Apple Cider with Spiced Rum image

Ahhh...warm apple cider on a cool autumn evening. Makes cold weather almost tolerable.

Number Of Ingredients 7

6 c. Apple Juice
1 tsp. Ground Cinnamon
1/2 tsp. Nutmeg
1 Apple ((we used Honeycrisp))
6 oz. Spiced rum ((we used Cockspur Spiced))
1 Cinnamon stick
Whipped Cream and Caramel Sauce

Steps:

  • Peel and cut the apple in small chunks.
  • Heat the apple juice, cinnamon, nutmeg, and apple chunks over medium heat until spices are blended and apple juice is warm.
  • Pour in the rum and slowly stir until warm.
  • Pour the mixture into mugs.
  • Add a dollop of whipped cream drizzled with caramel sauce if desired, then garnish with a cinnamon stick and a sprinkle of nutmeg.

1 apple
2 teaspoons whole cloves
1 orange, thinly sliced
2 quarts apple cider
1/2 cup light brown sugar
1 teaspoon allspice
Pinch grated nutmeg
1 cup dark rum
Cinnamon sticks, garnish

Steps:

  • Stud the apple with the cloves. In a medium pot, combine the studded apple and remaining ingredients except the rum. Slowly bring to a simmer over low heat. Simmer for 10 minutes. Remove from the heat and add the rum. Discard the apple. Ladle into mugs and garnish each with a cinnamon stick. Serve immediately.

1 cup chilled heavy whipping cream
2 tablespoons (packed) brown sugar
2 tablespoons dark rum
Freshly grated nutmeg
Cider:
12 cups (3 quarts) apple cider
40 whole cloves
10 cinnamon sticks
8 2-inch-long strips orange peel
4 2-inch-long strips lemon peel
2 teaspoons whole allspice
1/2 cup Tuaca
1/4 cup dark rum
Ingredient info: Tuaca is a liqueur with vanilla, brandy, and orange flavors. cream Stir all ingredients in medium bowl. Chill until ready to use, up to 1 day.

  • For cider:
  • Bring first 6 ingredients to boil in heavy large pot, stirring occasionally. Reduce heat to medium and simmer until mixture is reduced to 6 cups, 35 to 40 minutes. Strain cider into medium saucepan. DO AHEAD: Can be made 1 day ahead. Cool, cover, and chill.
  • Return cider to simmer. Remove from heat. Mix in 1/2 cup Tuaca and 1/4 cup dark rum. Divide cider among 8 mugs.
  • Beat cream until peaks form. Spoon whipped cream atop cider and serve.
