SPICED NUTS II
Spiced nuts are a great holiday snack or party food. In this recipe mixed nuts are baked with sugar, cinnamon, nutmeg and cloves, and mixed with raisins.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Beat egg white until smooth; stir in nuts. In a small bowl combine sugar, cinnamon, nutmeg and cloves; stir into nut mixture. Spread on a baking sheet.
- Bake in preheated oven for 20 minutes, stirring occasionally.
- Remove from oven and stir in raisins and salt. Cool before storing in an airtight container.

Steps:
- Preheat to 330 degrees F.
- In a small saucepan, melt butter with garlic over moderately-low heat and remove from heat.
- In a 13 x 9 inch baking pan, spread nuts, drizzle butter over, toss well to coat and roast, stirring occasionally, for 30 minutes, or until golden and fragrant.
- Combine dry ingredients and sprinkle over nuts.
- Stir to coat.
- Continue baking 3 minutes longer.
- Transfer to paper towels to drain.
- Sprinkle with salt to taste.
- Let cool and transfer to airtight container.
- (these keep up to 2 weeks).

- Preheat oven to 325 degrees F. Combine nuts and seeds in a medium-sized bowl. Add the maple syrup and spices and salt and toss to combine. Spray a baking sheet with cooking spray, then transfer coated nuts to baking sheet and spread evenly in 1 layer. Bake 15 to 20 minutes, stirring once, until nuts are fragrant and lightly toasted.

- Preheat oven to 350°F. Brush rimmed baking sheet with oil. Attach candy thermometer to side of heavy medium saucepan (do not allow tip to touch bottom). Add sugar and 1/4 cup water to saucepan and stir over medium heat until sugar dissolves. Increase heat and boil without stirring until thermometer registers 240°F, occasionally swirling pan and brushing down sides with wet pastry brush, about 4 minutes (time will vary depending on size of pan). Remove from heat. Quickly stir in chili powder, butter, chili sauce, and salt (mixture may bubble). Working quickly, add nuts; stir until coated. Transfer to baking sheet, spreading to separate nuts. Bake until nuts are browned and mixture bubbles, stirring occasionally, about 9 minutes. Cool. Break nuts apart. (Can be made 1 week ahead. Store at room temperature in airtight container.)

- Preheat oven to 300 degrees. Beat egg white until soft and foamy. Combine all remaining ingredients except pecans; whisk into egg white. Stir in pecans until well coated; spread mixture in single layer onto an ungreased baking pan.
- Bake pecans for 15 minutes, then remove from oven. Using a metal spatula, toss, stir, and separate nuts. Reduce oven to 250 degrees and return nuts to bake until medium brown, about 10 minutes. Remove from oven; toss, and stir again. Place baking pan on wire rack to cool (they will crisp as they cool). Break up any that stick together.

- Whisk chaat masala, cayenne, and sugar in a small bowl to blend. Combine cornflakes, almonds, cashews, and pecans in a medium bowl.
- Heat oil in a large saucepan over medium. Add cornflake mixture and toss to coat. Cook, tossing often, until fragrant and beginning to turn golden brown, about 5 minutes.
- Transfer cornflake mixture to a rimmed baking sheet and sprinkle half of chaat masala mixture over; toss to coat. Sprinkle remaining chaat masala mixture over and toss to coat again. Let cool, then transfer to a large bowl. Do ahead: Nut mix can be made 1 week ahead. Store airtight at room temperature.
