Simple Spelt Waffles image

These simple spelt waffles are light, airy and crisp. The perfect platform for pure maple syrup. Plus the spelt offers a wondrously nutty essence.

2 1/4 cups spelt flour
1 tablespoon baking powder
1/4 teaspoon salt
2 large eggs
1 cup milk ((any variety))
3/4 cup seltzer water
1/4 cup almond oil

Steps:

  • Preheat your waffle iron until it's scorching hot. Mix the dry ingredients in a large bowl. Then whisk in all the wet ingredients until smooth.
  • Scoop the batter onto the waffle iron. Fill until close to the edges, but not all the way to the edges. Close and cook for 2-5 minutes, then repeat. *Try adding chopped almonds or pecans to the batter.

They don't miss the handful of white sugar; and they don't miss the additional 1/4 cup of oil that I took out! So you can eat your waffles on Saturday morning, without an ounce of guilt, and still have dessert Saturday night!

2 1/4 cups spelt flour
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
3/4 cup seltzer water

Steps:

  • Preheat your waffle iron.
  • Mix the dry ingredients on a large bowl. Then whisk in all the wet ingredient-until smooth.
  • Scoop the batter onto the waffle iron and close. Cook for 2-5 minutes, then repeat.
  • Make 12- 4 inch waffles.

1 teaspoon vanilla extract
1 cup buttermilk
1/4 cup unsalted butter (1/2 stick), melted and cooled slightly
1 cup whole grain spelt flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 tablespoon granulated sugar
1/4 teaspoon salt
1 heaping pinch ground cinnamon (optional)

Steps:

  • Preheat Belgian waffle iron.
  • In a medium bowl, whisk together the egg yolks, vanilla, buttermilk, and melted butter until they're well combined.
  • In a separate bowl, combine the flour, baking powder, baking soda, sugar, salt, and cinnamon.
  • Slowly stir the dry ingredients into the buttermilk mixture.
  • Add egg whites to the bowl of a stand mixer and whip with the whisk attachment until soft peaks form, being careful not to over-mix. Gently fold egg whites into the batter.
  • Spoon about one-fifth of the batter onto the hot iron (or whatever quantity is recommended according to the manufacturer's instructions), close, and cook until golden brown. Repeat with remaining batter and serve with maple syrup, or your favorite toppings.

2 eggs (or vegan flax eggs)
1.5 cup spelt flour
1/2 cup all purpose flour
1 3/4 cup milk (low-fat or dairy free)
1/2 cup applesauce (unsweetened)
4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract

Steps:

  • Preheat waffle maker
  • In a small bowl, beat eggs.
  • Add remaining wet ingredients and mix.
  • In a medium bowl, mix all dry ingredients.
  • Pour wet ingredients into dry ingredients and mix until there are no longer any lumps in the batter.
  • Spray waffle maker iron with oil. Cook batter in batches. Waffles will be crispy and release easily from the waffle iron when done.

2 cups milk
1/4 cup coconut oil, melted
1 cup maple syrup

Steps:

  • Combine all the dry ingredients.

  • Pour about 1/3 cup onto hot waffle iron and cook to desired brownness.
