STUFFED PORK TENDERLOIN

I came up with this spinach and mushroom stuffed pork tenderloin one day when looking for something new to do with pork tenderloin. This dish is very easy to make and assemble and is so pretty to serve to family and guests. I like to serve this with a nice salad and roasted potatoes.

1 tablespoon extra-virgin olive oil, or as needed
10 white mushrooms, minced
1 shallot, minced
½ teaspoon dried thyme
½ teaspoon garlic powder
½ teaspoon dried sage
½ teaspoon ground black pepper
¼ teaspoon salt
¼ cup chopped fresh parsley
2 cups fresh spinach
1 teaspoon Dijon mustard
1 (2 pound) pork tenderloin, butterflied and pounded flat
4 slices prosciutto
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 1 teaspoon olive oil in a skillet over medium heat; cook and stir mushrooms, shallot, thyme, garlic powder, sage, black pepper, and salt in the hot oil until liquid has evaporated and mushrooms and shallots are softened, 5 to 10 minutes. Add parsley; cook and stir for 1 minute. Mix in spinach; cook and stir until spinach is wilted, about 5 minutes. Stir in mustard. Remove from heat.
  • Place pork tenderloin on a work surface; lay prosciutto atop tenderloin. Spread mushroom-spinach mixture over prosciutto, leaving 1/2-inch border on all sides. Tightly roll tenderloin around the filling and tie together with kitchen string to keep closed.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat; place rolled tenderloin in the hot oil. Sear until all sides are golden brown, about 10 minutes. Transfer seared tenderloin to a 9x13-inch casserole dish.
  • Bake in the preheated oven until pork is no longer pink in the center, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

9 pounds skin-on, bone-in pork shoulder (picnic) roast
1 lime, halved
10 cloves garlic
2 ½ tablespoons salt
1 ½ tablespoons olive oil, divided
1 tablespoon dried oregano
1 ½ teaspoons ground black pepper
1 ¼ teaspoons adobo seasoning (such as Goya®)
1 teaspoon vinegar
¼ teaspoon sazon seasoning
2 (12 fluid ounce) cans or bottles beer (such as Budweiser®)

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Rub pork shoulder all over with lime.
  • Mash garlic into paste in a mortar and pestle or pilon. Transfer to a bowl; mix in salt, 1 tablespoon oil, oregano, black pepper, adobo seasoning, and vinegar.
  • Lift skin off the pork to 1-inch from the narrow part of the bone. Make 3/4-inch slits all over the pork with a sharp knife. Stuff seasoned garlic paste into the slits. Pull skin back over to cover the pork.
  • Mix remaining 1/2 teaspoon oil and sazon seasoning together in a small bowl. Rub over the skin of the pork.
  • Transfer pork to a large roasting pan. Pour in beer. Cover with aluminum foil, sealing well.
  • Roast in the preheated oven until slightly pink in the center, about 3 hours.
  • Increase oven temperature to 350 degrees F (175 degrees C). Uncover pork and continue roasting until skin is golden brown and crispy, about 2 1/2 hours. Remove from oven and let stand for 10 minutes before carving.

I first encountered piquillo peppers when dining at an asado - a restaurant specializing in roasted meats - outside Sevilla. This asador specialized in 2 things: whole roasted baby lamb and whole roasted baby pig, cooked in giant hearth ovens and served with side dishes of stewed white beans and plates of deep-red piquillo peppers. Catalonioan Romesco sauce is typically served with fish and poultry; I think it really perks up pork. null To toast the almonds, spread them on a baking sheet and roast in a 350 degrees F oven for 10 to 15 minutes, stirring occasionally, until lightly browned and the nuts give off an aroma. null Piquillo peppers, which come cooked and peeled in jars and cans, are found in the specialty section of some markets and delis, or can be purchased online. If you can't find piquillos, substitute jarred or canned fire-roasted red bell peppers or whole pimientos.

2 pork tenderloins (1 to 1 1/4 pounds each)
2 teaspoons olive oil plus 1 tablespoon, for skillet
1/2 cup diced red onion
1 teaspoon minced garlic
1 pound kale, rinsed and drained, stems discarded and leaves cut into thin julienne strips
1 tablespoon sherry vinegar
2 teaspoons honey
1/2 cup water
4 slices serrano ham or prosciutto
1 (8-ounce) jar piquillo peppers, drained
Kosher salt
Freshly ground black pepper
Romesco Sauce, for serving, recipe follows
1/2 cup toasted almonds
1/2 fresh bread crumbs
3 tablespoons olive oil
8 ounces piquillo peppers or fire roasted red bell peppers or pimentos
1 tablespoon capers, drained
Kosher salt
Fresh ground pepper

Steps:

  • To butterfly the tenderloins: make a deep lengthwise cut down the center, being careful not to cut all the way through. Open the tenderloin up like a book. Place the opened tenderloin between 2 pieces of plastic wrap. Pound with a meat mallet until 1/4-inch thick. Repeat with the other tenderloin.
  • To make the stuffing: heat the olive oil in a large skillet over medium heat. Add the onion and cook until lightly golden, about 6 to 8 minutes. Add the garlic and cook 1 minute more. Add the kale, vinegar, honey, and water. Increase the heat to high and continue to cook, stirring constantly, until the kale is wilted, about 2 minutes. Drain and set aside.
  • Lay 2 slices of ham or prosciutto over each butterflied tenderloin. Top with half of the kale stuffing, leaving a 1/4-inch border. Carefully open the peppers and lay a single layer over the kale. Roll up each tenderloin and tie at 2-inch intervals with butcher's twine.
  • Preheat the oven to 450 degrees F.
  • Sprinkle the tenderloins all over with salt and pepper. Heat a heavy ovenproof skillet over medium-high heat and add the olive oil. Place the tenderloins in the pan and brown on all sides for about 3 to 5 minutes. Transfer the pan to the oven and roast. After 15 minutes, begin checking the internal temperature with an instant-read thermometer, checking every 5 minutes, until the pork registers 140 degrees F to 145 degrees F. When done, remove the tenderloins from skillet to a platter, cover loosely with foil, and set aside to rest for 10 minutes. Remove the twine from the tenderloins, cut them into 1/2-inch-thick slices, and serve with
  • In a food processor fitted with the metal blade, grind the almonds until they form a thick paste. Add the bread crumbs, olive oil, peppers, and capers and process until smooth. Taste for salt and pepper. Transfer to a serving bowl.

Juicy Mediterranean Stuffed Pork Tenderloin is stuffed with spinach, feta, and sundried tomatoes with a rich and tangy balsamic rosemary glaze.

1 1/2 lb. pork tenderloin
1 teaspoon olive oil
3 garlic cloves
Pinch red pepper flakes
5 cups packed baby spinach
Pinch salt
1/2 a 7 ounce container sundried tomatoes packed in oil (About 6 tomato pieces), chopped
3 ounces feta cheese
1/4 cup balsamic vinegar
2 Tablespoons olive oil
2 teaspoons dijon mustard
1 Tablespoon rosemary, chopped
1 teaspoon lemon zest
3 cloves garlic, grated
1 heaping teaspoon Kosher salt
1/2 teaspoon black pepper

Steps:

  • Preheat the oven to 425 degrees.
  • Heat the oil in a small skillet over medium heat. Add the pepper flakes and grate the 3 cloves of garlic into the oil. Saute until fragrant, about 30 seconds. Add the spinach and allow it to wilt, about 2-3 minutes. Sprinkle lightly with salt then remove the mixture from heat. Place the spinach mixture in a paper towel and squeeze gently (be careful, it's hot!) to release any excess moisture. Place the spinach in a small bowl and stir in chopped tomatoes and feta cheese. Set aside.
  • Combine balsamic, oil, mustard, rosemary, lemon zest, garlic, salt, and pepper in a small bowl and whisk until smooth. Set aside.
  • Slice the tenderloin down the middle lengthwise, leaving just about a 1/2 inch intact on one side. Open the top half and lay it flat. Spread the spinach mixture evenly down the center of the loin. Fold the top half back in place and use butcher's string to tie it together in 3-4 places. Place the pork loin in a roasting pan then smear all sides with the topping.
  • Roast the tenderloin for 15 minutes, then reduce heat to 375 degrees and roast an additional 20-30 minutes or until a thermometer inserted in the thickest part of the loin reads at least 145 degrees. Allow the pork to rest for 10 minutes before slicing and serving.

3 pounds boneless pork loin
1 cup Italian salad dressing
1 (10 ounce) can large, pitted black olives, drained and chopped
1 (8 ounce) jar Spanish olives, drained and chopped
4 cloves garlic
¼ white onion, chopped
10 pepperoncini peppers, drained and chopped
1 tablespoon olive oil
1 teaspoon balsamic vinegar
cracked black pepper to taste

Steps:

  • Place pork in a shallow dish and coat with Italian dressing. Cover and refrigerate for two hours.
  • For the relish, stir the black olives, green olives, garlic, onion, and peppers together in a bowl; stir in olive oil and balsamic vinegar. Cover and refrigerate until ready to use.
  • When pork has finished marinating, preheat oven to 300 degrees F (150 degrees C).

I got into Spanish dishes awhile back and found this great recipe in my Spanish cookbook. I think this is great for entertaining! This dish has a unique combination of sweet and savory flavors--makes for a delicious pork loin.

4 tablespoons olive oil
1 onion, finely chopped
2 garlic cloves, chopped
1 1/2 cups breadcrumbs
4 dried figs, chopped
8 green olives, pitted and chopped
1/4 cup sliced almonds
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
1 egg yolk
2 1/4 lbs boneless pork loin (preferably with the side flap attached)
salt
pepper
paprika
cooking string (I used unwaxed dental floss and it works fine)

Steps:

  • Preheat oven to 400 degrees F.
  • Saute onion and garlic in olive oil (reserve 1 tbsp OO for later) until soft.
  • Remove onion and garlic from heat -- stir in breadcrumbs, figs, olives, almonds, lemon juice, parsley, and egg yolk (this makes the stuffing).
  • Unroll belly flap from pork loin to open the loin up -- spread half the stuffing over the flat piece, roll it up, tie the joint at intervals with string.
  • Pour remaining oil into small roasting pan -- add the pork loin. Roast for 1 hour 20 minute.
  • Take remaining stuffing mix and form into balls -- add to the pan 15-20 min before end of cooking time.
  • Let the pork loin rest for 10 min after removing from oven -- take string off before slicing.

  • Separately, mix together the spice mix. Roughly chop the garlic then sprinkle over the salt and crush them together with the side of a knife.
