Old-fashioned chicken and rice, lightened up for the perfect Sunday dinner.

Steps:
- Preheat oven to 350 degrees.
- Cut the chicken breast into small, uniform bite-size pieces.
- In a large bowl, add chicken breast, soup mix, cream of chicken soup, water, and rice. Mix well until combined.
- In a lightly sprayed casserole dish, add the chicken and rice mixture. Cover tightly with tin foil.
- Place into the oven for 1 hour.
- After removing from the oven, fluff the rice with a fork. Serve and enjoy!

- In a mixing bowl, whisk together the lemon juice, olive oil, oregano, rosemary, chile flakes, nutmeg, salt, pepper and garlic. Place the chicken pieces in a resealable bag and pour the marinade in, coating all of the meat. Allow the chicken to marinate, refrigerated, 1 to 4 hours or up to overnight.
- Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to come up to 375 degrees F.
- Remove the chicken from the marinade. Place the chicken pieces skin-side up on the indirect-heat side of the grill and close the lid. Cook the chicken until almost cooked through, about 10 minutes. Move the chicken pieces over to the direct heat side of the grill and cook until nicely charred and cooked through, 2 to 3 minutes per side. Remove from the grill and allow to rest for 5 minutes before serving.

- 1. Cook rice according to package. Add broccoli to your rice right before the rice is done.
- 2. Except for the parmesan cheese, mix all the other ingredients together and put into a 9x13 baking dish.
- 3. Sprinkle the parmesan cheese over the top and bake at 350 degrees for about 1 hour.

- Heat half the oil and butter in a large non-stick frying pan. Add the onion and a pinch of salt and fry for 10-15 mins or until golden brown and caramelised. Add the bacon, turn up the heat and cook for 5 mins or until golden brown. Add the garlic and cook for 1 min more. Scrape the mixture into a bowl and set aside.
- Heat the remaining oil and butter in the same pan over a medium-high heat. Season the chicken skin and fry, skin-side down, for 8-10 mins or until deep golden brown and crisp. Flip over and fry for 5 mins on the other side.
- Add the onion and bacon mixture back to the pan. Stir through the flour and cook for 2 mins. Pour in the wine, bring to the boil and simmer for a few minutes.
- Stir through the cream and mustard and simmer over a low heat, uncovered, for 5 mins with the chicken skin-side up. Season to taste. Scatter with parsley, if you like, and serve with mashed potatoes and greens.

- Mix all ingredients except chicken and spread in a greased, (I use non-stick spray.)13x9 inch pan.
- Place chicken on top (skin side up).
- Season the chicken pieces with salt and pepper.
- Cover tightly with foil.
- Bake at 300 degrees for 2 hours.
- Remove foil. You can place under broiler for a few minutes to brown chicken pieces if you like (my mother did not, but I like my chicken browned so I added this step).

MOM'S MACARONI SUPREME
The most popular recipe in my mom's arsenal! Unfortunately so many people have requested the recipe in the past 40+ years that she can no longer claim it as her own! This makes a great side dish and is often seen at every family gathering and church pot-luck that we attend. My brother & I always liked ours a little soupy so when I make it for us I add a little extra milk to the top so that it stays loose. Truly Yummy!

Steps:
- Cook pasta according to package directions however cook until al-dente- or approximately 2 minutes less that it says to cook. Drain noodles. Do not rinse.
- Take a 9x13" pan and butter well. Sprinkle parmesean cheese on bottom of pan and set pan aside.
- Heat half and half, milk, butter and salt together over medium heat until hot. DO NOT BOIL. ( A non-stick pot is great so that the milk won't stick and burn on the bottom.) Take out 1 cup of the milk / butter mixture and set aside.
- Stir pasta into hot milk mixture and cook over medium heat until pasta and milk thickens, about 20 minutes.
- Pour pasta into prepared pan. Drizzle the reserved 1 cup milk mixture over top. Sprinkle parmesan cheese on top.
- Bake at 400' for 25 minutes or until top is beginning to brown and it is bubbly.
- Cut into squares and scoop out to serve.

- Cook rice according to package directions, adding the chopped onion in to the pot during the last few minutes of cooking time.

- Combine first 9 ingredients in large pot. Bring to boil. Reduce heat, cover and simmer until chicken is cooked through, about 35 minutes. Using slotted spoon, transfer chicken and carrots to platter; cool slightly. Pull chicken meat off bones in bite-size pieces; set aside. Discard bones. Thinly slice carrots and reserve. Strain broth; discard solids in strainer. Pour 1 1/2 cups broth into heavy medium saucepan. Bring to boil. Add rice and bring to boil. Reduce heat to low; cover and cook until broth is absorbed and rice is tender, about 20 minutes.
- Return remaining broth, chicken pieces and sliced carrots to same large pot. Bring to simmer. Stir in cooked rice. Season soup with salt and pepper. Ladle soup into bowls. Sprinkle with parsley and serve.
CHICKEN WILD RICE CASSEROLE SUPREME
While this may appear to be just another carbon copy wild rice recipe, there is one key difference...you don't have to cook your chicken ahead of time! Good enough for company or a potluck, but really very simple and total comfort food. It was a big hit in our family and will be a keeper for sure! The base recipe was a Silver award winner from Yankee Magazine recipe contest submitted by Glenna Anderson Muse, with a lot of changes.

This was shared by a friend many years ago. It's an oldie, but still a goodie. The original recipe called for a can of water chestnuts, drained and diced. I omit them, but they're good if you enjoy a little 'crunch' in a casserole. Along with a fruit dish (hot or cold, depending on the season) and rolls, this makes a very nice Sunday dinner.
