For the Smoky Mezcal-Whipped Cream: 2 cups heavy (whipping) cream 4 tablespoons confectioners' sugar 4 tablespoons mezcal For the spiced sugar: 2 cups granulated sugar 2 tablespoons ground cinnamon 1 teaspoon ground cloves 1 vanilla bean To finish the pineapple: 1 juicy ripe pineapple, peeled and cut into ½-inch-thick slices (core it or not, your choice) 1/2 cup unsweetened coconut milk (use a Thai or Latino brand) Ground cinnamon or freshly grated nutmeg, for garnish

Steps:

  • Step 1: Make the whipped cream: Place the cream and confectioners' sugar in a metal bowl. Beat to soft peaks with an electric mixer. Add the mezcal and continue beating to firm peaks. Brush each pineapple slice on both sides with coconut milk, then dredge it on both sides in the sugar, shaking off any excess. 1 large pineapple, peeled and cored
2 limes, zested and juiced (zest reserved for whipping cream)
2 tablespoons coconut rum
1 tablespoon dark agave syrup
Pinch kosher salt
1 tablespoon olive oil
1 cup heavy cream
1 tablespoon dark agave syrup
Reserved lime zest
8 to 10 mint leaves
Dark agave syrup, for drizzling

Steps:

  • For the pineapple: Slice the pineapple into 1-inch rounds and place in a large bowl.
  • Mix together the lime juice, coconut rum, agave syrup and salt in a small bowl. Add the marinade to the pineapple and gently toss to coat. Cover and let marinate for at least 20 minutes.
  • When ready, preheat a grill or grill pan over medium heat. Brush the grill with the olive oil and grill the pineapple for about 3 minutes per side; there should be noticeable grill marks, but it should still be firm in texture. Remove to a serving platter.
  • For the whipped cream: Meanwhile, in the bowl of an electric mixer fitted with a whisk attachment, add the cream, agave syrup and the reserved lime zest. Whip until stiff peaks form, 2 to 3 minutes.
  • To serve: Top the grilled pineapple with generous mounds of the whipped cream, scatter over mint leaves and drizzle with agave syrup.

2 cups all-purpose flour
2 tablespoons sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 stick (8 tablespoons) cold butter, cubed
1 cup buttermilk
1 pineapple, sliced 1-inch thick
Vegetable oil
2 teaspoons chopped fresh rosemary
1 tablespoon sugar
Pinch cayenne
1 cup heavy cream
2 tablespoons sugar

Steps:

  • For the biscuits: Preheat the oven to 450 degrees F.
  • In large bowl, combine the flour, sugar, baking powder, salt and butter. Mix by hand or with an electric mixer until the butter is mixed into flour. Slowly pour in buttermilk. Mix until a dough comes together.
  • Drop large spoonfuls of the dough onto a baking sheet; bake for 15 minutes.
  • For the filling: Toss the pineapple in oil to coat. Grill for 2 to 3 minutes on each side. Remove from the grill and cut into dice; transfer to a bowl. Stir in the rosemary, sugar and cayenne. Set aside.
  • For the whipped cream: Whip the cream with the sugar to soft peaks.
  • To assemble: Once the biscuits are baked, let sit for 2 to 3 minutes before slicing in half. Top with the pineapple mixture and serve with whipped cream on the side.
