Spiced Rum Coffee Food

SPICED RUM BREAKFAST COFFEE

Steps:

• In basket of drip coffee make place coffee grounds, cinnamon stick, and the 3 cardamom seed pods broken open.
• Add 10 cups of water and brew.
• When done brewing add 1 teaspoon Rum extract to brewed coffee.
• Serve. Can add milk and sweetener if you like.

BAILEYS SPICED COFFEE

Steps:

• Layer Belle de Brillet (pear flavored liqueur) first.
• Then top with Baileys Coffee Irish Cream.
• Garnish with nutmeg, a grind of 4 seasoned peppers and enjoy.

SPICED RUM COFFEE

Steps:

• In each of four 8-ounce mugs combine 2 of the cloves, 1 strip of the rind, 1 1/2 teaspoons of the sugar, and 3 tablespoons (1 jigger) of the rum and let the mixture stand for 5 minutes. Divide the coffee, heated if necessary, among the mugs and stir the drinks until the sugar is dissolved. Top each drink with a dollop of the whipped cream and sprinkle the whipped cream with the nutmeg.

SPICED COFFEE MOUSSE

Steps:

• Mix water, espresso powder, cloves and nutmeg in small bowl until espresso powder dissolves. Sprinkle gelatin over. Let stand 10 minutes to soften gelatin.
• Whisk egg yolks, sugar and rum in large metal bowl to blend. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk until candy thermometer inserted into mixture registers 160°F, about 10 minutes (mixture will be thick). Remove bowl from over water. Immediately add gelatin mixture to yolk mixture and whisk until gelatin dissolves. Using electric mixer, beat mixture until cool, about 5 minutes.
• Using electric mixer fitted with clean dry beaters, beat 1 cup whipping cream in medium bowl until stiff peaks form. Gently fold cream into yolk mixture in 3 additions. Spoon mousse into six 6-ounce coffee mugs or small wineglasses. Chill until mousse is set, at least 4 hours. (Can be made 1 day ahead. Cover; keep refrigerated.)
• Spoon whipped cream atop mousse. Garnish with cinnamon sticks.

SPICED CITRUS COFFEE

Steps:

• Place spices and peel into a saucepan.
• Pour coffee over spices and simmer over low heat for roughly 5 minutes.
• Strain into cups and top with whipped cream.
• Garnish with a sprinkle of cinammon.
• Sweeten with brown sugar if desired.
