SPICED HONEY GLAZED CHICKEN
This sticky, sweet, spicy chicken recipe will leave you licking your fingers!

Steps:
- Preheat your oven to 400 degrees and move your rack to the top 1/3 of your oven. (This helps to crisp the skin.)
- In a small sauce pan, add honey, the juice from both oranges, the zest from both oranges, red pepper flakes, and cayenne if you are using it. Bring to a low boil over medium heat then reduce the heat letting the sauce simmer slowly and reduce until syrupy.
- Salt and pepper the chicken quarters well.
- Place chicken pieces on a baking sheet with a rack. Keep in mind that there will be some water that bakes out of the chicken so your baking sheet should have a rim to prevent it from spilling into your oven. Don't overcrowd your chicken.
- Roast the chicken for 30 minutes. Remove the chicken from the oven and brush liberally with the honey sauce. Put the chicken back into the oven for 10 minutes.
- Remove chicken the second time and apply the sauce a second time. If I have any left in the saucepan, I pour it over the top of the chicken.
- Return chicken to the oven again, cooking for 5-15 minutes or until the juices run clear and the internal temperature of the chicken reads 165 degrees. Enjoy!

HONEY SPICED ROASTED CHICKEN

- Preheat the oven to 350 degrees F and adjust the racks to the center of the oven. Fit a roasting pan with a V-rack.
- Mix together the honey, olive oil, cinnamon, smoked paprika and some salt and pepper in a small bowl.
- Sprinkle the cavity of the chicken with salt and pepper. Stuff the cavity with the rosemary sprigs and lemon slices. Place the chicken in the V-rack-fitted roasting pan. Sprinkle the outside of the chicken with salt and pepper. Tie the drumsticks together using butcher's twine. Brush the outside of the chicken with about half of the honey glaze.
- Transfer the chicken to the hot oven. Roast about 30 minutes, and then brush the glaze on the chicken once more. Continue to roast the chicken until the skin is golden brown and crisp , and an instant-read thermometer reaches 165 degrees when inserted in the thickest part of the thighs, about 45 minutes longer.
SPICY HONEY GLAZED CHICKEN
This is a simple worknight dish that will totally surprise you with flavor. It's great because every cook I know has all of these ingredients in their cupboards already! I got this recipe from a Cooking Light magazine and I serve it with pan fried broccoli and sweet hawaiian rolls. You can either use chicken breasts, or chicken thighs, and I recommend using boneless and skinless! This has only a medium spicy level, so just increase or decrease red pepper flakes to your taste... and enjoy!

Steps:
- In a large bowl, mix together first 7 ingredients (all the dry spices.).
- Place chicken pieces in the large bowl and toss to coat. Make sure each piece of chicken is entirely covered with the spice mix.
- Line a baking pan with foil and place coated chicken pieces on it with space between each piece.
- In a small bowl, mix honey and vinegar with a whisk and set aside.
- Put chicken under the broiler for 5 minutes.
- Turn chicken pieces once, and cook for another 5 minutes.
- Take out and drizzle or brush on 1/2 of the honey mixture. Cook 3 minutes.
- Turn pieces one last time and brush on the other half of the honey mixture. Cook until done, and keep warm in the oven until ready to serve.
HONEY GLAZED CHICKEN
When I have company I often make this recipe because, although it takes a while to cook, it's relatively easy to throw together and has a different taste from ordinary chicken.

- In a bowl, mix flour, salt and cayenne pepper.
- Add chicken pieces and shake around until coated.
- Pour 4 tbs butter into a 13 x 9 inch baking pan, place chicken in pan, turning once to coat.
- Bake at 350 F for 30 minutes.
- Meanwhile, mix brown sugar, honey, lemon juice, soy sauce, curry powder and remaining butter.
- Pour over chicken.
- Bake 45 minutes more or until chicken is tender, basting several times with drippings from the pan.

SPICY HONEY GLAZED CHICKEN RECIPE

- In a small bowl, mix together all rub ingredients (garlic powder, chili powder, salt, pepper, cumin, paprika, and cayenne).
- Place chicken on a large platter or pan and drizzle with oil, making sure each piece is evenly coated. Sprinkle rub on top and rub it all over each piece of chicken until chicken is completely coated.
- In a grill pre-heated to medium-high heat or an oven preheated to lo broil (about 400 degrees), cook chicken for 4-5 minutes per side or until chicken is fully cooked.
- In a small bowl, mix together honey and cider vinegar (to help make the honey easier to stir, warm it in the microwave for about 10-15 seconds). Set aside 1/2 of the glaze.
- During the last minute of cooking, brush 1/2 of the glaze on both sides of the chicken. Remove chicken from grill and drizzle the remaining glaze on top, then serve.

- In small bowl, combine honey with juice concentrate, orange zest, garlic, salt and red pepper flakes.
- Rinse chicken with cold water and pat dry. Season lightly with salt.
- In large non-stick skillet, heat margarine and oil over medium-high heat. Add chicken and cook about 4 minutes, until seared.
- Turn chicken, cook another 4 minutes until just cooked through.
- Pour honey mixture over chicken and cook, turning chicken to coat as sauce begins to thicken, about 2 min.
- Serve chicken breasts with honey-orange glaze spooned over the top.

- Put the chicken breasts on a rimmed baking sheet. Using a sharp knife, make 2 deep slashes in each breast.
