3/4 cup cold strong coffee
3/4 cup shortening
1 1/2 cups dark brown sugar
1/4 cup molasses
3 large eggs
2 1/2 cups cake flour
3 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground ginger
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg

Steps:

  • Make the coffee; use dark roast.
  • Position oven rack in the center of oven; preheat to 350°. Prepare 12-cup Bundt pan as follows: Prepare Bundt pan using the following method-make a paste from 1 tablespoon melted butter and 1 tablespoon flour ; apply it with a pastry brush, you can thoroughly coat the surface of the pan, including all the nooks and crannies (or use your preferred method to prepare Bundt pan for baking a cake).
  • Cream the shortening using a mixer on medium speed; add in the brown sugar gradually; increase mixer speed to med-high and beat until fluffy, about 3 minutes.
  • Decrease mixer speed to low; add in the molasses, then add in the eggs one at a time, beating well after each addition.
  • In a separate bowl, whisk the flour, baking powder, baking soda, salt, and spices together.
  • Add 1/3 of the flour mixture to the cream mixture, beat, then add 1/4 cup coffee and beat on medium until blended; repeat two more times.
  • Pour batter into the pan, smooth off top with spatula.
  • Bake for 45 minutes or until the cake tests done.
  • Cool for 10-15 minutes in the pan, unmold onto a cake rack, and cool completely.
  • Sprinkle with coarse sugar or dust with powdered sugar.

1 2/3 cups walnuts, coarsely chopped
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon pumpkin pie spice

Steps:

  • Heat oven to 350 degrees F.
  • Coat an 8-inch baking pan with nonstick cooking spray.
  • Topping: In a medium bowl stir together flour, sugars, pumpkin pie spice and salt. With a pastry cutter,cut butter into the mixture. Stir in walnuts. Refrigerate.
  • Cake: In a large bowl, whisk together the flour, baking powder, baking soda, pumpking pie spice and salt. Set aside.
  • In another large bowl, beat butter and sugars on medium speed until creamy and blended, about 3 minutes. Beat in eggs, one at a time. Add vanilla and beat until smooth.
  • On low speed, beat in the flour mixture in three additions, alternating with buttermilk. Beat for 2 minutes.
  • Spoon half of the batter into the prepared pan. Sprinkle half of the topping over the batter. Spoon remaining batter over topping. Sprinkle remaining topping over top of cake.
  • Bake at 350 degrees F for 50 to 60 minutes or until toothpick inserted in center of cake comes out clean. Cool completely on wire rack. Loosen edges with a knife or small spatula. Cut into 12 equal pieces.
  • In a small bowl, mix together confectioners' sugar and just enough milk to get a good drizzling consistency. Drizzle over cake squares and allow to set before serving.

3/4 cup all-purpose flour
2/3 cup packed light brown sugar
1 teaspoon apple pie spice
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the pan
2 cups all-purpose flour (see Cook's Note)
1 teaspoon apple pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1 cup sour cream
2/3 cup apple butter

Steps:

  • For the crumb topping: Put the flour, brown sugar, apple pie spice and salt in a small bowl and stir to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • For the cake: Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, apple pie spice, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream in 2 additions, beginning and ending with the flour. Beat until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the apple butter on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert back onto a rack to cool completely.

Butter flavored cooking spray
1 (16-ounce) box pound cake mix (recommended: Betty Crocker)
3/4 cup cinnamon applesauce
1/3 cup pasteurized packaged egg whites
1 teaspoon pumpkin pie spice
1/2 teaspoon almond extract
1/4 cup baking mix (recommended: Bisquick)
2 tablespoons brown sugar
3/4 cup chopped walnuts
1 (.74-ounce) packet spiced cider drink mix (recommended: Alpine)
1 tablespoon butter, melted
Whipped topping flavored with vanilla extract, for serving

Steps:

  • Lightly spray a 6-cup souffle dish with butter-flavored cooking spray and set aside. Make a foil ring 1/2-inch thick for souffle dish to sit on and place inside the bottom of a 5-quart slow cooker.
  • In a large bowl, combine cake mix, applesauce, eggs, pumpkin pie spice, and almond extract. Using an electric mixer beat on low speed for 30 seconds. Scrape down sides of bowl and beat for 1 minute on medium speed. Pour into souffle dish and set aside.
  • In a medium bowl, stir together baking mix, brown sugar, walnuts, cider mix, and melted butter. Sprinkle over cake batter. Use a butter knife to cut through cake and topping several times to swirl.
  • Place souffle dish on top of foil ring in slow cooker. Place 5 folded paper towels over slow cooker bowl and secure with lid. Cook on LOW setting for 4 to 6 hours or until tester comes out clean. Do not lift lid to check cake for the first 3 hours.
  • Cool in souffle dish on wire rack for 15 to 20 minutes before removing and slicing. Serve with whipped topping.

10 ounces apple pie filling (1/2 can)
1/3 cup packed light brown sugar
1 egg
1 tablespoon soft butter

3 tablespoons cold butter
1/4 cup packed light brown sugar
2 tablespoons sugar
1/2 cup Bisquick baking mix
1 teaspoon apple pie spice or 1 teaspoon cinnamon
1/3 cup oatmeal
1 cup powdered sugar
1 tablespoon half-and-half cream
1/2 teaspoon vanilla

Steps:

  • Preheat the oven to 350°F.
  • Grease an 8-inch pan.
  • Combine the ingredients from cool whip to the spices.
  • Pulse in a food processor for 10 to 15 times (do not over process).
  • In a large bowl, mix with the 2 1/2 cups Bisquick mix.
  • Stir gently about 20 strokes until well mixed, moist, yet still lumpy.
  • Spread into pan.
  • Mix the crumb ingredients cold butter to 1/3 cup oatmeal until well mixed and crumbly.
  • Put on the batter in pan.
  • Bake for 30-35 minutes or until toothpick comes out clean.
  • Mix the icing ingredients and add half & half until the icing is not too fluid.
  • Drizzle over the warm, not hot cake.

½ teaspoon butter, or as needed
2 cups all-purpose flour
¾ cup brown sugar
½ cup vegetable oil
½ cup white sugar
4 teaspoons ground cinnamon

¾ teaspoon baking soda
¾ cup buttermilk
1 egg
2 apples - peeled, cored, and cut into 1/2-inch chunks

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter the inside of an 8-inch glass baking pan.
  • Mix flour, brown sugar, oil, white sugar, 2 teaspoons cinnamon, salt, and ginger together in a large bowl. Transfer 1/2 cup of the mixture into a second bowl for the crumble topping; stir in remaining 2 teaspoons cinnamon.

1/4 cup granulated sugar

  • Beat the eggs with the milk.
  • Put the honey and butter into the microwave for about 30 seconds. Let it cool for a few seconds and then add it to the egg mixture along with the almond and vanilla extracts.
  • Pour in half of the wet ingredients into the dry. Beat with an electric hand mixture until the batter starts to look dry. Add the rest of the wet mixture. Beat until everything is well mixed.
  • Fold in the almonds and raisins. Bake for 30 minutes or until a toothpick comes out clean.
  • While cake is cooling, mix together the confectioners sugar, milk and cinnamon. Pour over the cooled cake.
