This recipe was found on another recipe website, which was originally found in an 1985 edition of Gourmet magazine. They're absolutely delicious, and they go great with a nice steak.

1/2 lb turnip, peeled and cut into 1/4-inch cubes (about 1 1/3 cups)
6 ounces potatoes, peeled and cut into 1/2-inch cubes (about 1 cup)
2 1/2 tablespoons thinly sliced scallion tops
1 egg, beaten lightly
1/4 cup all-purpose flour
canola oil (for frying)
salt and pepper

Steps:

  • In a large saucepan of boiling salted water, cook the turnip and potato cubes for 15 to 17 minutes, until they are tender, and drain them.
  • In a bowl, mash them with a fork and stir in the scallions, the egg, flour, and salt and pepper to taste.
  • Coat the bottom of a large, heavy bottomed skillet with about 1/4-inch of the oil. Heat the pan on medium high heat until the surface of the oil begins to shimmer, but not smoke.
  • Spoon 1/4-cup mounds of the turnip potato batter into the pan, flattening them into 1/2-inch thick patties with the back of a spatula. Fry the patties until they are golden, turning them once, about 4 minutes on each side. Transfer the patties to paper towels to drain off excess oil.

1/2 pound turnips, peeled and cut into 1/4-inch cubes (about 1 1/3 cups)
6 oz potato, peeled and cut into 1/2-inch cubes (about 1 cup)
2 1/2 tablespoons scallion greens, thinly sliced
1 egg, beaten lightly
1/4 cup all-purpose flour
Extra virgin olive oil, canola oil, or peanut oil
Salt and pepper

Steps:

  • Cook chopped turnip and potato in boiling water: In a large saucepan of boiling salted water, cook the turnip and potato cubes for 15 to 17 minutes, or until they are tender, and drain them.
  • Mash turnips and potatoes: In a bowl, mash the cooked turnips and potatoes with a fork and stir in the scallions, the egg, flour, and salt and pepper to taste.

A real kid pleaser. Best made with fresh potatoes, as opposed to instant, with a stiff potato consistency. I just boil a few potatoes and smash them with a fork.

2 cups cooked smashed potatoes (plain, boiled and fork-smashed potatoes work best)
1 cup shredded mozzarella cheese (can substitute cheddar)
1 large egg, lightly beaten
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder or 2 tablespoons thin sliced green onions
1/4 teaspoon black pepper
1 egg, lightly beaten
1 cup breadcrumbs
1/4-1/2 cup vegetable oil

Steps:

  • Combine first 7 ingredients; chill.
  • Shape mixture into 6 patties.
  • Dip each patty into lightly beaten egg then lightly coat with breadcrumbs.
  • Heat vegetable oil and fry over medium heat until lightly browned, turning once.
  • Tip: If you feel your potatoes are too watery, lightly dust with flour prior to dipping into the egg wash.

Replacing turnip for some of the potatoes not only reduces carbs but also adds another layer of flavor. I also chose to use half-and-half over whipping cream to lighten things up a bit.

1 teaspoon unsalted butter, or as needed
1 ½ pounds russet potatoes, peeled
1 large turnip, peeled
1 ½ teaspoons fresh thyme leaves, divided
salt and ground black pepper to taste
2 cups shredded Monterey Jack cheese, divided
1 cup half-and-half

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly butter a 9-inch gratin dish.
  • Using a mandoline, slice potatoes and turnip into 1/8-inch-thick slices.
  • Layer 1/2 of the potatoes and turnips in the bottom of the gratin dish. Sprinkle 1/2 of the thyme leaves over the vegetables, season with salt and pepper, and top with 1 cup shredded Monterey Jack cheese.
  • Layer remaining 1/2 of the potatoes and turnips on top of the cheese. Sprinkle remaining thyme leaves over the vegetables. Season with salt and pepper again. Pour half-and-half evenly over the top and cover with remaining 1 cup Monterey Jack cheese.
  • Cover and bake in the preheated oven for 40 minutes. Uncover and continue baking until browned and bubbly, about 10 more minutes. Remove from the oven and let sit 10 minutes before serving.

1 pound russet potatoes (about 2 medium)
1/2 pound white turnips (about 1 large)
1/4 cup olive oil
1 teaspoon coarse salt
1/4 teaspoon ground pepper

Steps:

  • Coarsely grate (with a box grater or a food processor fitted with the grater attachment) potatoes and turnips, all scrubbed and trimmed. Squeeze to remove as much moisture as possible; transfer vegetables to a medium bowl. Toss with coarse salt and ground pepper.
  • Heat olive oil in a large skillet over medium heat. Form potato mixture into four tightly packed patties; place in skillet, flattening gently with a spatula to a 3/4-inch thickness. Cook patties, turning once, until browned and cooked through, about 10 minutes per side (reduce heat if patties start to brown too quickly, and add more oil to skillet if necessary). Transfer to paper towels; sprinkle with salt.

1/4 cup finely sliced onions or 1/8 cup dehydrated onion
1 tablespoon oil
2 1/2 lbs turnips, quartered
water, to cover Turnips for boiling
salt
1/2 teaspoon red chili powder
1/4 teaspoon garam masala
1/4 cup oil, for shallow frying

Steps:

  • If you are using sliced onions, fry them until crisp in 1 tbsp oil, then coarsely grind them. Set onions aside.
  • If using dehydrated onions, just set aside. DO NOT REHYDRATE!
  • Place quartered turnips in a deep pot and cover with water. Boil them until soft.
  • Remove the turnips from the water and, using a piece of muslin, squeeze out as much water as you can. Discard all of the liquid.
  • Mash the turnips, adding the onions, salt, chili powder, and garam masala. Mix well to combine.
  • Divide into 8 pieces and flatten into patty shape with wet hands and pat dry.
  • Fry in ¼ c oil until golden brown.
  • Serve hot.

My wife is doing the low-carb thing, so I created this recipe hoping to give her a potato-like side dish.

4 cups turnips, shredded
1/2 cup onion, chopped
1 garlic clove, minced
1 tablespoon parsley
1 egg
2 cups cheddar cheese, shredded
salt and pepper
butter
oil

Steps:

  • Shred turnips and cheese, chop onions and mince garlic.
  • Combine all ingredients, excluding butter and oil.
  • Press 1/3 to 1/2 cup turnip mixture into patties.
  • I used a plastic patty maker.
  • Add butter and oil to frying pan.
  • Heat over medium-high heat.
  • When pan is nice and hot, gently place patty into pan and allow the bottom to thoroughly brown, about 3 to 5 minutes.
  • Flip and allow the other side to brown.
  • Turning them was slightly difficult as the cheese is now molten.
  • Remove from pan to paper towel.
  • Cool slightly and serve.

2 large turnips, peeled
1/2 cup heavy cream, heated
8 tablespoons butter, melted (1 stick)

Steps:

  • Slice potatoes and turnips 1/4-inch thick. Cook in boiling water for 15-20 minutes or until fork-tender. Drain.
  • Whip cooked potatoes and turnips with electric mixer, mixing until moderately smooth (don't overbeat them; a few lumps are nice).
  • Add hot cream, butter and sour cream. Season with salt and pepper to taste.
  • Whip again until blended.
  • Adjust thickness by adding more cream, if desired.
