While this spicy cranberry sauce is simmering, the wonderful fragrance of the spices brings back happy memories of when my mother made it for the holidays. My husband and three sons are glad I'm carrying on her tradition! -Allison Thompson, Lansing Michigan

Number Of Ingredients 8

1 package (12 ounces) fresh or frozen cranberries
1-3/4 cups sugar
1/2 cup water
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/8 teaspoon salt
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, until the berries pop and mixture is thickened, about 30 minutes. Cool. Transfer to a serving bowl; cover and refrigerate until chilled.

1 cup cabernet sauvignon wine
1 (12 ounce) package fresh cranberries
2 teaspoons grated tangerines or 2 teaspoons orange rind
1 (3 inch) cinnamon sticks

Steps:

  • Bring sugar and wine to a boil in a medium saucepan over medium-high heat.
  • Add remaining ingredients, and return to a boil, stirring constantly.
  • Reduce heat, and simmer, partially covered, 10 to 15 minutes or until cranberry skins pop.
  • Remove and discard cinnamon stick.
  • Cool slightly; serve warm, or chill 2 hours, if desired.

I needed to fill some holiday cookies with jam and since raspberries and apricots weren't in season, I opted to use cranberries. This jam is lightly sweetened, fragrant, and has a beautiful color that complemented the cookies perfectly!

1 (12 ounce) bag fresh cranberries
¾ cup white sugar
½ cup turbinado sugar
¼ cup water
1 orange, zested
1 teaspoon ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon ground allspice
1 dash ground black pepper

Steps:

  • Combine cranberries, white sugar, turbinado sugar, water, orange zest, cinnamon, ginger, cloves, allspice, and pepper in a large pot over medium heat. Simmer, stirring frequently, until sugar dissolves and cranberries pop, 10 to 12 minutes.
  • Blend cranberry jam into desired consistency using an immersion blender.
  • Pour jam into a glass pint jar; cool until thickened and set, about 1 hour. Seal jar and refrigerate.

1 (3000-ml) box Cabernet Sauvignon
1 cup sugar, plus more to taste
15 whole cloves
2 small or 1 large cinnamon sticks
1 navel orange

Steps:

  • In a large non-reactive saucepan, combine Cabernet, 1 cup sugar, cloves, and cinnamon sticks. Cut the orange in half and juice both halves into the bowl; then add the orange halves to the pan. Heat over medium-low until steaming but not boiling. Let cook over low heat for about 30 minutes to blend flavors.
  • Season with more sugar to taste, if desired. Ladle from pot into mugs, making sure not to serve any stray cloves or pieces of orange.

1 cup Cabernet Sauvignon
6 ounces dried calimyrna figs, stems trimmed and figs coarsely chopped (1 cup)
1 (12-ounce) bag fresh or frozen cranberries
3/4 cup sugar
3 (3- by 1/2-inch) strips orange zest

Steps:

  • Bring wine to a boil with figs in a small saucepan, then remove from heat and steep figs, covered, until tender, about 30 minutes. Strain mixture through a sieve into a medium heavy saucepan and reserve figs in a small bowl.
  • Add cranberries, sugar, and zest to wine and bring to a simmer over medium heat, stirring until sugar has dissolved. Adjust heat and continue to simmer, uncovered, stirring occasionally, until cranberries burst and mixture is thickened slightly, 10 to 15 minutes. Remove from heat and discard orange zest strips, then stir in figs. Let cool completely.

1 cup cabernet sauvignon wine or 1 cup other dry red wine
1 orange (seedless)
2 whole cloves
1 (12 ounce) package cranberries, picked over for stems (fresh or frozen)
3 inches cinnamon sticks

Steps:

  • Combine sugar and win in a medium saucepan. Bring to a boil over medium heat, stirring to dissolve sugar. Cut orange in half and stud each half with a clove. Squeeze juice from orange into the saucepan; then add the orange halves. Stir in cranberries and cinnamon stick and bring to a boil over medium-high heat. Reduce heat to medium-low and boil gently until cranberries just begin to burst, 5 to 10 minutes.
  • Remove pan from heat and let cool to room temperature. Discard orange halves, cloves, cinnamon stick (and any orange seeds). Transfer to an airtight container and refrigerate until cold. Keeps indefinitely.

  • In a sauce pan, add 2 oz. Cabernet wine, 2 oz. orange juice, 1 tsp. fresh lemon juice, 4 oz. white granulated sugar, zest from one small orange (about a teaspoon), 2 cinnamon sticks, a pinch of nutmeg and the bundle of cloves. Bring to a simmer over MEDIUM heat. About 3 minutes.
  • Add 6 oz. cranberries (fresh or frozen) and allow to simmer for 10 minutes on LOW, stirring occasionally.
  • Remove from heat and pour everything, including cinnamon sticks and clove bundle, into a bowl or container to refrigerate for 1 hour. Don’t worry if it appears a little runny. It will congeal as it cools. Remove cinnamon sticks and cloves after 1 hour.
