SNOW PEA, SCALLION AND RADISH SALAD



Snow Pea, Scallion and Radish Salad image

Number Of Ingredients 5

2 cups (about 8-ounces) snow peas, trimmed and rinsed
3 scallions (green and white portions), thinly sliced
4 radishes, trimmed and cut into julienne slices (about 1/2 cup)
1/4 cup seasoned rice wine vinegar
1 tablespoon walnut oil

Steps:

  • Place snow peas in a bowl and cover with boiling hot water. After 2 minutes, strain and shock in an ice bath. When cool, strain. Cut snow peas on the diagonal into 1/2-inch diamond shapes, discarding end pieces.
  • In a medium-sized bowl, combine snow peas, scallions and radishes. In a separate bowl, whisk together vinegar and oil. Pour over vegetable mixture and serve.

This is a recipe that I found in a Family Circle magazine and tweaked to our tastes. It made a nice side dish to grilled chicken breasts.

1 lb snow peas, strings removed
1 large sweet red pepper, cored, seeded and thinly sliced
1 (8 ounce) can sliced water chestnuts, rinsed and drained
2 large green onions, trimmed and sliced
1 tablespoon light soy sauce
1 tablespoon hoisin sauce
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
1/2 cup fried rice noodles (such as La Choy) or 1/2 cup crisp chow mein noodles
sliced scallion, for garnish if desired (optional)

Steps:

  • Bring a medium-size pot of water to a boil. Add salt to water if desired and add snow peas. Cook for about 2 minutes and drain, then rinse with cold water and drain again.
  • In a medium-sized bowl, combine snow peas, red pepper, water chestnuts and scallions.
  • In a small bowl, whisk soy sauce, hoisin, sesame oil and vinegar. Toss with vegetables.
  • Serve at room temperature or cold. Garnish with noodles and scallions just before serving.

CRISP SNOW PEA SALAD

A simple Japanese dressing turns crunchy snow peas into a refreshing salad. Great with grilled salmon or chicken. Created by Heather Trim for Food and Drink.

1 lb snow peas
1/4 cup very thinly sliced carrot (Matchstick size)
2 tablespoons soy sauce
2 tablespoons lemon juice
1 tablespoon dark sesame oil
2 1/2 teaspoons granulated sugar
1/2 teaspoon wasabi powder
salt
2 teaspoons sesame seeds, preferably toasted

Steps:

  • Snip ends and remove string from snow peas. Fill a large bowl full of ice water.
  • Bring a large saucepan of salted water to a boil, and add snow peas and carrots.
  • Cook just until snow peas turn bright green, about 15 seconds, drain and plunge into cold water. Drain well and pat dry.
  • Cut snow peas diagonally into ½-inch (1-cm) wide pieces. Place in a bowl along with carrots.
  • To prepare dressing, whisk soy with lemon juice, sesame oil, sugar and wasabi powder, making sure sugar and wasabi powder are dissolved.
  • Stir with snow peas and carrots. Taste and add salt if needed. Sprinkle with sesame seeds.

This recipe I received from one of my first chinese themed cooking classes over 20 years ago. It is a pretty colorful salad that packs a nice crunch to it.

14 ounces frozen snow peas, thawed and drained
1/2 cup water chestnut, sliced
6 radishes, sliced thin
1/4 cup oil
1/4 cup wine vinegar
1/4 cup honey
1/4 teaspoon celery seed

Steps:

  • In a bowl combine snow peas, chestnuts and radishes. Toss well to combine.
  • In a seperate bowl wisk together oil, vinegar, honey, and celery seeds.
  • Pour dressing over vegetables and toss.
  • Chill 1 hour, tossing frequently.
  • Serve.

1 can (8 ounces) sliced water chestnuts, drained
1 cup thinly sliced celery
1/2 cup sliced green onions
1/4 cup mayonnaise
1/4 cup sour cream
1/2 teaspoon seasoned salt, optional

Steps:

  • In a bowl, combine the first four ingredients. In a small bowl, combine mayonnaise, sour cream and seasoned salt if desired; mix well. Add to pea mixture; toss to coat. Chill until serving.

  • Meanwhile, in a medium skillet, heat 1 tablespoon of the olive oil. Add the pancetta and cook over moderate heat until lightly browned and the fat has rendered, about 5 minutes. Spoon off all but 1 tablespoon of the fat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.
  • Drain the snow peas and pat dry. In a medium bowl, whisk the remaining 1/4 cup of olive oil with the lemon juice and lemon oil and season with salt and pepper. Add the snow peas, pancetta, onion and half of the mint and season with salt and pepper; toss well. Garnish with the remaining mint, shave the pecorino on top and serve.
