Steps:
- Slice each egg in half and remove the yolk.
- Place the yolks of the eggs in a bowl. Use a fork to mash the yolks. Add the Greek yogurt, mustard, vinegar, salt, and pepper to the bowl and stir until well combined.
- To dye the egg whites, fill four small bowls with ½ cup of water. Add two to three drops of food coloring to each bowl and stir to combine. Place one egg white in each bowl and allow to soak for at least five minutes. The longer the egg is left in the water, the brighter the color will be.
- When you're satisfied with the color, remove the egg and place it on a plate to dry. Continue adding more egg whites until all the eggs have been dyed
- When the eggs are dry, spoon or pipe the egg yolk mixture back in and serve.

SPECIAL DEVILED EGGS
Southern Living, August 2006. These were so good and looked pretty as well. We doubled the recipe to try and it was gone immediately. We were testing these for a big shindig that we are having this summer. "To hard-cook eggs, place in large pot and cover with cold water. Boil for 1 minute, and remove from heat; cover and let stand 15 minutes."

- Place the eggs in a medium saucepan and fill the pan with enough water so that it covers the eggs by about an inch. Bring to a boil over high heat, then remove the pan from the heat, cover, and let stand for 10 minutes. Place the hard-boiled eggs in a bowl of cold water to cool (I usually just use the saucepan).
- Once cool, tap each egg on the counter to crack the shell, then peel under cold running water. Slice the eggs in half lengthwise, remove the yolks, and place them in a small bowl. Arrange the whites on a serving platter, gently wiping them clean if necessary. Using a spatula, push the egg yolks through a mesh sieve, then mash with the mayonnaise, vinegar, mustard, Worcestershire sauce, salt, black pepper, sugar, cayenne pepper, and herbs. (Passing the yolks through a sieve makes them much easier to mash without getting lumps but if you don’t want to bother, you can mix the yolks with the other filling ingredients - minus the herbs - in a food processor.) Taste and adjust seasoning, if necessary.
- Fill a piping bag fitted with an open-star or large plain tip with the yolk mixture. (Alternatively, fill a sealable plastic bag with the yolk mixture, and use your hand to gently push the mixture to one corner of the bag. Use scissors to snip off the tip of the corner, opening up a 1/4–in [6-mm] hole.) Pipe the yolk mixture evenly into the egg white halves. (For a less fussy preparation, simply spoon the yolk mixture into the egg whites.) Sprinkle with paprika and more fresh herbs.
- Make-Ahead: The whole eggs can be cooked and stored whole in the refrigerator several days ahead of time. The empty egg halves and filling mixture can be refrigerated separately, wrapped tightly in plastic wrap, for up to 2 days. Bring to room temperature and taste and adjust seasoning if necessary before filling. The eggs should be filled as close to serving time as possible.

- Bring water to a low boil at around 200°F (93°C) then carefully place eggs inside. Do not go above the recommended temperature or the eggs could crack when adding to the pot.
- Boil for 30 seconds, place the lid on and reduce heat to low. Cook at a low simmer for 12 minutes.

- Fill a large saucepan with about 3 inches of water. Bring to a slow boil over medium-high heat. Using a ladle or large spoon, gently lower the eggs into the pan, making sure they are in a single layer and not crowded. Bring the water back to a slow boil and cook for 10 minutes.
- Meanwhile, prepare a bowl of ice water. When the eggs are done cooking, carefully transfer them to the ice water and let them cool for 15 minutes.
- Remove the eggs from the ice bath and carefully peel them. Slice in half lengthwise. Scoop the egg yolks into a bowl and arrange the egg whites on a plate or platter.
- Add the mayonnaise, Dijon mustard, vinegar, salt, and pepper to the egg yolks and mash together with the back of a fork until smooth.
TEN SIMPLE DEVILED EGG RECIPES FOR ANY OCCASION.
From raising-happy-chickens.com
- Deviled eggs with bacon: a perfect breakfast recipe. This isn't rocket science. Just take the basic deviled eggs recipe, add cheese and mustard and include them in your favourite breakfast.
- Shrimps and cheese: a starter recipe for a weekend treat. I've found this recipe goes well when we have friends for a meal, served as a canap é with a glass of cold white wine.
- Deviled eggs salad: lovely as a summer evening meal. This recipe adds salad ingredients in the eggs themselves to provide texture and a hot sauce to give some added interest.
- Having a small? Present deviled eggs as a single serving appetizer. I first saw this done at a celebration buffet my brother threw in a very upmarket hotel in London, England.
- Deviled eggs with sweet peppers and olive garnish: an ideal buffet recipe. Again this is a simple topping for the classic recipe. It looks colourful and tastes delicious - the peppers add a bit of sweetness and the olives, a salty tang.
- With prawns (shrimps) and olives: great for a summer beach BBQ. Summer and the beach speak to me of fresh fish. If that speaks to you too, you'll love this simple recipe.
- A healthy lunch recipe that kids love: tuna and chives. I love this recipe because it's tasty, healthy and low in carbohydrates. Kids love it and, like most deviled egg recipes, it's very quick to make.
- Recipes for that special occasion: deviled eggs with caviar. This is a striking-looking dish for a buffet or a starter at a special dinner party. Using caviar gives a sense of decadence - but it's no longer anything like as expensive as it used to be.
- Seasonal variations: Hallowe'en deviled egg ideas. There are lots of different variations on deviled egg recipes which you can use for Hallowe'en. Another of my favourites is to use black olives to make a spider - use a basic recipe and on top of the yolk mix place half an olive for the body and slices for each leg.
- Another Seasonal Twist: Easter deviled egg ideas. Again, this is not about a separate recipe - any of the recipes on this page, or the simple basic recipe itself, would work with this arrangement.
