SWISS CHEESE SPAETZLE
A large portion of Switzerland is highly influenced by German cuisine. Here is a combination of the two! I do recommend that you purchase a spaetzle maker, but you can use a colander or the method listed here. Enjoy!

Steps:
- Fill a large pot of salted water to a boil.
- Meanwhile, heat up a nonstick frying pan over medium heat. Add the onion and bacon. Cook until the onion is slightly golden.
- For the pasta, mix together eggs, flour, milk and nutmeg. The dough will be quite runny.
- Put the pasta dough onto a wooden board, now scrape with a knife little dumplings about the size of a couple of peas and let each dumpling fall into the boiling water. You can also use what is called a Spätzle machine which is like a giant garlic press or push it through a colander.
- Once the dumplings float on the water, take them out as they are done.
- Add the Spätzle dumplings and the cheese to the frying pan and fry for a couple of minutes.
- Season with salt and pepper and sprinkle some parsley on top.

SPATZLE AU FROMAGE (SWISS-STYLE DUMPLINGS WITH CHEESE)

Steps:
- Cook the spatzle according to package directions.
- As the spatzle cooks, melt one tablespoon of the butter in a small skillet and add the mushrooms. Cook, shaking the skillet and stirring, until mushrooms give up their liquid. Cook until liquid evaporates.
- Drain the spatzle and add the remaining two tablespoons of butter, the mushrooms and the cream. At the last minute, add the Parmesan cheese. Toss to blend and serve.
SPATZLE (LITTLE GERMAN NOODLE DUMPLINGS)
These free-form dumplings make an unusual side dish, sprinkled with grated cheese or toasted bread crumbs. They can be made in hot broth instead of water, and some recipes instruct forcing the Spatzle dough directly into a boiling soup to cook, just minutes before the soup is brought to the table. Cooking time includes the boiling of the water. Serving size is hard to determine depending whether it is served as a side dish or main dish.

- Mix eggs, flour, 1/2 teaspoon salt and the pepper.
- Add milk or water (your choice).
- Batter will be thick.
- Heat water or broth of choice till boiling.
- Add 1 teaspoon salt.
- Press batter through colander (preferably one with large holes), a few tablespoons at a time, into boiling water.
- Stir once or twice while boiling to prevent sticking.
- Cook until dumplings rise to surface and are tender, about 5 minutes; drain.
- Pour butter over dumplings.
- NOTES: These free-form dumplings make an unusual side dish, sprinkled with grated cheese or toasted bread crumbs.
- They can be made in hot broth instead of water, and some recipes instruct forcing the Spatzle dough directly into a boiling soup to cook, just minutes before the soup is brought to the table.

GERMAN SPAETZLE DUMPLINGS
Traditional German dumplings. You can also mince a few pieces of bacon in a pan, and heat the cooked spaetzle in the bacon drippings-only omit the butter, if preparing recipe with bacon.

- Mix together flour, salt, white pepper, and nutmeg. Beat eggs well, and add alternately with the milk to the dry ingredients. Mix until smooth.
- Press dough through spaetzle maker, or a large holed sieve or metal grater.
- Drop a few at a time into simmering liquid. Cook 5 to 8 minutes. Drain well.
- Saute cooked spaetzle in butter or margarine. Sprinkle chopped fresh parsley on top, and serve.

AUSTRIAN KAESESPAETZLE (CHEESE SPAETZLE)
When traveling in Austria, you must try this oozy cheesy dish. Or, you can make it yourself. If you have a spaetzle maker, that's great, but if you don't, you can push the dough through a colander with large holes using a spreader. Inspired by a recipe from A Wanderer's Lust.

- Preheat the oven to 250 degrees F. and place a smaller casserole dish (approximately 11 X 7) in the oven to warm before adding the spaetzle. Place a large pot on the stove and add 2 quarts salted water. Bring to a boil. Meanwhile, in a mixing bowl, add the flour eggs, milk and 2 pinches salt and stir vigorously until thoroughly incorporated. The dough should be runny but stable. Set aside and let dough rest.
- Grate cheeses and mix them together. Set aside.
- Pour the olive oil in a large pan and heat. Add the sliced onion, 2 pinches salt and the freshly ground pepper. Cook until the onions are nicely browned and soft. Set aside.
- Place the spaetzle maker or colander over the boiling pot of salted water. Pour in about 1/3 of the dough and move the speatzle maker back and forth, or push the dough through the colander with a spreader. Stir the spaetzle regularly to prevent sticking. Simmer gently until the spaetzle floats on the top of the water. It's done at this point. Remove with a medium size handled sieve, let the water drain out and place into the pre-heated casserole dish. Sprinkle 1/3 of the cheese and the onions on top of the spaetzle and repeat this step two more times until there are three layers of spaetzle, onions and cheese in the casserole dish. Sprinkle the parsley on top and let rest for 15 minutes until the cheese has melted.
- Serve with a green salad and a cold beer.
SWISS SPAETZLE (VERY EASY HOMEMADE NOODLE)

- Heat water in a big pot for cooking.
- Meanwhile mix flour, eggs, milk, water and salt together with a blender.
- Let rest 5 to 10 minutes and mix briefly.
- Add salt to the boiling water.
- Add the dough directly into the boiling water quickly using a holed colander or a spaetzle maker.
- When the spaetzle float, they are ready; it takes about 2 or 3 minutes.
- You can prepare colorful spaetzle if you add to the dough:.
- for red some tomato concentrate;.
- for yellow 1 teaspoon turmeric powder;.
- for green 1/2 cup mashed spinach;.
- for orange 1 cup of mashed cooked squash or carrots; reduce the water to about 1/2 cup.

SWISS DUMPLING CASSEROLE
Spaetzle, are German dumplings and can be used as a side dish in place of potatoes or rice. This dish goes well with applesauce and ham or pork. Buttered Breadrumbs can also be used as the topping to add another texture to the dish. The casserole is also microwave-able. Cover, and warm it until the cheese is melted and strings when served.

Steps:
- Combine eggs and water; stir in flour and salt beating until smooth and shiny.
- The batter should pull from the side of the bowl, and should slowly slide off a spoon.
- Drop dough by ½ teaspoonfuls into large pot of boiling water (or pass through a large holed colander).
- Cook 2 to 3 minutes or until the dumplings pop to the surface.
- Remove the Spaetzle with a slotted spoon and place in a casserole dish.
- Melt the butter and sauté the onions until soft, with browned edges and add the nutmeg.
- Fold in the Swiss cheese and the sautéed onion mixture into the spaetzle.
- Salt and pepper to taste.
- Top with the reserved Swiss cheese.
- Place dish in a pre-heated 350 degree oven for 30 minutes.
