Steps:
- Preheat oven to 250°F. Whisk eggs with 3/4 teaspoon salt and 1/2 teaspoon pepper in shallow dish. Place flour on plate. Place breadcrumbs on another plate. Dredge fish in flour; shake off excess. Dip fish into seasoned eggs, then coat completely with breadcrumbs. Transfer to baking sheet.
- Heat oil in heavy large skillet over medium-high heat. Add 2 fillets and cook until coating is golden brown and fillets are opaque in center, about 3 minutes per side. Using 2 spatulas, transfer to rimmed baking sheet; keep warm in oven. Repeat with remaining fillets. Transfer fish to platter. Garnish with lemon wedges and serve.
PAN-FRIED JOHN DORY WITH SMOKED PAPRIKA BUTTER RECIPE
My default position on seafood is to do as little to it as possible. John Dory fried in olive oil and butter is a great dish as is, but a dash of smoked paprika adds extra colour and flavour.

- Combine the butter and paprika and set aside. Heat a large frying pan until very hot and add the olive oil. Season the fish well with salt and add the fillets to the pan, skin side down, pressing firmly with a fish press or the back of a spatula for a minute or so to stop the fillet curling. Cook for about 2 minutes, then flip and add the paprika butter to the pan, basting the fish with it as it melts. Cook for a further 2 minutes until the fish is just cooked and the butter foamy. SPICY PAN-FRIED PORK CHOPS
Pan-fried pork chops with a fiery kick. *Extremely spicy.* I kind of just threw this together while I was messing around in the kitchen one day. The batter or marinade can be easily altered to appeal to anyone's taste. Again, these turn out very spicy, but still have a ton of flavor, not just that hot that leaves your mouth burning.

- Combine onion, jalapeno peppers, habanero peppers, garlic, and Worcestershire in the bowl of a food processor; puree until smooth.
- Pour a thin layer of marinade in the bottom of a medium rectangular glass or ceramic container so the bottom is completely covered. Place 4 pork chops in the bowl and cover in marinade. Add last 4 pork chops and pour in remaining marinade, ensuring all pork chops are coated. Cover and refrigerate, 8 hours to overnight.
- Pour marinade and chops into a large saucepan. Add water and bring to a boil. Continue to boil, 10 to 12 minutes.
- Meanwhile, combine flour, onion soup mix, cayenne, garlic powder, and seasoned salt for batter in a small mixing bowl.
- Transfer boiled chops to a cutting board, softly pat with a paper towel to remove excess liquid, and coat with batter. Discard any remaining boiling liquid.
- Heat enough oil in a large frying pan over medium-high heat that it fills the pan to 1/4 inch.
- Fry chops in the hot oil until golden brown, 1 to 2 minutes; flip and continue to cook until golden brown, 1 to 2 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

SWEET MASHED POTATO CAKES WITH CURRY SOUR CREAM
Mashed sweet potatoes, slightly spiced, pan fried and served with curried sour cream. These would make a lovely side dish or served as an appetizer. This recipe is an entry for Ready, Set, Cook contest #8.

Steps:
- Melt two teaspoons butter in large nonstick skillet over medium heat and add onions.
- Saute about 3 minutes, until softened, then add jalapeno and ginger and saute for another minute.
- Add potatoes, pour in chicken broth, then stir the curry paste through.
- Heat to boiling, cover and reduce heat and simmer until potatoes are tender, about 12 to 15 minutes.
- Drain potatoes well and put in a bowl large enough to mash them inches
- Mash potatoes with remaining 2 teaspoons butter, salt and a few turns of the pepper mill until smooth.
- Using about 1/4 cup of potatoes at a time, form into round slightly flattened patties.
- Chill in refrigerator for 30 minutes.
- While patties are chilling, combine sour cream and curry powder in a small bowl, stirring vigorously until smooth and creamy.
- On a sheet of waxed paper, combine the flour, cornmeal and cayenne, then dredge the patties in flour mixture.
- Heat oil in same skillet (wiped dry with a paper towel) used for potatoes over medium heat.
- Add patties and pan fry until lightly browned on each side, about 2-3 minutes each side.
- Remove from heat, and serve warm with curry sour cream.

Steps:
- Melt margarine on its own in a small bowl.
- Marinate Dory fillets in a large bowl with salt, crushed red peppers and ground black peppers.
- Stir in melted margarine in your marinated fillets and leave it for about 3-5mins.
- Heat the frying pan. DO NOT ADD IN OIL, we have enough margarine from the marinate.
- Fry your marinated dory fillets in the pan. 5mins for each side on medium fire.
- Serve it on your plate and squeeze some lemon juice over it.
