This is a Mother/Daughter "creation" for using the leftover spiral ham from Christmas day - just add a green veg or salad to complete the meal. Quick, easy & very good - I'll buy another ham just so I can make it again!!

4 large baking potatoes
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons flour
1 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup dry white wine
1 lb cooked ham, sliced
1 large onion, sliced
1 cup shredded monterey jack cheese

Steps:

  • Peel potatoes & slice very thinly.
  • Pat dry with paper towels & set aside.
  • Melt butter in a small heavy saucepan.
  • Remove from heat & whisk in flour.
  • Gradually whisk in milk & seasonings, return to heat and stir constantly until thickened, about 10 minutes.
  • Remove from heat and add the wine.
  • Set aside.
  • Assemble in layers in the bottom of a lightly greased ovenproof casserole dish- 1/2 of the ham, 1/2 of the potatoes, 1/2 the onions, 1/2 the sauce and 1/2 the cheese.
  • Repeat the layers.
  • Cover & bake in a preheated 350°F oven for an hour.
  • Remove cover & continue baking for another 15 minutes.

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir potatoes into ham mixture; transfer to the prepared baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
  • Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
  • Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
  • Pour sauce over ham and potatoes.
  • Sprinkle bread crumbs atop casserole.
  • Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

2 cups cubed peeled potatoes
1 large carrot, sliced
2 celery ribs, chopped
3 cups water
2 cups cubed fully cooked ham
2 tablespoons chopped green pepper
2 teaspoons finely chopped onion
7 tablespoons butter, divided
3 tablespoons all-purpose flour
1-1/2 cups 2% milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese and stir until melted. , Pour over ham mixture. Sprinkle with bread crumbs. Bake until heated through, 25-30 minutes.

1 cup ham, chopped in cubes
1 cup milk
1 (8 ounce) can cream of mushroom soup
1 cup of cubed Velveeta cheese
1 cup frozen mixed vegetables
3 cups cooked egg noodles
2 cups bread stuffing mix (Pepperidge Farms is good)
2 tablespoons of melted margarine

Steps:

  • In a sauce pan combine milk, soup and the cubed cheese.
  • Stir until cheese is melted and thickens a bit.
  • Then fold in the vegetables and the ham.
  • Stir a minute or two for the veggies to soften up.
  • Then fold in the cooked noodles.
  • Next transfer to a put into a 2 quart ovenproof dish.
  • Cover the mixture with stuffing mix to cover the whole dish.
  • Drizzle the melted butter over the stuffing.
  • Bake at 350°F for 20 to 30 minutes.

This is a delicious recipe to use up leftover ham after the Christmas or Easter holidays. The casserole freezes well and can be frozen for up to six weeks. To reheat, thaw first. I have substituted Cheddar cheese when I don't have Edam on hand, and it's still delicious.

1 small head cauliflower, separated into small florets
4 carrots, sliced
4 stalks celery, sliced
3 tablespoons butter
2 onions, chopped
2 cloves garlic, minced
¼ cup all-purpose flour
½ teaspoon dry mustard
½ teaspoon ground black pepper
2 cups chicken stock
1 cup milk
2 pounds fully cooked ham, cubed
1 cup whole wheat cracker crumbs
1 cup shredded Edam cheese
½ cup sliced almonds
¼ cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring a large pot of salted water to a boil. Add cauliflower, carrots, and celery and cook until tender-crisp, about 7 minutes. Drain and set vegetables aside. Return pot to the stove.
  • Melt butter in the pot over medium heat. Add onion and garlic and cook until onions are softened, about 4 minutes. Stir in flour, mustard, and black pepper. Cook and stir for 1 minute.
  • Gradually stir chicken stock into the pot; bring to a boil. Reduce heat and simmer until thickened, about 2 minutes, stirring frequently. Stir in milk. Add ham, cauliflower, carrots, and celery. Spoon mixture into a shallow 10-cup casserole dish.

I'm showing you how to serve an amazing holiday meal to a crowd using only 1 pound of ham, which is one way to go if the budget is a little tight. Or, if you do end up serving a whole ham, this recipe is perfect for the leftovers.

¼ cup unsalted butter
1 cup diced yellow onion
¼ cup all-purpose flour
2 cups heavy cream
2 cups whole milk
2 teaspoons boneless, skinless chicken breast, cut into 4 portions
½ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
⅛ teaspoon freshly grated nutmeg
¼ teaspoon Worcestershire sauce
2 teaspoons chopped fresh thyme leaves
4 ½ pounds russet potatoes, peeled and sliced 1/4 inch thick
8 ounces grated sharp white Cheddar cheese
1 pound thinly sliced ham

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat butter in a pot over medium heat. Add onions and sauté with a pinch of salt until translucent, about 5 minutes. Add flour and cook, stirring, just to take off that starchy, raw edge, about 2 minutes. Pour in heavy cream and whisk to combine. Whisk in milk. Cook, stirring, over medium-high heat until it just starts to simmer and thicken up. Add 1 teaspoon salt, pepper, and cayenne. Grate in nutmeg.
  • Turn off heat. Stir in Worcestershire and fresh thyme leaves. Reserve until needed.
  • Cover the bottom of a deep 10x15-inch casserole dish with about 25% of the reserved sauce. Add a layer of sliced potatoes, seasoning the tops with some of the remaining salt as desired; ladle over 1/3 of the sauce and sprinkle over 1/3 of the grated Cheddar cheese. Layer in ½ of the sliced ham.
  • Place another layer of sliced potatoes on top and season with salt. Ladle over ½ of the remaining sauce; repeat layering with Cheddar cheese and ham.
  • Place last layer of potatoes on top. Ladle over remaining sauce and spread out with a spatula. Sprinkle over remaining Cheddar cheese.
  • Bake uncovered in the preheated oven until browned, bubbling, and potatoes are very tender, about 1 ½ hours. Let cool for 15 to 20 minutes before serving.
