Steps:
- In small bowl, mix sugar, chili powder and red pepper.
- In large microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in cereal and nuts until evenly coated. Stir in sugar mixture until evenly coated.
- Microwave uncovered on High 4 to 5 minutes, stirring after 2 minutes, until mixture just begins to brown. Spread on waxed paper to cool. Store in airtight container.

- In large bowl, mix cereals and almonds. Line cookie sheet with waxed paper or foil.
- In 2-cup measure, beat egg white with fork. Mix sugar, salt and spices together in small bowl. Pour egg white over cereal; sprinkle with sugar-spice mixture.
- Microwave on High 3 to 4 minutes, stirring after every minute until cereal and nuts are browned and sound crisp when stirred with spoon. Pour onto waxed paper to cool. Store tightly covered.

This is essentially the recipe on a box of Chex, adjusted to my taste. I like extra seasoning, a kick from hot sauce, and a few other adjustments. I also leave out the bagel chips; they just don't seem very Chex Mix-y to me.

PRALINE NUT CHEX MIX
Chex Mix with a carmel twist I got this recipe from a freind at work and when I tried it at home, it didn't even last the through the next day!

Steps:
- Heat oven to 375.
- spray a large shallow pan with cooking spray.
- Mix cereal, pretzels, and nuts in a large bowl, then place in shallow pan.
- Combine brown sugar, butter and corn syrup in a sauce pan. Cook over medium heat, bring to a boil. Boil for 4-6 minutes stirring constantly.
- Remove from heat, add baking soda and vanilla. Stir quickly and then pour over cereal mix. Toss cereal mix.
- Bake in oven 10-15 minutes stirring every 5 minutes until set.
- Pour onto alumimnum foil to cool. Break large pieces apart.
- Store in airtight container.
- Enjoy!

- Melt butter in medium saucepan.
- Add everything but cereals, pretzels, cheerios and nuts to butter.
- Heat to just below boiling.
- Mix together cereals, pretzels and nuts in large roasting pan.
- Pour butter mixture over gradually mixing all together.
- Bake@ 300 degrees for 45 minutes stirring every 15 minutes.
- Cool and store in plastic bags.
- This freezes well.

A 1940's version of the Chex type party mixes. Originally published by the Spice Island Seasoning Company to introduce their spices. This was a holiday tradition when I was growing up. Great for parties, snacking and gift giving.

Steps:
- Mix all cereal ingredients together in a large roaster or roasting pan. A Nesco electric roaster works best.
- Mix spices together and toss with cereal ingredients.
- Pour melted butter over cereal and spices. Mix to coat thoroughly.
- Bake at 250 degrees, turning every 15 minutes until cereal is crisp and golden brown. Baking time is usually 1 to 1 1/2 hours.
- This recipe makes a large batch of mix. The cereal and spice amounts may be adjusted according to taste.
