CHEESY DOUBLE-SMOKE BBQ STUFFED MEATLOAF

Melted Colby Jack cheese and two kinds of smoky goodness-bacon and ham-give this BBQ meatloaf its cheesy flavor and terrific aroma.

2 lb. lean ground beef
15 saltine crackers, crushed (about 1 cup)
2 eggs, beaten
1/2 cup finely chopped onions
2 cloves garlic, minced
1/4 tsp. black pepper
3/4 cup KRAFT Original Barbecue Sauce, divided
6 KRAFT Big Slice Colby Jack Cheese Slices
1/4 lb. OSCAR MAYER Baked Cooked Ham
4 slices OSCAR MAYER Bacon

Steps:

  • Heat oven to 375ºF.
  • Mix ground beef, cracker crumbs, eggs, onions, garlic, pepper and 1/4 cup barbecue sauce just until blended.
  • Place meat mixture into 11x8-1/2-inch rectangle on sheet of waxed pepper; top with cheese, ham and bacon, spreading ingredients to within 1-1/2 inches of edges. Roll up tightly, starting at one short side and pulling away waxed paper as meat is rolled. Place, seam side down, on foil-covered rimmed baking sheet.
  • Bake 48 to 50 min. or until done (160ºF), brushing with remaining barbecue sauce after 40 min. Remove from oven. Let stand 5 min. before slicing to serve.

1 lb ground beef or 1 lb turkey
36 saltine crackers, crushed (1 sleeve)
1/4 cup of your favorite salsa
1 egg
1 cup of shredded cheese
1/2 cup barbecue sauce

Steps:

  • Mix together the meat, crushed crackers salsa and egg. Cut the mixture into two parts. I generally make one part a little bit bigger then the second.
  • Take the larger section and form it into a loaf, flatten the top and create a ridge around edge. Fill the hole you created with the shredded cheese. Take the remaining meat mixture and cover the cheese, pinching together the edges of the meat to keep the cheese inside. press down the center of the loaf to flat it out a bit.
  • Cook for 50 minutes at 350 degrees. Take the loaf out and poor the sauce on top and cook for another 10 minutes.

My kids aren't a fan of regular meatloaf, it tasted bland they say. Soo I turned it up a notch and added BBQ sauce and cheddar cheese! No more complaints!

2 lb ground beef
1 c bread crumbs
2 c cheese, shredded
2 eggs
1 large sweet onion, chopped
1 c barbecue sauce, divided use
1 Tbsp worcestershire sauce
3/4 tsp salt
1/2 tsp pepper

Steps:

  • 1. Preheat the oven to 350°F
  • 2. In a skillet, saute the onion until lightly browned, about 5 minutes.
  • 3. In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, cheese, eggs, sauteed onion, 1/2 cup of the barbeque sauce, worcestershire sauce, salt, and pepper
  • 4. Shape the mixture into a loaf and place in a large 2" deep baking pan. Spread the top of the loaf with the remaining 1/2 cup of barbeque sauce.
  • 5. Bake until the loaf is firm, 60 to 75 minutes, or until done. Let the meatloaf stand in the baking dish for 10 minutes, then cut into slices to serve.

  • Preheat the smoker to 250 degrees Fahrenheit using fruit wood like apple or cherry. Oak works great too.
  • In a large skillet set to medium heat, add olive oil and onions and cook for 5-8 minutes, until softened. Add the garlic and thyme and cook 1 additional minute. Remove from heat and add the tomato paste, Worcestershire, and chicken stock. Mix to combine.
  • In the bowl with the meat mixture add the egg, breadcrumbs, dry rub, and onion/liquid mix. Mix, gently, using your hands, and separate into two equal parts.
