SPEEDY SPINACH SALAD
I created this recipe to make the most of the fresh spinach from our garden. I like using crushed crackers in place of croutons, but our can also top this salad with whatever fresh vegetables you have on hand.-Tina Lust, Nevada, Ohio

EASY AND AWESOME SPINACH SALAD
This is a very easy spinach salad to make. The dressing has some unusual ingredients but is very delicious. I never have leftovers at potlucks when I take this salad.

Steps:
- Place the bacon into a skillet over medium heat, and cook until browned and crisp, turning often, about 10 minutes. Transfer the bacon to paper towels to absorb excess grease. Crumble the bacon when cool.
- Place the spinach into a large salad bowl, and sprinkle with the bacon, hard-cooked eggs, and onion. Gently toss the salad.
- In a bowl, whisk together the sugar, ketchup, vegetable oil, vinegar, and Worcestershire sauce until the sugar has dissolved. Pour the dressing over the salad, and toss thoroughly to combine all ingredients.

- Cubed skim-milk mozzarella cheese can be used instead of crumbled Feta cheese.
- Rice vinegar, cider vinegar or balsamic vinegar can be used instead of lemon juice.
- Trim, wash and dry spinach.
- Tear into bite-sized pieces to make about 10 cups, lightly packed.
- Place in salad bowl.
- Add alfalfa sprouts, cheese and sunflower seeds.
- In small measuring cup, bowl or jar with screw top, combine oil, lemon juice, water, garlic, mustard, salt and pepper.
- MIx well.

Absolutely delicious. Rivals any salad in A1 restaurants (any restaurant for that matter). Can't get any easier than this. I've also topped this salad off with mandarin orange sections and sweet nuts (optional).

- Saute' the minced onion in the oil until tender and slightly brown.
- Remove from heat and add the brown sugar.
- Mix together well.
- Pour dressing over the baby spinach and toss to coat. It may look like there's not enough dressing (it's plenty) just keep tossing and tossing until spinach is completely coated.
