cup chopped fresh cilantro
1 1/2 lbs turkey cutlets (about 1/4 inch thick)
salt & freshly ground black pepper

Steps:

  • Preheat oven to 400°F
  • Coat a baking sheet with cooking spray.
  • Spread eggplant on the prepared baking sheet and roast until soft, 10 to 15 minutes.
  • Combine vinegar, 1 tablespoon oil, ginger, fish sauce or soy sauce and sugar in a large bowl; stir to dissolve sugar.
  • Add red and green peppers, onions, jalapenos, cilantro and the roasted eggplant; toss to combine and set aside.
  • Season turkey with salt and pepper.
  • Heat 1 1/2 teaspoons oil in a nonstick skillet over medium-high heat.
  • Add half of the turkey and sauté until golden brown on the outside and no longer pink in the center, 2 to 3 minutes per side.
  • Transfer to a platter and keep warm.
  • Add the remaining 1 1/2 teaspoons oil to the pan and cook the remaining turkey in the same manner.
  • Spoon the eggplant relish over the cutlets and serve on a bed fresh salad greens.
  • Enjoy!

1 cup Italian seasoned dry bread crumbs
¼ cup grated Parmesan cheese
4 turkey breast cutlets, 1/4 inch thick
½ cup fat free sour cream
1 tablespoon extra virgin olive oil

Steps:

  • Mix the bread crumbs and cheese in a shallow dish. Spread both sides of turkey with sour cream and press into the bread crumb mixture to coat.
  • Heat the oil in a skillet over medium heat. Place turkey in the skillet and cook 5 to 7 minutes on each side, until lightly browned and cooked through.

20 ounces ground turkey
20 ounces potatoes
1 tablespoon salt
1 tea spoon pepper
2 eggs
4 ounces breadcrumbs
1 tablespoon cilantro
6 ounces onions
4 tablespoons oil
1/2 ounce ginger
1/2 ounce garlic
1/2 tablespoon lime

Steps:

  • Mix salt and pepper with ground turkey.
  • Cook for 20 minutes and stir often.
  • Chop the potatoes into small pieces.
  • Cook potatoes in microwave for 15 minutes.
  • Chop the onions into small pieces.
  • Mix and fry cilantro, chopped onions, garlic, ginger for 2 minutes and stir often.
  • Mash the cooked turkey using chopper or blender.
  • Mash the cooked potatoes using chopper or blender.
  • Mix the mashed turkey, mashed potatoes and cooked onion, cilantro, ginger, garlic mixture.
  • Add lime and cook for 5 minutes.
  • Make patties.
  • Blend the eggs in pan and coat the patties with egg and bread crumbs.
  • Shallow fry the coated patties 10 minutes each side.
  • Serve hot.
