Steps:
- Preheat your waffle iron until it's scorching hot. Mix the dry ingredients in a large bowl. Then whisk in all the wet ingredients until smooth.
- Scoop the batter onto the waffle iron. Fill until close to the edges, but not all the way to the edges. Close and cook for 2-5 minutes, then repeat. *Try adding chopped almonds or pecans to the batter.

These spelt waffles are divine! They are light, airy and crisp. The perfect platform for pure maple syrup. Plus the spelt offers a wondrously nutty essence, that you just don't get with plain old flour. The beauty is, these are my families favorite waffles. They don't miss the white-processed flour. They don't miss the handful of white sugar; and they don't miss the additional 1/4 cup of oil that I took out! So you can eat your waffles on Saturday morning, without an ounce of guilt, and still have dessert Saturday night!

- Preheat your waffle iron.
- Mix the dry ingredients on a large bowl. Then whisk in all the wet ingredient-until smooth.
- Scoop the batter onto the waffle iron and close. Cook for 2-5 minutes, then repeat.
- Make 12- 4 inch waffles.
SPELT BELGIAN WAFFLES
Made with whole grain spelt flour, these Belgian waffles are crisp on the outside, fluffy on the inside, and a bit on the healthier side.

- Preheat Belgian waffle iron.
- In a medium bowl, whisk together the egg yolks, vanilla, buttermilk, and melted butter until they're well combined.
- In a separate bowl, combine the flour, baking powder, baking soda, sugar, salt, and cinnamon.
- Slowly stir the dry ingredients into the buttermilk mixture.
- Add egg whites to the bowl of a stand mixer and whip with the whisk attachment until soft peaks form, being careful not to over-mix. Gently fold egg whites into the batter.
- Spoon about one-fifth of the batter onto the hot iron (or whatever quantity is recommended according to the manufacturer's instructions), close, and cook until golden brown. Repeat with remaining batter and serve with maple syrup, or your favorite toppings.

SPELT WAFFLES
Steps:
- Preheat waffle maker
- In a small bowl, beat eggs.
- Add remaining wet ingredients and mix.
- In a medium bowl, mix all dry ingredients.
- Pour wet ingredients into dry ingredients and mix until there are no longer any lumps in the batter.
- Spray waffle maker iron with oil. Cook batter in batches. Waffles will be crispy and release easily from the waffle iron when done.

GINGERBREAD SPELT WAFFLES
This is a recipe that was invented as a result of my husband making waffles out of a cookie mix and now it is our favorite waffle recipe! Whole Wheat Flour can be substituted for the spelt flour and brown sugar for the fructose if desired.

- Combine all the dry ingredients.
- Whisk together Egg, Milk, and melted Coconut Oil.
- Add wet ingredients to dry ingredients and combine well but do not over mix.
- Pour about 1/3 cup onto hot waffle iron and cook to desired brownness.
- Enjoy with maple syrup poured on top.
