CLASSIC MEATLOAF
The secrets to this meatloaf are fresh, very finely diced vegetables that give it moisture and flavor--and a light touch in mixing together the ingredients. This hearty meatloaf is the perfect meal for cool fall and winter evenings, served with mashed potatoes and simple mushroom gravy.

Steps:
- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

MY FAVORITE MEATLOAF
Steps:
- Preheat oven to 350˚. Pour milk over the bread slices. Allow it to soak in for several minutes.
- Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
- With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
- Lay bacon slices over the top, tucking them underneath the meatloaf.
- Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
- Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.
- Serve with mashed potatoes. Yummy!
MY HUSBAND'S FAVORITE MEATLOAF
Steps:
- Preheat oven 375°F. Add all ingredients together except for ketchup and black peper. Mix together with hands.
- Smash mixture evenly in an 8x8 square baking pan. Take black pepper and sprinkle lightly over top. Then spread ketchup evenly.
- Bake for 25 to 30 minutes or until cooked through.

HUBBY'S MEATLOAF
I know everyone has a recipe...but once, quite by accident my DH made this for dinner, making it up as he went along...he is now in charge of Meatloaf in our house!! It's a huge meatloaf, we love meatloaf sandwiches...and I have also used leftovers like added meat to spaghetti sauce!

Steps:
- Mix all well.
- Place in 9X13 pan.
- We prefer flat and square but can also do it as a large loaf.
- Spread catsup on top of meatloaf.
- Bake at 375 degrees for approx 1 1/2 hours.
- (until desired doneness).

MEATLOAF - HUBBY'S FAVORITE
Steps:
- Break up regular oats by placing in baggie and pounding them with a meat mallet or rolling pin. You don't want fine crumbs, but just broken pieces of oats.
- Preheat oven to 350*. Spray a shallow 9x13 baking pan with PAM.
- Mix all ingredients together well. Using your hands, form into a 9 inch long loaf, packing together firmly with no air pockets.
- Place meatloaf in pan and pour a little water in bottom of dish - about 1/4 inch deep.
- Bake 1 hour, uncovered. Mix glaze ingredients together. Spread on top of meatloaf.
- Continue to bake, uncovered, for approx. 30 minutes more. Check center of meatloaf to ensure juices are clear - no pink inside. Internal temperature should be 155*. Meatloaf crust will be dark brown.
- Remove from baking pan. Let cool 5 - 10 minutes for easier slicing. Use a sharp, thin knife to cut, which will make neater, less crumbly slices.

- Mix all ingredients together.
- Form into a loaf and place in a foil-lined bread pan. (There usually is about 2 inches of space on both ends between the meatloaf and the pan).
- Making sure the top is flat to insure even cooking.
- You can top it with extra ketchup, if desired.
- Bake at 425°F for 45 minutes.

- To prepare sauce, saute onion in vegetable oil. Once it's softened, add garlic. Add the rest of the ingredients for the sauce except for salt and pepper and cook, uncovered, on medium-low heat for 15 to 20 minutes, or until your flavors come together. Season with salt and pepper.
- Preheat oven to 375 degrees F.
- Soften vegeatable in small amount of oil. Set aside.
- In a large bowl, mix up the rest of the ingredients and stir in 1/4 cup of the sauce mixture. Add your cooked vegetables and lightly mix everything up with your hands.
- Gently form into an oval loaf in a shallow baking dish. Spread the top with the rest of the sauce. Bake for about 1 hour.
