Time 40m

Yield 4 serving(s)

Number Of Ingredients 12

4 navel oranges
1 small red onion, finely chopped
1/4 cup lime juice
1/4 cup chopped fresh cilantro
1 tablespoon minced chipotle pepper
1 garlic clove, minced
salt & freshly ground black pepper
1 tablespoon coriander seed, crushed
1 tablespoon cumin seed
1 1/2 teaspoons black peppercorns
1 teaspoon kosher salt
1 lb salmon fillet, skin removed, cut into 4 portions

Steps:

  • To make salsa:
  • With a sharp knife, remove skin and white pith from oranges and discard. Working over a medium bowl to catch the juice, cut the orange segments from their surrounding membrane, letting the segments fall into the bowl. Add onion, lime juice, cilantro, chipotle peppers and garlic. Stir to combine. Season with salt and pepper.
  • To make salmon:
  • Heat a small skillet over medium heat. Add coriander and cumin; toast, stirring constantly, until aromatic, 2 to 3 minutes. Let cool and transfer to a spice mill or mortar and pestle. Add peppercorns to the mill and coarsely grind all the spices. Stir in salt.
  • Preheat grill or broiler.
  • Coat salmon with the spice mixture. Grill or broil on a lightly oiled rack until the fish is opaque in the center, about 5 minutes per side. Serve with the salsa.

SPICE-CRUSTED SALMON WITH GINGER-CILANTRO YOGURT SAUCE

Spice-Crusted Salmon With Ginger-Cilantro Yogurt Sauce image

DH, myself, and my aunt had this really tasty salmon recipe for dinner last night. It is from Bon Appetit. We all enjoyed it very much and will definitely have it again. We used 2% Greek yogurt for the yogurt sauce, which I recommend. I posted the recipe as I found it in Bon Appetit, however, DH had to cook the fish longer than 3 mins on each side. Then, because he was afraid of burning the outside of the fish, he finished it in the oven until it was not translucent. He said he basically browned the fish, then finished in the oven.

1 teaspoon paprika
1 teaspoon coriander
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/4 cup cilantro, chopped (optional)
1 cup brown rice
1/4 cup walnuts, coarsely chopped
1 tablespoon olive oil

ROAST SALMON WITH LIME SALSA

Roast Salmon With Lime Salsa image

The flavors of this dish merry in pure sunshine! This is how Salmon should taste and Chef Grace Parisi, known for her easy and fabulous sauces, really out did herself this time. Salmon generally pairs well with red; here the tangy lime and sweet red onion salsa tune the choice to a bright fruity Burgundy or Pinot Noir. Two excellent choices are the 1998 Louis Jadot Chorey-lès-Beaune from France and the 1998 Coldstream Hills Yarra Valley Pinot Noir from Australia.
