MANGO-CHILE GRANITA

This frozen treat is loaded with delicious mango and a refreshing punch of lime. A dusting of ancho chile powder before serving provides a nice warming kick.

Number Of Ingredients 6

3/4 cup sugar
2 cups mango nectar
1 ripe mango, peeled and cubed
Juice of 2 limes
Kosher salt
Ancho chile powder, for topping

Steps:

  • Combine the sugar and 1/2 cup water in a medium saucepan and bring to a simmer over medium-high heat. Cook, stirring occasionally, until the sugar dissolves, about 1 minute; transfer to a blender and let cool completely.
  • Add the mango nectar, cubed mango, lime juice and a pinch of salt to the blender and puree until smooth. Press through a fine-mesh sieve into an 8-inch-square stainless-steel or glass baking dish.
  • Freeze until ice crystals begin forming around the edges, about 45 minutes. Use a fork to scrape the crystals toward the center of the pan, then continue freezing, scraping every 30 minutes, until frozen, about 4 hours. Serve topped with chile powder.

GINGER MARGARITA

3/4 cup sugar
1 1/2 cups water
1 large hand ginger, peeled and cut into 1/2-inch coins/chunks
Bar sugar
Freshly grated nutmeg
2 ounces good quality tequila or reposado (recommended: Cabo Wabo)
1 lime, juiced, plus lime wedges for garnish

Steps:

  • Bring sugar and water up to a light simmer and cook until all of the sugar is dissolved. Add ginger and steep for 30 minutes. Pour ginger-simple syrup into blender and puree. Strain out pulp and store in a tightly sealed jar or bottle. Will keep for several weeks in the refrigerator.
  • Pour some bar sugar onto small plate and grate a pinch of nutmeg on top, mix well.
  • Add tequila, lime juice, 5 ounces ginger-simple syrup and ice to cocktail shaker and give it a good shake. Run lime wedge around rim of glass and dip in sugar/nutmeg mixture, add ice and pour in contents of shaker, grate a little nutmeg on top and serve with a wedge of lime.

16 ounces fresh orange juice
Juice of 6 limes
2 peeled and chopped mangoes
1/4 cup Cointreau
Zest of 2 oranges

Steps:

  • In a food processor, add everything and puree smooth. Place in small pan and freeze over night. Use a fork to scrape granita and serve in tuile bowl. Garnish with fresh mango slices and orange zest.

GINGER MANGO LASSI

2 mangos
1-inch piece of ginger
2 (8-ounce) containers vanilla yogurt
1 handful of ice cubes
2 tablespoons honey

Steps:

  • To remove the flesh of the mango, cut the flesh away from the pit in 2 large pieces. Use a paring knife to cut through the flesh (but not through the peel) in a crisscross grid pattern. Use your thumbs to press against the skin side and pop the mango cubes up. Cut across the bottom, along the peel and add the cubes to the blender.
  • Peel ginger. Grate ginger finely into bowl. Use fingers to squeeze juice out of gratings. Discard juiced gratings.
  • Put ginger and remaining ingredients in the blender and blend until thick and smooth.
  • If you don't have a blender you can still make the drink: Just whisk everything but the ice together in a mixing bowl. Fill glasses with ice and pour the mixture on top.

¾ cup white sugar
3 tablespoons grated fresh ginger
2 lemons, zested
2 limes, zested
5 cups orange juice

Steps:

  • Stir water, sugar, ginger, lemon zest, and lime zest together in a saucepan over medium-high heat until sugar dissolves and mixture is bubbling, 5 to 10 minutes; cool slightly.
  • Stir the ginger mixture an orange juice together in a pitcher; pour into a 9x13-inch baking dish.
  • Place dish in the freezer; scrape and stir orange juice mixture with a fork once every hour until granita is evenly frozen and crystallized, about 6 hours.

1 vanilla pod , split (optional)
140g caster sugar
2 large, ripe mangoes
300g strawberries , sliced to serve

Steps:

  • Tip the vanilla into a bowl with the sugar. Bring a kettle of water to the boil and pour 250ml over the sugar. Stir until completely dissolved, then leave to cool. Meanwhile, peel the mangoes and cut away all the flesh, then blitz in a food processor until you have a smooth purée. Stir the purée into the syrup and fish out the vanilla pod. Freeze the purée as before or churn in an ice-cream machine to make a sorbet. Serve with sliced strawberries.
