GRILLED MAPLE MUSTARD CHICKEN
Easy grilled maple mustard chicken makes a delicious dinner any night of the week. Marinate it the night before and you've got a meal in minutes.

- In a medium bowl, whisk together the spicy brown mustard, dijon mustard, maple syrup, garlic, rosemary, vinegar, salt, and pepper until well combined.
- Trim the chicken of any fat and place in a glass baking dish or zip lock bag. Pour 3/4 of the marinade over the chicken and turn the chicken until coated on all sides. Cover and refrigerate the chicken at least 2 hours or overnight. Refrigerate the remaining 1/4 of the marinade in a separate bowl.
- When the chicken is done marinating, preheat grill to 500 degrees. Place the chicken on the grill and grill 5-8 minutes per side or until the thickest parts of each chicken breast reaches 160 degrees.
- When the chicken is done, let it rest on a plate for 5 minutes before serving.

SPICE-CRUSTED HAM WITH MAPLE MUSTARD SAUCE
Steps:
- Preheat oven to 350°F.
- Remove any thick skin from ham and all but about 3/4-inch layer of fat.
- Mince and mash garlic with salt to a paste. Coarsely grind coriander and peppercorns in coffee/spice grinder and stir together with flour, butter, and garlic paste in a bowl.
- Spread spice paste all over ham, then put ham, cut side down, in a greased large roasting pan. Bake in middle of oven until crust is golden and an instant-read thermometer inserted into center (do not touch bone) registers 150°F, about 1 1/4 hours.
- Transfer ham to a platter and let stand 15 minutes before slicing.
BAKED HAM WITH MAPLE MUSTARD GLAZE

- Preheat the oven to 350 degrees F.
- Place the ham in a roasting dish with 1 cup water in the bottom of the dish. Roast for 1 hour and 15 minutes. (Check the ham after 45 minutes and add more water if necessary or tent with aluminum foil if it is getting past a dark golden brown.)
- Meanwhile, combine the syrup, mustard, soy sauce, brown sugar, vinegar, Worcestershire and cayenne in a saucepan over medium-high heat. Cook, stirring frequently, until the mixture is thick and bubbly, 15 to 20 minutes.
- If you used it, remove the foil from the ham and slather the ham with the glaze. Return the ham to the oven uncovered. Continue to roast, brushing the ham with the glaze every 15 minutes, until the internal temperature is between 140 and 150 degrees F, another 1 hour and 30 minutes. (If the ham starts to become too dark on the outside, tent it with aluminum foil. We are looking for a dark, sticky, flavorful glaze on the outside of the ham. Use all the glaze! Really slather it on!)
- Remove the ham from the oven, remove the foil, brush with any remaining glaze and cook, uncovered for another 5 minutes. Let it rest for 20 to 30 minutes.
- Serve hot or at room temperature.
MAPLE-MUSTARD DIPPING SAUCE

MAPLE-MUSTARD PULLED PORK
Coat your pork shoulder with a sweet mustard glaze then slow-roast for soft, tender meat that just falls apart

- Mix the sea salt and 200g of the sugar in a large food bag, add the pork and coat it well. (If you don't have a bag, rub over the pork in a dish and cover with cling film.) Leave in the fridge overnight.
- The next day, remove the pork and wipe down the meat with kitchen paper. Heat oven to 140C/120C fan/gas 1. Mix the remaining sugar, the maple syrup, mustards and some ground pepper. Rub half the mixture over the pork and sit it on a rack in a roasting tin. Roast for 6 hrs.
- Spoon the remaining maple mixture over the pork and roast for 1 hr more.
- Rest the meat for 30 mins on a plate loosely covered with foil. To serve, tear the pork into big fat chunks and, after skimming the surface, spoon over any juices from the tin.

MAPLE MUSTARD
I found this recipe in the paper, and am posting as written. I used sugar free maple syrup and a good heaped teaspoon of the mustard seeds and this turned out amazing. This will go perfect with anything from salad to pork, and the family loved this. Keeps in the fridge for about 2 weeks.

- Bring the maple syrup to the boil and boil keeping it bubbling, when the bubbles start to go from small to big and the mixture is thickened this is about the time it is ready ( The recipe states several minutes, although mine took about 4-5 minutes). Remove from heat when thickened.
- Cool maple mixture. (With this step, my mixture was not completely cooled).
- When cool whisk in the Dijon mustard, seeds and pepper.
- This is ready once it has completely cooled.
