TURKEY FAJITAS
I prepare these quick and easy fajitas about once a week, and my family never gets tired of them. I like serving them with salsa and light sour cream on the side. -Bonnie Basinger of Lees Summit, Missouri

Steps:
- In a large nonstick skillet, heat oil over medium-high heat. Add turkey; cook and stir 2 minutes. Add peppers, onion, garlic, salt, cumin, pepper and cayenne. Cook and stir 5 minutes or until turkey is no longer pink and peppers are crisp-tender. Stir in cilantro and lime juice; cook 1 minute longer. Serve in tortillas.

TURKEY FAJITA WRAPS
Steps:
- Heat the oil in large skillet over high heat. Add the onion, peppers, and garlic and cook, stirring, until slightly softened. Add the turkey, cumin, chili powder, salt, pepper, and cayenne and cook, stirring, until cooked through, about 5 minutes.
- Spoon a couple tablespoons of the turkey mixture on the inside of a lettuce leaf, top with a tablespoon of cheese and a dollop of sour cream, and roll up like a burrito. Close with toothpicks. Repeat to make 6 wraps total.
- Serve with salsa picante and guacamole, if desired.

SPICED OVENGOLD® TURKEY FAJITAS
A few savory vegetables and a little seasoning turns the Boar's Head Ovengold Turkey into a spicy night south-of-the-border.

Steps:
- Julienne turkey into ¼" x ¼" x 2" long strips.
- Heat oil in a skillet over medium-high heat. Add the onions and pepper and grill for 3 minutes.
- Add the turkey and seasoning and cook until the turkey is warmed through, about 4 minutes.
- Warm the tortillas and spoon on the turkey mixture.
- Squeeze lime wedges on top for flavor, if desired.
- Roll up and enjoy.
- Serve with sour cream, salsa, grated cheese, guacamole, or lime wedges if desired.

SPICY TEMPEH FAJITAS
This is modified from a package of Turtle Island Tempeh. It was my first tempeh recipe, and it won't be my last. Yum!

Steps:
- Heat the oil on medium high and add the onion, red pepper and jalapeno. Cook, stirring often, until the onion starts to soften.
- Add garlic and cook for another minute or two. Add the tempeh and cook, stirring often, about five minutes. Tempeh should get lightly browned.
- Add the taco seasoning and the oregano. Stir well, add the vegetable broth, and reduce hit to low.
- Heat until most of the liquid has evaporated. Place in tortillas and add chopped tomato and cheddar.
- Grill on a contact grill if desired (recommended!).

TURKEY FAJITAS
Haven't tried this yet. Comes from the Norbest Marinated Turkey Fillet package. Their stir-fry recipe is great... so I have high hopes for this too.

Steps:
- Combine turkey, cilantro, garlic, cumin, chili powder, soy sauce and Worcestershire sauce. Cover and marinate for at least one hour.
- In large non-stick skillet, heat 1 teaspoons oil over medium-high heat, then stir-fry turkey for 4 minutes, or until no longer pink.
- Remove from skillet and set aside.
- Add remaining 1 teaspoons oil to skillet, then stir-fry peppers for 2 minutes.
- Add onion and cook, stirring constantly until vegetables are crisp-tender.
- Return turkey to skillet, and pour lime juice over mixture, stirring to combine.
- Remove from heat and serve immediately in flour tortillas, garnishing as desired.
