BROWN SUGAR AND PINEAPPLE GLAZED HAM
This easy but delicious ham glaze has been a family holiday favorite for years!

- Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
- Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.
- Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.
- While the ham is baking, mix the pineapple juice and brown sugar in a microwave-safe ceramic or glass bowl and microwave on medium power until the glaze is boiling and slightly thickened. Work carefully because the glaze will be sticky and very hot.
- Pour about half the glaze evenly over the ham and pineapple about 1 hour before the end of baking; pour the rest over the ham about 30 minutes before the end of baking.

SPICED RUB BROWN SUGAR PINEAPPLE GLAZED HAM

- Preheat oven to 325 degrees. Place the ham flat side down in a roasting pan. Combine brown sugar, coriander, cinnamon, cumin, pepper and allspice in a small bowl. Rub on the outside of the ham.
- To make the glaze: In a small bowl combine pineapple juice, Dijon mustard, brown sugar, and Worcestershire sauce. Rub half of the glaze on top of the ham and reserve the other half.
- Add 1/4 cup of water to the bottom of your roasting pan and bake the ham for about an hour and 15 minutes or until a thermometer reads 140 degrees. Remember, your ham is already fully cooked and you are heating it to the optimal eating temperature.
- Remove the ham from the oven and rub remaining glaze on top of the ham and broil for 2-3 minutes until the glaze caramelizes on the top. Let rest three minutes before serving. Enjoy!

PINEAPPLE BROWN SUGAR-GLAZED BONELESS HAM

- Let the ham sit at room temperature for about 30 minutes. Preheat the oven to 350 degrees F.
- Place the ham on a cutting board. Using a sharp paring knife, score the top and sides in a diagonal crosshatch pattern about 1/4 inch deep. Push the cloves into the ham if using, placing them at the intersections of the cuts. Put the ham, scored side-up, on a rack set in a roasting pan.
- Drain the pineapple rings, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
- Pour 1/4 inch water into the bottom of the pan and tent the ham loosely with foil. Roast until an instant-read thermometer inserted in the thickest part of the ham registers 130 degrees F, about 1 hour.
- Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Bring to a simmer and cook, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
- Increase the oven temperature to 425 degrees F.
- Uncover the ham and carefully brush a third of the glaze all over. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes before slicing.
AMAZING GLAZED HAM

- Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
- Preheat the oven to 325 degrees F.
- Make the glaze: In a medium pot over medium-high heat, combine the brown sugar, mustard, vinegar, cinnamon, paprika, chili powder, orange zest and juice, garlic and some salt and pepper. Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
- Place a rack in a roasting pan. Put the ham on the rack large open-face down (so the spiral cuts are stacked on top of one another). Brush half of the glaze over the surface of the ham, getting it between the slices as much as you can.
- Pour about an inch of water in the base of the roasting pan; the water should not touch the ham. Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound (1 hour 10 minutes to 1 hour 25 minutes).
- Take the ham out of the oven and remove the foil. Raise the oven temperature to 375 degrees F. Brush half of the remaining glaze on the ham. When the oven is up to temperature, return the ham, uncovered, and bake for 15 minutes. Brush the remaining glaze over the ham and cook for another 15 minutes.
- Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!
BROWN SUGAR AND SPICE DRY HAM RUB
I created this recipe when frustrated by the packets of glaze that came with spiral hams bought at the grocery store. It is sweet, with the perfect amount of spice, and makes a nice crust on the outside of the ham, similar to the famous ham store's. This recipe makes enough to cover a 3 to 5 pound ham. Store in an airtight tin if not using immediately.

- Lower the middle oven rack to the lower third section of the oven. This will keep the ham from being too close to the heating element.Preheat the oven to 325°F (162°C) and spray your roasting pan's rack with non-stick cooking spray. This will make cleanup easier.
- In a mixing bowl, whisk together the light brown sugar, cinnamon, kosher salt, cloves, ginger, garlic, nutmeg, cayenne pepper, and allspice until thoroughly combined. Add 1/2 cup of the brown sugar mixture to a bowl with the dijon mustard. Set aside the remaining spiced brown sugar. Stir the mustard and sugar until it resembles a thick paste. If it's crumbly, stir in a small amount of the pineapple juice. The paste will be the consistency of thick mustard.
- Unwrap and pat the exterior of the ham dry with paper towels. Set the ham on its cushion on the prepared rack that's been set inside of a roasting pan. Pour 3/4 cup of the pineapple juice into the bottom of the roasting pan.
