6 cups water
2 cinnamon sticks
4 whole cloves
4 whole allspice
2 cups fresh mint leaves
Honey, optional

Steps:

  • Bring the water, cinnamon, cloves and allspice to a boil. Boil for 1 minute. Stir in mint leaves. Remove from heat and steep for 5 minutes. Strain into cups. Sweeten with honey if desired.

12 sprigs fresh mint
4 tea bags
1 cup white sugar
1 cup orange juice
¼ cup lemon juice
5 cups cold water
3 orange slices for garnish
3 lemon slices for garnish

Steps:

  • Place the tea bags and mint sprigs into a large pitcher. Pour boiling water over them, and allow to steep for about 8 minutes. Remove and discard the tea bags and mint leaves, squeezing out excess liquid. Stir in sugar until dissolved, then stir in the orange juice and lemon juice. Pour in the cold water. Serve over ice cubes, garnished with orange or lemon slices.

1 orange pekoe tea bag
6 large mint sprigs, large stems with large leaves (lightly crushed)
1/4 teaspoon cayenne pepper
2 cups boiling water, boiling
1 cup white sugar, white
1/2 cup lemon juice, fresh squeezed
1 cinnamon stick
2 slices lemons, garnish
2 mint sprigs, garnish

Steps:

  • Steep 1 tea bag, 6 mint stems and cayenne pepper in 2 cups of boiling water.
  • Strain the mixture, keeping only the liquid.
  • Add the sugar, lemon juice and cinnamon stick to the mint mixture and refrigerate.
  • When ready to serve, remove the cinnamon stick and dilute the mint mixture with equal parts of water.
  • Serve in a tall glass with ice, add a fresh mint sprig and a lemon slice for garnishing.

12 large sprigs fresh mint, plus for garnish
6 bags black tea
2 vanilla beans, split lengthwise and seeds scraped
2 vanilla beans, split lengthwise and seeds scraped
1/3 cup sugar
4 to 6 cups ice cubes
16 ounces (2 cups) bourbon
8 thin slices lemon

Steps:

  • Bring 12 cups water, the mint, tea, vanilla seeds and sugar to a boil in a large pot over high heat. Boil for about 10 minutes, then remove from the heat and let steep for another 10 minutes. Remove the tea bags and mint sprigs and strain into large pitcher. Let cool to room temperature, then refrigerate until ready to serve.
  • For each serving, fill a glass with ice, add 2 ounces of the bourbon and pour tea over. Garnish with a mint sprig mint and a lemon slice.

1 bunch fresh mint, washed
2 cups cold water

Steps:

  • Brew tea in boiling water, letting steep for 10 minutes. Pour brewed tea into a serving pitcher. Add sugar and lemon, and swirl in the mint, holding it by the stems and using it to stir and dissolve the sugar. When sugar is dissolved, drop mint into pitcher and add 2 cups cold water. Refrigerate until thoroughly chilled. Strain mint out before serving and serve cold.

2 quarts boiling water
10 sprigs mint
1 cup sugar (or to taste)
2 lemons, sliced

Steps:

  • In large tea pot (or two small tea pots) pour boiling water over tea bags and mint and allow to steep for 20 minutes.
  • Place sugar in 2-quart pitcher (that will tolerate some heat).
  • Pour freshly brewed tea (minus mint and tea bags) into sugar and stir until sugar is dissolved.
  • Place in refrigerator until ready to serve.
  • To serve, pour into tall glasses over ice.
  • Serve with lemon slices.
