SPICED CHOCOLATE EGGNOG



Spiced Chocolate Eggnog image

Inspired by traditional Mexican flavors, this eggnog pairs bittersweet chocolate with just a pinch of spicy chile. The drink can be made a day in advance. Use the time right before serving the eggnog to make hot churros for a unique garnish.

2 quarts whole milk, plus more if needed
1 3/4 cups sugar
1/2 teaspoon coarse salt
1 vanilla bean, seeds scraped and pod reserved
4 cinnamon sticks
12 egg yolks
5 ounces bittersweet chocolate, melted
3 ounces milk chocolate, melted
2 cups heavy cream
1 1/4 cups brandy (optional)
Whole nutmeg, for garnish
Cayenne pepper, for sprinkling
Churros

Steps:

  • Heat 2 quarts milk, the sugar, salt, vanilla seeds and pod, and cinnamon sticks in a large pot over medium-high heat, stirring until sugar dissolves and mixture is heated through. Remove from heat. Let stand for 30 minutes.
  • Prepare an ice-water bath. Whisk yolks in a medium bowl until pale, about 2 minutes. Whisk 1 cup of milk mixture into yolks in a slow, steady stream. Whisk yolk mixture into remaining milk mixture. Cook over medium-high heat, stirring constantly, until mixture registers 180 degrees on an instant-read thermometer, about 6 minutes. (Do not boil.)
  • Remove pot from heat, add melted bittersweet and milk chocolates, and stir until incorporated. Discard vanilla pod and cinnamon sticks. Pour mixture into a large bowl set in ice-water bath, and let cool, stirring often.
  • Whisk cream until soft peaks form. Pour cooled eggnog into a large serving bowl, and add brandy if using. (Add more milk to eggnog if necessary to reach desired consistency.) Top with whipped cream. Grate nutmeg over top, and sprinkle sparingly with cayenne. Serve immediately with churros on the side if desired.

¾ teaspoon ground cinnamon, divided
⅛ teaspoon ground nutmeg
1 pinch ground allspice
3 eggs, separated
2 cups milk
1 cup half-and-half

Steps:

  • Combine sugar, 1/2 teaspoon cinnamon, nutmeg, and allspice in a bowl.
  • Whip egg whites with an electric mixer on high speed until soft peaks form. Reduce speed to medium and beat, gradually adding 1/2 of sugar mixture, until stiff peaks form.
  • Beat egg yolks in a separate bowl until thick and lemon colored. Mix remaining sugar mixture into the yolks. Fold yolk mixture into the egg whites. Add milk and half-and-half; combine gently. Garnish with remaining cinnamon.

I searched through the DB and didn't find another like this so I thought I would add it. I got the recipe somewhere online and now I don't remember where. I have made it quite a few times and every time it turns out so delicious! However for those that know more about making cheesecake I seem to always get the stupid crack in the center so if you know any tricks to keeping that from happening please post them. It is a very moist cheesecake so moisture doesn't seem to be the issue. There is a bit of work involved to making this but it is simpler than it looks and oh so worth the effort!

1 cup graham cracker crumbs (about 8 crushed whole crackers)
1 teaspoon sugar
1 1/2 teaspoons ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 cup butter, melted
4 (8 ounce) packages cream cheese, at room temp
3/4 cup sugar
1/4 cup flour
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 pinch ground cloves
1 egg
1 3/4 cups prepared eggnog
1 teaspoon vanilla extract
8 ounces sour cream
6 ounces white baking chocolate
1 pinch ground nutmeg

Steps:

  • Preheat oven to 350 degrees F.
  • For crust combine crumbs, sugar, ginger, nutmeg, cinnamon, and butter in small bowl until well blended. Press over bottom of 9-inch springform pan.
  • Bake 10 minutes, transfer pan to wire rack to cool, leave oven on.
  • For filling, beat cream cheese in medium bowl until smooth.
  • In small bowl mix sugar, flour, nutmeg, cinnamon, and cloves.
  • Add cream cheese, beat until smooth.
  • Beat in egg, then add eggnog slowly, beating continuously, finally beat in vanilla.
  • Pour onto crust in assembled pan. Tap lightly to release air bubbles.
  • Bake in preheated oven 1 hour.
  • Remove, spread sour cream over top and bake for 5 more minutes. Let cool on rack until cake is cool to touch, refrigerate.
  • For curls, line loaf pan with foil, leaving overhangs.
  • Melt chocolate in top of double boiler over barely simmering, not boiling water, stirring until smooth. Stir in nutmeg, then pour into pan spreading evenly.
  • Refrigerate until firm.
  • Lift Chocolate bar out of pan. Then using veggie peeler scrape into loose curls and arrange on top of cake!
  • ENJOY!

Steps:

  • Preheat oven to 375°. In a small bowl, mix flour, walnuts, brown sugar and cocoa; stir in butter. Lightly coat hands with cooking spray; press mixture into an ungreased 9-in. pie plate. Bake 8-10 minutes or until set. Cool completely on a wire rack., For filling, in a small heavy saucepan, mix sugar and cornstarch. Whisk in eggnog.
