Ahhh...warm apple cider on a cool autumn evening. Makes cold weather almost tolerable.

- Peel and cut the apple in small chunks.
- Heat the apple juice, cinnamon, nutmeg, and apple chunks over medium heat until spices are blended and apple juice is warm.
- Pour in the rum and slowly stir until warm.
- Pour the mixture into mugs.
- Add a dollop of whipped cream drizzled with caramel sauce if desired, then garnish with a cinnamon stick and a sprinkle of nutmeg.

- Stud the apple with the cloves. In a medium pot, combine the studded apple and remaining ingredients except the rum. Slowly bring to a simmer over low heat. Simmer for 10 minutes. Remove from the heat and add the rum. Discard the apple. Ladle into mugs and garnish each with a cinnamon stick. Serve immediately.

- For cream:
- Stir all ingredients in medium bowl. Chill until ready to use, up to 1 day.
- For cider:
- Bring first 6 ingredients to boil in heavy large pot, stirring occasionally. Reduce heat to medium and simmer until mixture is reduced to 6 cups, 35 to 40 minutes. Strain cider into medium saucepan. DO AHEAD: Can be made 1 day ahead. Cool, cover, and chill.
- Return cider to simmer. Remove from heat. Mix in 1/2 cup Tuaca and 1/4 cup dark rum. Divide cider among 8 mugs.
- Beat cream until peaks form. Spoon whipped cream atop cider and serve.

- Directions. I poured all of the apple juice into the saucepan and turned the heat on medium to start off the process. Next I sliced the orange and ginger root into thin slices.
- Simmering and Straining. Whisk everything briefly and than allow all of the ingredients to simmer on the stovetop for about twenty minutes. Once the Cider has simmered for about twenty minutes, take the pan and carefully strain the cider through a strainer that is placed over a plastic pitcher.
- Topping It All Off. I took a mug and poured about one ounce of Spiced Rum into it, filled the rest of the mug with hot apple cider and than topped it off with whipped cream and ground cinnamon.
