1 cup all-purpose flour
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon cayenne
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 pork chops, 3/4-inch thick, bone-in
1/4 cup olive oil
1 cup chicken broth
1/2 cup buttermilk
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • Put the flour in a shallow platter and add the onion powder, garlic powder, cayenne, salt, and pepper; mix with a fork to distribute evenly. Pat the pork chops dry with paper towels to remove any moisture and then dredge them in the seasoned flour; shaking off the excess.
  • Heat a large saute pan or cast iron skillet over medium heat and coat with the oil. When the oil is nice and hot, lay the pork chops in the pan in a single layer and fry for 3 minutes on each side until golden brown. Remove the pork chops from the pan and add a little sprinkle of seasoned flour to the pan drippings. Mix the flour into the fat to dissolve and then pour in the chicken broth in. Let the liquid cook down for 5 minutes to reduce and thicken slightly. Stir in the buttermilk to make a creamy gravy and return the pork chops to the pan, covering them with the sauce. Simmer for 5 minutes until the pork is cooked through. Season with salt and pepper and garnish with chopped parsley before serving.

1/2 teaspoon Cajun seasoning
3/4 cup all-purpose flour
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
1 large onion, sliced 1/4 inch thick
1 tablespoon fresh thyme, chopped
1 1/2 cups low-sodium chicken broth
2/3 cup buttermilk
Store-bought biscuits, for serving (optional)

Steps:

  • Sprinkle the pork chops all over with salt and the Cajun seasoning. Pour the flour into a shallow bowl. Dredge the chops in the flour, turning to coat, and tap off any excess. Reserve the remaining flour. Heat the olive oil in a large skillet over medium-high heat. Add the chops; cook until browned, 2 to 3 minutes per side. Transfer to a plate. Add the butter, onion, thyme and a pinch of salt to the skillet. Cook, stirring occasionally, until the onion is golden brown, 8 to 10 minutes. Add 2 tablespoons of the reserved flour to the skillet and cook, stirring, 1 minute. Add the chicken broth, bring to a boil and cook until reduced by one-third, about 2 minutes. Add the buttermilk and return the chops to the skillet. Bring the sauce to a simmer, then reduce the heat to medium low and cook until the sauce is thickened and the chops are just cooked through, 10 to 12 minutes. Serve with biscuits.

4 large bone-in pork chops, about 1 inch thick
1 teaspoon poultry seasoning
salt and freshly ground black pepper to taste
2 tablespoons vegetable oil
1 tablespoon butter
1 large yellow onion, sliced
4 cloves garlic, minced
1 ½ tablespoons all-purpose flour
1 ½ cups chicken broth
¼ cup buttermilk
¼ cup water

Steps:

  • Sprinkle pork chops with poultry seasoning, salt, and black pepper on both sides. Heat vegetable oil in a large skillet over medium-high heat; brown pork chops well on both sides, about 5 minutes per side. Transfer to a plate.
  • Discard excess grease from pan and melt butter in the same skillet. Reduce heat to medium and stir onion in the hot skillet with a pinch of salt until onion is very browned and caramelized, about 15 minutes. Stir in garlic and cook for 1 minute; stir in flour and cook for 2 minutes.
  • Pour chicken broth into skillet and stir, dissolving browned bits of food in the bottom of the skillet. Pour juices that have accumulated on plate containing pork chops into the sauce. Mix in buttermilk until smooth. Add water. Bring sauce to a simmer, reduce heat to low, and cook until onions begin to break down and sauce is thickened, 15 to 20 minutes.
  • Place pork chops into sauce, spooning sauce over meat to coat. Turn heat to low and simmer until chops are tender and cooked through, about 10 minutes. Adjust levels of salt and pepper and serve chops with gravy on top.

5 end-cut pork chops, about 1 1/4 to 1 1/2 pounds
Salt and freshly ground black pepper
2 tablespoons canola oil, divided
1 medium onion, chopped
1 cup sliced mushrooms
1/4 cup all-purpose flour
1 teaspoon ground cumin
1 (14.5-ounce) can chicken broth
2 tablespoons spicy mustard
2 tablespoons freshly chopped parsley leaves
Iceberg Wedge Salad, recipe follows, for serving
1 head iceberg lettuce
4 slices bacon
2 teaspoons brown sugar
1/4 cup red wine vinegar
Salt and freshly ground black pepper
1 hard-boiled egg, finely chopped

Steps:

  • Preheat an ovenproof skillet over high heat. Season the pork chops with salt and pepper, to taste. Add 1 tablespoon of canola oil to the pan. Add the pork chops and sear on both sides until golden brown. Remove from skillet and set aside.
  • In same skillet over medium heat add the remaining tablespoon of canola oil, the onions and mushrooms and saute until slightly softened. Add the flour and cumin and cook until lightly golden in color. Stir in the chicken broth and mustard, and bring to a boil. Reduce the heat to a simmer, add the parsley and return all but 1 pork chop back into skillet. Reserve the 1 pork chop for Round 2 Recipe Pork Cabbage Wraps. Season with salt and pepper and spoon the gravy over the pork chops. Simmer for 5 minutes, or until pork chops are cooked through. Transfer to serving plates and serve with the Iceberg Wedge Salad.
  • Remove the core from the lettuce and cut into 4 quarters. Arrange on serving plates and set aside.
  • In a small skillet saute bacon until crisp. Remove from skillet, to a plate lined with a paper bag or paper towels. Once cooled, chop into small pieces and add to a small bowl. In the skillet over low heat, add the brown sugar, vinegar and salt and pepper, to taste. Whisk together until combined and sugar is completely dissolved. Stir in the egg and bacon and season with salt and pepper, to taste. Pour over the top of the iceberg wedges and serve immediately.

Husband pleaser! This Southern Classic is my version of Smothered Pork Chops! Pork chops over creamy mashed potatoes smothered in mushroom onion gravy!

4 pork chops (thick cut and bone in)
1 (14 ounce) can cream of mushroom soup
1/2 small yellow onion (chopped)
1 (8 ounce) package cremini mushrooms (fresh and sliced)
1/2 teaspoon pepper
1/2 garlic salt
2 tablespoons olive oil
1 tablespoon unsalted butter

Steps:

  • In a large skillet place 2 tbs of olive oil in pan on med/high heat.
  • Sprinkle both sides of the pork chops with Garlic salt, and pepper to your liking, and squish together in hot pan. Cook til browned on both sides about 3 min per side.
  • Remove pork chops set aside and keep warm.
  • Add 1 tbs of unsalted butter and scrape up the bits and pieces of the pork chop from the pan. Add the onions and mushrooms to the pan drippings and cook until onion is tender; about 3-5 minute.
  • Turn the stove to med/low heat and add the cream of mushroom soup. Add salt to pepper to taste and mix well.
  • Return the pork chops to the pan and cover for 20 minute.
  • Once ready remove pork chops, give the gravy one last mix and dig in! Serve with mashed potatoes or rice!

4 slices bacon, chopped fine
vegetable oil, if necessary
6 pork blade steaks, about 3/4 inch thick
salt and pepper
3 yellow onions, halved and sliced into 1/2 inch half-moons
1 teaspoon light brown sugar
1 tablespoon light brown sugar
1/4 cup water
2 tablespoons water
3 garlic cloves, minced
2 teaspoons fresh thyme, minced
3 cups low sodium chicken broth
1 tablespoon soy sauce
2 bay leaves
1 tablespoon cornstarch
1 tablespoon cider vinegar
1 tablespoon fresh parsley, minced

Steps:

  • Fry bacon in large skillet over medium heat until lightly browned, about 8 minutes. Using slotted spoon, transfer bacon to paper towels, leaving fat in pan (you should have 2 T fat; if not, supplement with oil). Refrigerate bacon.
  • Heat fat over high heat until smoking. Meanwhile, pat pork chops dry with paper towels and sprinkle with salt and pepper. Cook 3 chops until golden brown on both sides, about 3 minutes per side. Transfer chops to slow cooker insert. Repeat with remaining chops and transfer to slow cooker insert.
  • Pour off all but 1 t fat from skillet, add onions, 1 t brown sugar, 1/4 t salt, and 1/4 cup water to now empty skillet. Using wooden spoon, scrape browned bits from pan bottom and cook over medium high heat until onions are soft, about 6 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds longer. Pour onion mixture over chops in slow cooker insert. Add broth, soy sauce, and remaining 1 T brown sugar to skillet, bring to boil, and add bay leaves. Pour mixture over onions in slow cooker.
  • Cover slow cooker and cook on low until pork is very tender, about 8 hours (or cook on high for 4 hours).
  • When ready to serve, reheat bacon in large saucepan until crisp and transfer to small bowl. Carefully transfer chops to serving platter with large spoon and tent with foil. Discard bay leaves and pour liquid through mesh strainer into now-empty saucepan. Transfer solids to blender with 1 c liquid and blend until smooth. Stir back into remaining liquid in saucepan. Mix cornstarch and remaining 2 T water together in small bowl and stir into sauce. Cook over medium heat until thickened, about 8 minutes. Add vinegar, season with salt and pepper, pour over chops, and sprinkel with bacon and parsley. Serve.

  • brown bacon in a large skillet.
  • remove and leave grease.
  • saute onion and garlic in bacon grease.

  • dredge both sides in flour.
  • add to hot grease (you may need to add a bit more oil to the pan).
  • brown pork chops on both sides.
  • in a seperate bowl combine gravy mix and water. add in the cooked bacon and onions.
  • pour over browned pork chops cover and let simmer 20-40 mins (or until pork is at the desired tenderness).
  • If the gravy is a little thin you can remove the chops and add a TBS of cornstarch or flour and whisk in until there are no lumps.
  • Serve with mashed potatoes and covered with gravy and DEVOUR!

  • Saute onion and garlic in a non-stick skillet coated with vegetable spray until tender. Add pork chops, and brown on both sides. Add 1/2 cup of water, and bring to a boil.
