I prepare these quick and easy fajitas about once a week, and my family never gets tired of them. I like serving them with salsa and light sour cream on the side. -Bonnie Basinger of Lees Summit, Missouri

1 tablespoon canola oil
1 pound boneless turkey breast tenderloins, cut into thin strips
1 each medium green, sweet red and yellow peppers, cut into 1/4-inch strips
1 medium onion, thinly sliced
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1/2 cup minced fresh cilantro
1/4 cup lime juice
8 flour tortillas (6 inches), warmed

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat. Add turkey; cook and stir 2 minutes. Add peppers, onion, garlic, salt, cumin, pepper and cayenne. Cook and stir 5 minutes or until turkey is no longer pink and peppers are crisp-tender. Stir in cilantro and lime juice; cook 1 minute longer. Serve in tortillas.

3 tablespoons canola oil
1 small red onion, thinly sliced
1 red bell pepper, cored, seeded, and thinly sliced
1 green bell pepper, cored, seeded, and thinly sliced
1 clove garlic, minced
1 pound skinless, boneless turkey breast, cut into thin strips
1/2 tablespoon ground cumin
1/2 tablespoon chili powder
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 dashes cayenne pepper
6 large red leaf lettuce leaves
2 tablespoons finely chopped cilantro leaves
4 ounces shredded Colby Jack cheese, Monterey Jack, or Cheddar
1/4 cup sour cream

Steps:

  • Heat the oil in large skillet over high heat. Add the onion, peppers, and garlic and cook, stirring, until slightly softened. Add the turkey, cumin, chili powder, salt, pepper, and cayenne and cook, stirring, until cooked through, about 5 minutes.
  • Spoon a couple tablespoons of the turkey mixture on the inside of a lettuce leaf, top with a tablespoon of cheese and a dollop of sour cream, and roll up like a burrito. Close with toothpicks. Repeat to make 6 wraps total.
  • Serve with salsa picante and guacamole, if desired.

1/2 lb Boar's Head Ovengold® Roasted Breast of Turkey, sliced thick
1 tablespoon olive oil
1 red onion, cut into strips
1 green pepper, cut into strips
1 1/2 teaspoons fajita grill and sizzle seasoning
4 flour tortillas (6 inch)

Steps:

  • Julienne turkey into ¼" x ¼" x 2" long strips.
  • Heat oil in a skillet over medium-high heat. Add the onions and pepper and grill for 3 minutes.
  • Add the turkey and seasoning and cook until the turkey is warmed through, about 4 minutes.
  • Warm the tortillas and spoon on the turkey mixture.
  • Squeeze lime wedges on top for flavor, if desired.
  • Roll up and enjoy.
  • Serve with sour cream, salsa, grated cheese, guacamole, or lime wedges if desired.

Spicy Tempeh Fajitas image

This is modified from a package of Turtle Island Tempeh. It was my first tempeh recipe, and it won't be my last. Yum!

1 onion (minced)
2 garlic cloves (minced)
2 tablespoons olive oil
8 ounces tempeh (chopped)
1/2 cup vegetable broth
1 teaspoon dried oregano
3 tablespoons taco seasoning
1 jalapeno pepper, seeded and sliced
1 red pepper, seeded and sliced
1 tomatoes, chopped
1 cup cheddar cheese, diced
4 small tortillas

Steps:

  • Heat the oil on medium high and add the onion, red pepper and jalapeno. Cook, stirring often, until the onion starts to soften.
  • Add garlic and cook for another minute or two. Add the tempeh and cook, stirring often, about five minutes. Tempeh should get lightly browned.
  • Add the taco seasoning and the oregano. Stir well, add the vegetable broth, and reduce hit to low.
  • Heat until most of the liquid has evaporated. Place in tortillas and add chopped tomato and cheddar.
  • Grill on a contact grill if desired (recommended!).

1 lb turkey fillet, cut in 1/2-inch strips
1/2 cup fresh cilantro
1 garlic clove, minced
1/2 teaspoon cumin
1/4 teaspoon chili powder
1/8 teaspoon soy sauce
1/8 teaspoon Worcestershire sauce
2 teaspoons vegetable oil
1 red bell pepper, cut in 1/8-inch strips
1 green pepper, cut in 1/8-inch strips
3 cups onions, thinly sliced and separated into rings
3 tablespoons lime juice
8 flour tortillas, Costco cook-at-home are the best
sour cream (optional garnish)
guacamole (optional garnish)
pico de gallo (optional garnish) or salsa (optional garnish)

Steps:

  • Combine turkey, cilantro, garlic, cumin, chili powder, soy sauce and Worcestershire sauce. Cover and marinate for at least one hour.
  • In large non-stick skillet, heat 1 teaspoons oil over medium-high heat, then stir-fry turkey for 4 minutes, or until no longer pink.
  • Remove from skillet and set aside.
  • Add remaining 1 teaspoons oil to skillet, then stir-fry peppers for 2 minutes.
  • Add onion and cook, stirring constantly until vegetables are crisp-tender.
  • Return turkey to skillet, and pour lime juice over mixture, stirring to combine.
  • Remove from heat and serve immediately in flour tortillas, garnishing as desired.
