1 tsp. ground cumin
kosher salt

Steps:

  • Heat oven to 425 degrees F. Cut pitas in half to make 8 large rounds. Brush the cut sides with oil and season with cumin and ½ teaspoon each salt and pepper.
  • Cut the pitas into triangles, place on two rimmed baking sheets and bake until lightly golden brown, 8 to 10 minutes.

Steps:

  • Preheat oven to 350 degrees. Add cut pita to a large baking sheet making sure none of the pieces are overlapping each other. In a small bowl whisk together oil and cumin. Brush the top of your chips with the olive oil/cumin mixture. Sprinkle on desired amount of kosher salt. Bake for about 15 minutes until browned and crispy. Serve with Greek yogurt dip or hummus.

  • Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Spread the pita wedges out in a single layer on the baking sheets. In a small bowl, mix together the za'atar, granulated garlic and paprika. Drizzle the olive oil over the pita, then evenly sprinkle the spice blend over each wedge.

Water, for thinning the hummus

8 mini whole-wheat pitas
1 tablespoon extra-virgin olive oil
1 teaspoon zatar, available in Middle Eastern or specialty stores

Steps:

  • In the bowl of a food processor, add the chickpeas, tahini, oil, lemon juice, garlic, cumin, salt, and pepper. Process until smooth and creamy, adding some water to make it the consistency of dip. Taste and adjust the seasoning with more lemon, cumin, salt, and pepper. Scoop the hummus into a bowl. (May be covered and refrigerated at this point for up to 3 days.)
  • When ready to serve, garnish with cumin, paprika, and a drizzle of olive oil. Serve with Spiced 'n Baked Pita Chips or crudite.
  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Cut the pitas into quarters and spread them onto the baking sheet.

1 15-ounce can diced fire-roasted tomatoes with green chiles
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
2 pocketless pitas
Juice of 1/2 lemon
Chopped fresh cilantro, for topping

Steps:

  • Preheat the oven to 375 degrees F. Heat 2 tablespoons olive oil in a large Dutch oven or pot over medium-high heat. Add the celery, carrots, onion, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables are softened, 7 minutes.
  • Add 6 cups water, the chickpeas, tomatoes, 2 teaspoons cumin, 1 teaspoon coriander and 1/2 teaspoon salt. Bring to a simmer and cook, stirring occasionally and slightly mashing the chickpeas with the back of a spoon, until the soup thickens slightly, about 20 minutes. Season with salt and pepper.
  • Meanwhile, slice the pitas into thin wedges. Toss with the remaining 2 tablespoons olive oil, 1 teaspoon cumin, 1/2 teaspoon coriander and 1/2 teaspoon salt. Spread in a single layer on a baking sheet. Bake until golden and crisp, 8 to 10 minutes.
  • Stir the lemon juice into the soup just before serving. Top with cilantro and the pita chips.

  • In a small bowl stir together the oil, 1 1/2 teaspoons of the cumin, and salt to taste. Halve the pita loaves horizontally to form 6 rounds and brush the rough sides of the rounds with the oil mixture. Cut each round into 3/4-inch triangles or squares, spread the triangles in a jelly-roll pan, and bake them in the middle of a preheated 350°F. oven shaking the pan every 3 to 4 minutes, for 10 to 12 minutes, or until they are golden.
