1 teaspoon ground cinnamon

1 teaspoon baking powder
1/2 teaspoon baking soda

Steps:

  • Combine the flour, brown sugar, oats, cinnamon and salt in a small bowl and mix well. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Sprinkle on the crumb topping.

Steps:

170g butter or margarine, plus extra for the tins
170g caster sugar
3 large eggs
170g self-raising flour
1 tbsp cooled instant coffee, dissolved in 1 tbsp hot water (add more if you like it stronger)
225g icing sugar
100g butter or margarine
1½ tbsp instant coffee, dissolved in 1 tbsp hot water
strawberry jam (optional)
walnuts or cherries, to decorate (optional)

Steps:

  • Heat the oven to 180C/160C fan. Line and butter two 18cm sandwich tins. Add the sugar and butter to a bowl and whisk until very fluffy and pale.
  • Whisk the eggs in a mug with a fork, then add them gradually to the mixture with 1 tbsp of flour each time. (Make sure you don't use all the flour.) When the eggs have been fully combined into the mix, add the rest of the flour and fold it in gently.
  • Add the dissolved coffee to the mixture, still folding. Divide into the sandwich tins and cook for 25-30 min until risen and firm and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 5 mins then turn out onto a wire rack to cool completely. Can be frozen at this stage.
  • Meanwhile, make the icing by beating the icing sugar with the butter until light and fluffy, then add the dissolved coffee. Whisk, then cover and set aside until ready to ice the cake.
  • Spread half the icing on the bottom of one sponge and spread the strawberry jam on the bottom of the other, if using. Sandwich together, then spread the remaining icing on top. Decorate with walnuts or cherries, if you like.

  • Make the crumb topping:
  • Using your fingers, combine flour, butter, brown sugar, powdered sugar, espresso powder, and salt in a medium bowl until mixture sticks together when pressed. Chill until ready to use.
  • Make the chocolate swirl:
  • Melt chocolate and butter in a heatproof bowl set over a pot of simmering water (water should not touch bowl) or in the top of a double boiler over medium heat. Remove from heat and stir in pecans, coffee, and granulated sugar.
  • Make the cake:

1 (.25 ounce) package active dry yeast
½ cup warm water
½ cup milk
1 cup whole wheat flour
¾ cup sugar
2 tablespoons butter
½ teaspoon salt
2 tablespoons butter, melted
1 cup confectioners' sugar
¼ cup dark cocoa powder
1 teaspoon cinnamon
1 cup confectioners' sugar
2 tablespoons milk
2 tablespoons butter, melted

Steps:

  • Combine 1/2 cup all-purpose flour and yeast in a bowl; stir in warm water. Let rest until doubled in volume, 30 to 40 minutes.
  • Heat 1/2 cup milk in a small saucepan over medium heat until it begins to bubble. Combine milk, whole wheat flour, 1/4 cup sugar, 2 tablespoons butter, and 1/2 teaspoon salt in a bowl. Allow to cool slightly. Add yeast mixture; stir to combine.
  • Stir in additional all-purpose flour until dough forms a ball and pulls away from the bowl. Transfer to a floured work surface; knead until smooth and elastic. Place dough in a greased bowl; cover with plastic wrap and let rise until doubled in volume, 45 minutes to 1 hour.
  • Punch dough down; let rest 10 minutes more.
  • Roll dough out on a floured work surface into a 12x20-inch rectangle. Spread 2 tablespoons melted butter on the dough. Combine 1 cup confectioners' sugar, cocoa powder, and cinnamon in a bowl; sprinkle over the dough.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Roll dough up jelly-roll fashion. Shape roll into a circle on the prepared baking sheet. Slice roll into 16 slices, cutting only 3/4 of the way through. Twist every other slice flat to the inside of the circle; twist the other slices flat to the outside of the circle. Cover with plastic wrap; let rise until doubled in volume, about 30 minutes.
  • Bake in the preheated oven until golden, about 20 minutes. Remove from baking sheet; let cool.
  • Combine 1 cup confectioners' sugar, 2 tablespoons milk, and 2 tablespoons melted butter. Drizzle glaze over coffee cake.

1/3 cup chopped walnuts
1 teaspoon ground cardamom
2 1/2 cups all-purpose flour
3/4 cup sugar
3/4 cup sour cream
1/2 cup milk
1/4 cup butter, softened
2 eggs
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
3/4 cup powdered sugar
1/4 teaspoon lemon extract
1 -2 tablespoon milk

Steps:

  • Preheat oven to 350°F
  • Combine all filling ingredients in a small bowl.
  • Combine all coffee cake ingredients in large bowl. Beat at low speed, scraping bowl often, until well mixed.
  • Spoon HALF of batter into greased and floured 12 cup bundt pan or 10 inch angel food cake pan. Sprinkle filling over batter; spoon remaining batter over filling.
  • Bake for 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan. Cool off completely.
  • Combine powdered sugar (it is best to sift the sugar prior to making the glaze) lemon extract and enough milk for desired glazing consistency in small bowl. drizzle over cooled cake.

Number Of Ingredients 18

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
3/4 cup warm milk (110° to 115°)
1 large egg
1/2 cup butter, softened
4 to 4-1/2 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon salt
APRICOT FILLING:
12 ounces dried apricots
3/4 cup water
3/4 cup sugar
1/4 teaspoon ground cinnamon
GLAZE:
1/2 cup confectioners' sugar
1/2 teaspoon butter, softened
1/2 teaspoon vanilla extract
1 to 2 teaspoons milk

Steps:

  • In a large bowl, dissolve yeast in warm water. Add warm milk, egg and butter; mix. Add 2-1/2 cups flour, sugar and salt; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , For filling, combine apricots and water in a small saucepan. Cover and simmer for 30 minutes. Cool 10 minutes. Pour into a blender; process at high speed until smooth. Stir in sugar and cinnamon; set aside., Punch dough down. Divide in half and roll each half into a 15x12-in. rectangle. Place on a greased baking sheet. Spread half of the filling in a 15x4-in. strip down center of dough. With a sharp knife, cut dough on each side of apricot filling into 1-in.-wide strips. Fold strips alternately across filling to give braided effect. Repeat with remaining dough and filling. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 20 minutes or until golden brown. Cool on wire racks for 15 minutes. Meanwhile, in small bowl. combine the confectioners' sugar, butter, vanilla and enough milk to achieve desired consistency; drizzle over warm coffee cakes. Serve warm or allow to cool completely.

1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup plain low-fat yogurt (I used nonfat)
2 1/2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 large egg, lightly beaten
cooking spray
2 tablespoons finely chopped walnuts
2 teaspoons 1% low-fat milk
1 teaspoon instant espresso or 2 teaspoons instant coffee granules
1/3 cup sifted powdered sugar

Steps:

  • Preheat oven to 350F (325 F for dark pans).
  • Combine first 3 ingredients; set aside.
  • Combine flour, 1/2 cup granulated sugar, baking powder, baking soda, and salt in a large bowl.
  • Make a well in the center.
  • Mix together the yogurt, butter, vanilla, and egg; add to flour mixture, stirring until just blended.
  • DO NOT OVERMIX.
  • Coat an 8-inch square pan with nonstick cooking spray.
  • Pour in half of the cake batter, then sprinkle with half of the espresso mixture.
  • Top with remaining batter, spreading to cover completely, and sprinkle with remaining espresso mixture.
  • Swirl batters together using a knife, and sprinkle with walnuts.
