If you've only experienced store-bought apple butter, this homemade version will blow you away. The recipe, from Kaley Laird, the executive pastry chef at Asheville, North Carolina's James Beard Award-nominated restaurant Benne on Eagle, requires just five ingredients (including apples) and requires little effort beyond occasional stirring and getting out your blender. But you'll be rewarded with a not-too-sweet, deeply flavored spread that you can enjoy on your morning biscuit or toast, swirl into a bowl of oatmeal, or use as a topping for Laird's decadent Parsnip-Buttermilk Tart. Like most apple butter recipes, this one contains apples, brown sugar, and cinnamon. But Laird's secret ingredient is ¼ cup of bourbon, which cooks down along with the apples and adds a subtle kick and depth of flavor. If you'd rather skip the alcohol, substitute 2 tablespoons of vanilla extract. Once the apples have cooked down, the mixture is processed until completely smooth in a blender. If you prefer apple butter that has a little more texture, you can leave it on the chunkier side. The recipe makes 4 cups of apple butter, and it can be stored in an airtight container in the refrigerator for up to a month-although we're pretty sure it won't last that long.

6 medium-size (about 3 lb. total) Honeycrisp apples, unpeeled, cored, and diced (about 10 cups)
1 ½ cups packed light brown sugar
¼ cup bourbon
1 tablespoon ground cinnamon
1 teaspoon kosher salt

Steps:

  • Stir together all ingredients and 1 ½ cups water in a large saucepan or Dutch oven. Bring to a simmer over medium-high, stirring occasionally. Reduce heat to low. Cook, stirring occasionally, until apples break down and become very soft, 1 hour, 45 minutes to 2 hours. Remove from heat; cool 10 minutes.
  • Transfer mixture to a blender. Secure lid on blender, and remove center piece to allow steam to escape. Place a clean towel over opening. Process until smooth, 1 minute. Store in an airtight container in refrigerator up to 1 month.

6 lbs apples, tart, cored sliced and peeled
2 cups unsweetened apple juice
3/4 cup brown sugar
3 teaspoons cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg, fresh ground

Steps:

  • Prep apples as directed, combine in slow cooker with apple juice (or cider), brown sugar and spices, cook overnight and into the next day if you can, stirring occasionally - 18 hours or so is optimal. You want the mixture to reduce down significantly. Once the apples are to more or less applesauce consistency, apply an immersion blender to puree the mixture to a velvety texture or put it through a food mill. Once the liquid no longer separates quickly after it's stirred, it's ready to jar up and process. Pour into sterilized jars, process in hot water bath for 10-15 minutes.

8 medium apples, peeled and coarsely chopped
1-1/2 cups apple cider or juice
1/3 cup packed brown sugar
1/3 cup dark molasses
2-1/4 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
3/4 cup golden raisins
1/2 teaspoon grated lemon zest

Steps:

  • In a large saucepan, combine the apples, apple cider, brown sugar, molasses, cinnamon, nutmeg, cloves and ginger. Bring to a boil. Reduce heat; simmer, uncovered, for 1-3/4 to 2 hours or until mixture reaches a thick, spreadable consistency, stirring often., Remove from the heat. Stir in raisins and lemon zest. Cool to room temperature. Store in an airtight container in the refrigerator.

1 tablespoon balsamic vinegar
1 tablespoon crystallized ginger (finely chopped)

  • In a small saucepan heat and stir marmalade until melted, set aside.
  • In a medium bowl whip butter till fluffy.
  • Mix in melted marmalade, vinegar and ginger.
  • Cover; chill before serving.
  • Toss warm vegetables with butter and serve.

4 1/2 lbs cooking apples (cored, and quartered about 14 medium tart apples)
3 cups apple cider or 3 cups apple juice
2 cups sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice

Steps:

  • In an 8- to 10-quart heavy kettle combine apples and cider.
  • Bring to boiling and reduce heat.
  • Simmer, covered, for 30 minutes, stirring occasionally.
  • Press through a food mill or sieve until you have 8 1/2 cups.
  • Return pulp to kettle.
  • Stir in sugar, cinnamon, cloves, and allspice.
  • Bring to boiling and reduce heat.
  • Cook, uncovered, over low heat 1 1/2 hours or until thick and mixture mounds on a spoon, stirring often.
  • Boiling-Water Canning: Ladle hot apple butter into hot, sterilized half-pint canning jars heaving 1/4 inch headspace. Wipe jam jars and adjust lids. Process in a boiling water canner for 5 minutes (start timing when water returns to boil). Remove jars and cool on rack.
  • Freezing: Place the kettle of apple butter in a sink filled with ice water. Stir mixture to cool. Ladle into half-pint wide-top freezer containers, leaving a 1/2 inch headspace. Seal and label and freeze up to 10 months. Apple butter may darken slightly on freezing.
