This lucious dessert invokes warm memories of growing up in a home where there might not have been much money, but love was in great abundance. Suggested accompaniments include, ice cream, whipped cream, hot or cold custard, sweetnened ricotta cheese and spiced mascarpone. Yummm...

850 g granny smith apples
30 g butter
1/3 cup raisins
2 tablespoons lemon juice
4 whole cloves
1 cinnamon stick
1/8 teaspoon nutmeg
2/3 cup sugar
1/2 cup water
2 eggs
1 finely grated lemon, zest of
1/4 cup self raising flour
1/4 cup cornflour (cornstarch)
sifted icing sugar, to serve

Steps:

  • Preheat oven to 350*F (180*C).
  • Peel core, and slice the apples into eights (slicing through the middle ways, so that the slices stay in rounds).
  • Melt the butter in a large frying pan, add the apples slices and cook, stirring occasionally, over high heat for 7 minutes, or until browned.
  • Add the raisins, lemon juice, cloves, cinnamon, nutmeg, half the sugar and 1/2 cup water.
  • Bring to the boil, then lower the heat and simmer for 3 minutes, or until the apples are tender.
  • Remove the cinnamon stick and cloves and spoon the apple mixture into a deep 2 litre round ovenproof casserole.
  • To make the sponge topping, beat the eggs, remaining sugar and lemon zest in a small bowl with electric beaters for 7 to 8 minutes, or until the mixture is light and creamy.
  • Sift together the flours and fold into the creamy mixture with a metal spoon.
  • Spoon the sponge topping over the apples and bake for 30 minutes, or until the sponge is well risen and golden.
  • Dust with icing sugar before serving.
  • Best eaten immediately.

2 cups white sugar
2 cups all purpose flour
4 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoon baking soda
2 eggs
1 cup vegetable oil
1/4 cup freshly squeezed orange juice
4 cups Granny Smith apples, peeled, cored and finely chopped (about 4 to 6 apples)
1 cup walnuts, coarsely chopped
1/4 cup guava jam
1 tablespoon freshly squeezed lime juice
5 ounces cream cheese, room temperature

Steps:

  • Preheat oven to 325 degrees. Butter and flour a 10-inch cake pan. Combine dry ingredients and set aside. Whip eggs until frothy, about 3 to 4 minutes then add oil and orange juice and mix thoroughly. Add dry ingredients and beat with whip at low speed until thoroughly combined.
  • Fold in apples and walnuts and pour into prepared cake pan. Bake at 325 degrees for 1 hour or until firm on top. Cover with aluminum foil if top gets too brown. Cool on rack 5 minutes, then invert onto rack and cool completely. Serve with guava cream cheese topping spread over the top.
  • Mash all ingredients in a bowl with a fork until light and fluffy.

4 small-medium apples, peeled, cored and diced (or use canned, see directions)
2 tablespoons butter, melted
1/2 cup brown sugar, packed
1/2 teaspoon cinnamon
1 (3 1/2 ounce) box instant vanilla pudding (or 2 c. pre-made)
Cool Whip (optional)

Steps:

  • If using canned fried apples, omit first four ingredients and skip to step #5. Note: if the sauce in the apples is very runny, use only a couple of tablespoons of it.
  • Preheat oven to 325.
  • In a 9" square baking pan, toss apples with melted butter, brown sugar and cinnamon.
  • Bake for 20-25 minutes, or until apples are tender but not mushy. When apples are done, chill until cool.
  • Meanwhile, prepare instant pudding according to package directions; chill.
  • In a bowl, layer apples in between two layers of pudding. Top with Cool Whip if desired. Refrigerate until ready to serve.

  • Line the bottom of a well-greased loose-bottomed cake tin. (23cm is ideal but use what you have.) Pour in the mixture. Combine the topping ingredients and sprinkle over the cake.
  • Bake for 30-45 minutes until the centre springs back when pressed lightl. Test for doneness with a skewer or a knife.
