SPINACH LOAF

- Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Butter a 9-by-5-inch nonstick loaf pan. Line the bottom of the pan with parchment paper. Set aside.
- Place the eggs and milk in a large bowl. Add the bread and stir to combine.
- Heat the butter in a large, high-sided skillet over medium-high heat. Add the onion, 1 teaspoon of the salt and 1/2 teaspoon of the pepper and cook until soft, about 6 minutes. In batches, add the spinach and cook until wilted, about 15 minutes. Drain in a colander. Press gently on top of the spinach to release excess moisture. Set aside to cool slightly. Transfer the spinach mixture to a food processor and blend until smooth. Pour the spinach into the bowl with the bread mixture. Add 3/4 cup of the Parmesan, the remaining salt and pepper and the nutmeg. Stir until smooth.
- Spread half of the mixture on the bottom of the prepared pan. Lay the hard boiled eggs, end-to-end, in a line along the center of the spinach mixture. Add the remaining spinach mixture on top and press gently. Sprinkle the remaining Parmesan on top and bake for 1 hour. Cool 15 minutes, then run a thin metal spatula around the edges of the pan to release the loaf. Invert the loaf onto a cutting board, remove the parchment paper, and cut into slices.

Steps:
- Squeeze excess liquid from the spinach; set aside.
- In a mixing bowl, combine the eggs, cheese, bread crumbs, vinegar, salt and pepper.
- Stir in the well-drained spinach; pat mixture into a greased 8x4x2" loaf pan.
- (At this point, loaf may be covered and refrigerated overnight, if desired).
- Bake, uncovered, in a 400 degree oven for 20-25 minutes or until a knife inserted in the center comes out clean.
- Meanwhile, in a medium skillet, cook bacon until crisp.
- Remove from skillet, reserving 2T.
- pan drippings.
- Drain bacon on paper towels.
- Cook the onion and peppers in the bacon drippings in the skillet for about 5 minutes, or until tender.
- Stir in the flour and dash pepper; gradually stir in the water.
- Cook and stir until thickened and bubbly; cook 1 minute more.
- Stir in bacon and tomatoes; heat through.
- To serve, invert spinach loaf onto serving platter and cut into slices.
- Spoon bacon/tomato sauce over.
SPANISH SPINACH
Adapted from gourmet_recipes_from_around_the_world. Will be flush with spinach here in a few weeks so am looking forward to making this fresh from the garden! Planning to serve as breakfast/lunch with poached eggs (mmmm!) & as a side for roasted poultry & fish. Plan to add a bit of lemon when serving alongside fish.

Steps:
- Toast the pine nuts in a dry pan over medium heat, shaking every 30 seconds until they become fragrant & slightly golden. Do not burn by leaving unattended! Dump toasted nuts on a plate to cool.
- If using frozen spinach, microwave 4 to 6 minutes on high with no additional water but do cover them. If using fresh spinach, place rinsed but not dried leaves in a large pan and cook, stirring until wilted, about 3 to 4 minutes. Drain.
- Heat the oil in a nonstick, nonreactive skillet over medium heat. Add pimenton and cook, stirring about 2 minutes. Add spinach, salt and approximately 2/3 cup water, stirring another minute. Add pine nuts and toss until just heated through.
SPINACH CARROT LOAF
Very elegant presentation, lovely color combination, subtly flavored. Make it the day before and pop into the oven the day of your dinner. Great chilled as a side dish on a buffet

Steps:
- Melt butter in skillet and sauté the garlic and onion until the onion is translucent; cool.
- Beat the egg and egg whites and divide into 2 equal portions.
- Heat oven to 350°F and spray veggie oil into a 1-quart loaf pan.
- Place parchment paper on the bottom of the pan, oiled (you can also use wax paper).
- Purée the carrots with half of the onions, garlic, egg mixture parmesan and season with salt and pepper. Purée until smooth and pour into the prepared loaf pan.
- Purée the spinach with the remaining ingredients (half of the onions, garlic, egg and parmesan etc).
- Smooth the top of the loaf and place the loaf in a 9x13-inch ovenproof dish. Pour boiling water into the dish bringing the water level to about half way up the side of the loaf pan.
- Bake for 1 hour.
- Remove from oven and let the loaf rest in the water bath for 20 minutes before unmolding.
- You may serve this loaf hot, room temp or chilled.

I cut this recipe out of a magazine a long time ago, and finally pulled it out to make for a New Year's Eve get together. It is wonderful! I wish I hadn't waited so long!

- Preheat oven to 375°F.
- Beat cream cheese and mayo together in mixing bowl.
- Stir in next nine remaining ingredients.
- Cut a slice off top of bread; set aside.
- Carefully hollow out bottom, leaving a 1/2 inch shell.
- Cube removed bread and set aside.
- Fill the shell with spinach dip; replace top.
- Wrap in heavy-duty foil; place on baking sheet.
- Bake for 75 - 90 minutes or until dip is heated through.
- Open foil carefully.
- Serve warm with bread cubes and vegetables.

- Preheat oven to 350 degrees.
- Thaw spinach or cook in microwave according to package directions. Squeeze dry over the sink.
- Make a white sauce, sautéing onion and garlic, if using, in butter to start.
- Stir in the flour and cook a few minutes more, then add milk and simmer, stirring, until it thickens.
- Combine spinach, white sauce, seasonings, and beaten eggs.
- Pour into greased 8 or 9" square casserole.
- Bake 35-40 minutes or until knife comes out clean.

- Preheat oven to 375 degrees Fahrenheit.
- In a medium sized sauce pan, melt the butter over medium heat.
- Add the onion powder, nutmeg and salt.
- Add the soup, spinach and bread crumbs and eggs and mix well.
- Pour mixture in to a 9x5 loaf pan that has been sprayed with cooking spray.
- Bake for 1 hour or until knife inserted in to the center comes out clean.
- Allow to cool for 10 minutes in pan, then invert onto a serving platter and cut into 1 inch slices.
- FYI this is a perfect make ahead dish. Just reheat as needed.
