For the crust:
1 1/4 cups all-purpose flour, plus more for rolling
1 tablespoon sugar
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, chilled and cut into small pieces
1 tablespoon raw sesame seeds
For the filling:
3 cups half-and-half
2/3 cup plus 1 tablespoon granulated sugar, divided
1/3 cup sliced ginger (from a 3-inch piece)
1 stick cinnamon
2 cloves
8 large egg yolks, at room temperature
1 teaspoon vanilla extract
Special equipment:
a 9-inch pie pan; pie weights or dried beans, a small culinary torch

Steps:

  • In the bowl of a food processor, pulse the flour, sugar, and salt. Add butter and pulse until coarse, pea-sized crumbs appear. With the machine running, add 2 tablespoons ice water and sesame seeds and process until the dough just holds together. Squeeze a small amount of dough between your fingers and if it is very crumbly, pulse in another tablespoon of ice water. Do not overprocess.
  • Turn dough out onto a lightly floured surface, and push together into a rough ball. Knead a few times just to combine and flatten into a flat disc. Cover with plastic wrap and refrigerate at least 1 hour (or up to overnight).
  • When ready to bake pie, combine half-and-half with 1/3 cup sugar, ginger, cinnamon, and cloves in a small saucepan and bring to a simmer over medium-high heat, ,stirring occasionally to dissolve the sugar. Cover and steep the mixture for 30 minutes.
  • Meanwhile, preheat the oven to 375°F with rack in lower third of oven. Place a foil-lined baking sheet in the oven. On a floured surface, roll out dough into a 13-inch round. Line the pie pan with the dough. Trim, leaving a 1/2-inch overhang around the pan. Tuck the overhanging dough under and crimp as desired. Transfer pie dish to the refrigerator for 30 minutes. Line the dough with a piece of foil and top with pie weights or beans. Place the pie pan on the preheated baking sheet and bake until the edges are lightly golden, 20 minutes. Remove the foil and weights and bake until crust is light gold in color, 15 to 20 minutes more. Remove pie dish from the oven and transfer to a wire rack to cool at least 10 minutes, leaving foil-lined baking sheet in the oven. Lower oven temperature to 350°F.
  • In a separate medium mixing bowl, combine the egg yolks with the remaining 1/3 cup sugar. Beat with an electric mixer until the sugar is completely dissolved and the mixture forms pale yellow ribbons, about 2 minutes. Rub a small amount of the egg mixture in between your fingers to check for any undissolved sugar. If any remains, continue beating the mixture for a bit longer. Gradually whisk 1/2 cup warm cream mixture into the egg mixture to gently warm (or temper) the eggs. Continue to gradually whisk in remaining half-and-half mixture into egg mixture until completely combined. Whisk in vanilla. Place the pie pan on the baking sheet in the oven and strain custard into the cooled pie crust (do not overfill.) Bake until the center is just set, 55 to 65 minutes. Transfer to a wire rack; let cool to room temperature. Chill in the refrigerator for at least 2 hours (and up to 2 days ahead).
  • If you'd like to create a burnt-sugar crust, sprinkle remaining tablespoon sugar evenly over top of tart just before serving. Light blowtorch and move flame evenly back and forth just above top of tart, avoiding crust, until sugar is caramelized and slightly browned (be careful not to burn sugar). Let tart stand 5 minutes before serving.

1 small to medium kabocha squash, cut into sixths, seeds removed
Olive oil
1 1/2 cups all-purpose flour, plus more for bench flour
1/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon allspice
1/2 teaspoon ground ginger
2 grates fresh nutmeg
Pinch kosher salt
1 1/2 sticks cold butter, cut into pea-size pieces
1 egg yolk
2 to 3 teaspoons ice cold water
4 large eggs
3/4 cup heavy cream
3/4 cup sweetened condensed milk
1/2 cup light brown sugar
1/4 cup bourbon, optional
1 teaspoon vanilla extract
Heavy cream, for garnish
Pinch cinnamon, for garning

Steps:

  • For the squash: Preheat the oven to 375 degrees F.
  • Put the squash on a sheet tray, toss lightly with olive oil and toss in the oven. Roast the squash until a fork slides in and out easily, about 45 minutes. Remove the squash from the oven and let cool. Remove the skin and puree until smooth. Place 3 cups squash puree in a large mixing bowl, reserve the rest for another purpose.
  • For the crust: In the bowl of a food processor combine all the flour, sugar, cinnamon, allspice, ginger, nutmeg and salt. Toss in the butter and pulse until the mixture looks like grated parmigiano. Add in the egg yolk and a few drops of the ice water. Pulse until the mixture starts to come together into a ball. Add a few more drops of water if the mixture still seems dry.
  • Turn the dough out onto a lightly floured work board. Using the heels of your hand, schmear the dough straight forward and roll it back with your fingertips. Repeat this process two more times. Form the dough into a disk, wrap in plastic and refrigerate for at least 1 hour.
  • Remove the dough from the fridge and let warm up for 5 minutes. Roll the dough out into a large circle and lay in a deep pie dish. Trim the dough all the way around so there is only 1/2-inch overhang. Fold the dough under and crimp the edges decoratively. Make sure the edges don't extend beyond the pie plate rim. Prick the dough all over with a fork. Lay aluminum foil over the dough to cover and fill the pie plate with baking beans.
  • Place the pie plate on a sheet tray and bake in the oven for 15 minutes. Remove the foil and baking beans and bake for 5 more minutes. Remove from the oven and let cool.
  • Reduce the heat in the oven to 350 degrees F.
  • For the filling: In a small bowl, beat the eggs until they are smooth. Beat in the cream. Add the cream/egg mixture to the squash puree and beat to combine. Beat in the condensed milk, brown sugar, bourbon if using and vanilla. Beat until the mixture is well combined, 1 to 2 minutes.
  • Pour the squash mixture into the prepared pie shell. Place on the sheet tray and place back into the oven for 25 minutes. Rotate the pie and bake until the mixture barely jiggles when shaken, another 20 to 25 minutes. If the crust starts to get too dark, place a pie shield ring on the pie to protect the edges from burning.
  • Remove the pie from the oven and let it cool for at least 1 hour before cutting.
  • Whip heavy cream with a pinch of cinnamon until stiff peaks, and top the pie as a garnish.

This striking design requires just a sheet of paper and a sifter, while the topping itself is ground freeze-dried mangoes and strawberries mixed with confectioners' sugar. You can find the freeze-dried fruit at most grocery stores and health-food stores, where they are often grouped with the nuts and dried fruit. The pie can be made up to 1 day ahead, but for the cleanest look, it's best to apply the sugar within 2 hours of serving; beyond that, the sugar will eventually absorb moisture from the pie and begin to change color. But even if you skip the topping, the filling is beyond delicious all on its own.

2/3 cup/135 grams granulated sugar
1 cup/130 grams all-purpose flour
2/3 cup/145 grams light brown sugar
1 tablespoon ground ginger
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
1/2 teaspoon ground clove
1/2 teaspoon fine sea salt
1 3/4 cups/420 milliliters whole milk
1 cup/240 milliliters heavy cream
½ teaspoon vanilla extract
Egg wash (1 large egg mixed with 1 tablespoon water)
1 ounce/28 grams freeze-dried mango
1 ounce/28 grams freeze-dried strawberries
¼ cup/30 grams confectioners' sugar

Steps:

  • On a lightly floured surface and using a lightly floured rolling pin, roll out a disk of dough into a circle about ¼-inch thick. Starting at one end, gently roll up the dough onto the rolling pin. Unfurl the dough over a 9-inch pie plate, preferably ceramic, and press it in lightly, making sure it's lining the plate.
  • Trim so that there's about ½ inch of excess dough hanging over the edge of the pie plate. (If the dough feels warm, refrigerate it for 15 minutes.) Tuck the excess dough under itself so it is flush with the edge of the pie plate; leave the pie like this for a straight-edge finish, or crimp as desired. Dock the base and sides all over with a fork and refrigerate at least 30 minutes, and up to 2 hours.
  • Place a rack on the bottom shelf of the oven, and place a baking stone, if you have one, on the rack. Heat the oven to 425 degrees. Use a small brush to evenly paint egg wash on the edge of the crust. Cut a square of parchment paper and use it to line the crust. Fill with pie weights (or dried beans) up to the top edge. Place the plate on a baking sheet lined with parchment or foil.
  • Transfer the baking sheet to the oven, placing it directly on the baking stone if using. Bake crust until the outer edge is just starting to turn golden brown, 12 to 15 minutes. Remove the parchment and pie weights, and continue to bake until the base appears set, 2 to 4 minutes more. If the dough puffs up anywhere, you can puncture it with a fork. Cool the crust completely. Reduce the oven temperature to 375 degrees.
  • Make the filling: Whisk the granulated sugar and flour in a medium bowl to combine. Add the brown sugar and whisk to combine, breaking up clumps with the whisk or your fingers. Add the ginger, nutmeg, cinnamon, clove and salt and whisk to combine.
  • Add the milk, cream and vanilla and whisk well to combine. Transfer the pie plate to the prepared baking sheet. Pour the custard into the crust.
  • Transfer the baking sheet back to the oven, placing it directly on the baking stone if using. Bake until the crust is evenly golden brown and the custard appears set around the outer edge, 43 to 48 minutes; the center of the pie may still be jiggly, like pumpkin pie or cheesecake, but it will firm up as it cools. Let pie cool completely at room temperature on a rack.
  • Make the topping: Use a food processor to grind the freeze-dried mango into a fine powder, or seal it in a plastic bag and crush with a rolling pin. Transfer to a small bowl, and whisk in 2 tablespoons of confectioners' sugar. Wipe out the food processor or use another plastic bag and repeat with the freeze-dried strawberries. Transfer to a small bowl, and whisk in the remaining 2 tablespoons powdered sugar.
  • Place an 8 ½-by-11-inch piece of paper over the surface of the pie, leaving half of it exposed. Use a small sifter to sift the mango sugar onto the exposed surface of the pie. Carefully remove the paper, then cover the part of the pie sprinkled with mango sugar. Tap out the small sifter and use it to sift the strawberry sugar over the other side. Carefully remove the paper. If you like, brush any excess powder off the crust. (Save the remaining sugar in airtight containers for another use, such as dusting on baked goods.) It's best to apply the sugar within 2 hours of serving. The pie is best eaten the day it's made; store leftovers in the refrigerator.
