These peppery paprika lamb skewers are barbecue friendly. Serve with a vegetable couscous flavoured with mint and coriander

Yield Makes 6 skewers, 2 per adult, 1 per child

Number Of Ingredients 14

400g lean lamb shoulder, cut into 3cm cubes
1 tsp ground cumin
½ tsp cayenne pepper
1 tsp sweet smoked paprika
1 tbsp olive oil
24 cherry tomatoes
140g couscous
400ml hot vegetable stock
140g frozen pea
1 large carrot , coarsely grated
small pack coriander , chopped
small pack mint , chopped
juice 1 lemon
2 tbsp extra virgin olive oil

Steps:

  • Soak 6 wooden skewers in water for 30 mins (this prevents them burning when cooking on the griddle or barbecue). Put the lamb cubes in a large bowl with the spices and olive oil. Toss everything together well and season.
  • Thread a piece of lamb onto a skewer, followed by a cherry tomato. Repeat, adding about 4 pieces of lamb and 4 cherry tomatoes to each skewer, until all are used up.
  • Meanwhile, put the couscous in a large bowl, pour over the hot vegetable stock and add the peas. Stir, then cover with cling film and leave to soak, about 5 mins.
  • Heat a griddle pan. When all the liquid has soaked into the couscous, gently fluff up the grains using a fork, and stir in the carrot, herbs, lemon juice and olive oil. Mix everything together well, season and set aside.
  • Place the skewers on the hot griddle pan and cook for 5-6 mins, then turn and cook for a further 5-6 mins until the meat and tomatoes are charred and cooked through. Serve the skewers with the couscous.

A spicy Moroccan style dish. As the couscous has minimal cooking time the garlic flavour is quite strong, reduce the amount of garlic in the couscous or use some roasted garlic paste if you aren't keen on very garlicky food. This recipe came from the Home Beautiful magazine. The marinade also works well with chicken fillets.

2 (400 g) loin lamb, back straps about (eye of lamb loin)
2 -3 teaspoons chopped chili (fresh or bottled)
2 teaspoons ground cumin
1 garlic clove, crushed
1/4 cup fresh coriander, chopped (cilantro)
1 cup peas (frozen or fresh)
1 1/2 cups couscous
2 cups chicken stock
3 garlic cloves, thinly sliced
2 teaspoons olive oil
1/2 cup low-fat yogurt

Steps:

  • FOR THE LAMB.
  • Trim off any fat.
  • In a small bowl combine the chili, cumin, garlic and coriander.
  • Rub the mix into the lamb, you can allow it to marinate for up to 4 hours but it isn't essential.
  • Cook the lamb on a preheated, oiled grill plate until browned and cooked to your liking.
  • Remove from grill, sprinkle with a little sea salt and cover to keep warm.
  • FOR THE COUSCOUS.
  • Combine the stock, garlic and peas in a medium saucepan and bring to the boil.
  • Remove from the heat and stir in the couscous and oil.
  • Cover and stand for about 5 minutes or until the liquid is absorbed.
  • Fluff with a fork.
  • TO SERVE.
  • Slice the lamb, place on top of a mound of couscous and add a dollop of yoghurt.

1/4 cup plus 1 tablespoon olive oil
2 teaspoons Aleppo pepper
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 clove garlic, smashed and chopped
Juice and grated zest of 1 lemon
1 1/2 pounds lamb shoulder, cut into 1-inch cubes
Coarse salt
1 1/2 cups couscous
1/4 cup whole milk yogurt
1 tablespoon chopped mint

Steps:

  • Whisk together 1/4 cup oil, pepper, cumin, cinnamon, garlic, lemon juice and zest. Add lamb and mix to coat. Cover with plastic wrap and marinate in refrigerator, at least 2 hours.
  • Heat broiler and line broiler pan with aluminum foil. Bring 2 cups of water with 1/2 teaspoon salt to a boil. Pour couscous into a heatproof bowl, and stir in 1 tablespoon olive oil. Add half the boiling water, cover for 5 minutes, then stir and add the remaining water. Cover.
  • While couscous steams, thread lamb onto skewers. Scrape marinade into small saucepan. Season lamb with salt. Broil, 4 minutes a side for medium rare. Remove lamb and keep warm. Add drippings to marinade. Bring to boil for a minute, remove from heat; whisk in yogurt.
  • Fluff couscous with a fork and place on a platter. Place skewers on top and sprinkle with mint. Have each guest spoon sauce onto lamb.

Adapted from a recipe in Michelle Trute's 'cooking with conscience'. All the recipes in this book are low fat, low-moderate GI and easily prepared. This recipe is moderate GI and low in fat. She includes no salt in this recipe but I have included sea salt below as optional as I know for many this is an essential ingredient. If rosemary branches are unavailable, use wooden skewers soaked in water and add rosemary to the lamb just before threading it onto the skewers. I have also included sage as I love rosemary and sage together. Michelle Trute recommends marjoram, mint, rosemary and sage with lamb and recommends using herbs rather than salt. I have also posted Michelle Trute's Recipe #349024. 800g = just under 26 ounces.

800 g lean lamb, cubed
1 tablespoon lemon juice
2 garlic cloves, crushed
fresh ground black pepper, to taste

2 onions, diced large
1 sweet green peppers or 1 red sweet bell pepper, diced large
8 thick rosemary branches soaking in water (to be used as the skewers)
4 cups cooked couscous

Steps:

  • Combine lamb, lemon juice, garlic, pepper and ea ssalt (if using) in a bowl and refrigerate for 3 hours.
  • Sprinkle lamb with rosemary and sage (if using) and thread lamb, alternating with onion and bell pepper onto the rosemary branches (or wooden skewers).
  • Heat grill and cook the skewers on both sides for 3-4 minutes or until meat is cooked to your liking.
  • Let rest for 4 minutes then serve with couscous and yoghurt and dill sauce. The recipe for this is in Michelle Trute's first book which is out of print, My recommendation is to combine yoghurt with dill and perhaps include chopped green onions. She'd undoutedly recommend low-fat natural yoghurt. I wouldn't be able to resist using Greek yoghurt.
  • NOTE: To make your couscous more flavoursome, cook it in stock, and if you want it to be super-healthy, use a stock such as my Recipe #135453.

  • Remove lamb from bag, and discard marinade. Thread lamb onto 8 (10-inch) skewers. Place kebabs on grill rack coated with cooking spray; grill 8 minutes or until desired degree of doneness, turning occasionally. Place kebabs on a platter; sprinkle with mint. Serve with lemon wedges.

2 lbs lamb fillets, cut into 1 inch cubes
2 green sweet peppers
2 pints cherry tomatoes
2 onions
2 tablespoons lemon juice
1/2 cup olive oil
1 teaspoon garlic, minced

1/4 teaspoon turmeric (or more if desired, depending on how spicy you desire)
1 pinch ground red pepper or 1 pinch cayenne

Steps:

  • Up to 24 hours prior to grilling, combine marinade ingredients and pour into freezer bag. Place lamb cubes in marinade and refrigerate until ready to grill. Be sure all pieces of lamb are covered with marinade.
  • Prepare vegetables.Wash and dry veggies. Cut green peppers and onions into 1 inch chunks. Set aside.
  • Prepare skewers by spraying a light coat of cooking oil to prevent sticking. Place lamb and vegetables on skewers. Grill spicy lamb kebabs for about 5-7 minutes on each side or until desired doneness.

Many Mexican recipes start with a paste made with various rehydrated dried chiles, onion and fruit juices. Here a paste is used as a spicy marinade to flavor tender chunks of lamb. The hearty taste of red meat and the spicy heat of chiles creat the perfect marriage. For a smoky heat, try chipotle chiles. For over-the-top heat, use scotch bonnet chiles. For a nice bit of spice without a lot of burn, experiement with jalapeno or serrano chiles. Serve the lamb rolled in warm tortillas accompanied by the traditional beans and rice. Try the paste on chicken, beef or pork, too. Time does not include marinating time.

  • Heat grill. Remove lamb and onion from marinade, leaving on plenty of the spice paste; discard marinade. Alternately thread lamb and onion onto 4 (12-inch) metal skewers. Grill, covered, over medium-high heat or coals 8 to 10 minutes or until browned on all sides and lamb is pink in center. Garnish with cilantro sprigs and lime wedges.
