SPANISH MARINATED OLIVES

1/4 cup olive oil
2 teaspoons sherry vinegar
1/2 cup mozzarella pearls
1/2 cup 1/2-inch-cubed manchego
4 cloves garlic, thinly sliced
3 sprigs fresh rosemary
2 bay leaves
Zest of 1/2 orange, peeled in long strips
1 cup Castelvetrano olives, pitted
1/2 cup kalamata olives, pitted
1/2 cup cured Beldi olives, pitted
1/2 cup 1/2-inch-cubed chorizo

Steps:

  • Add the olive oil and sherry vinegar to a small bowl and whisk.
  • Add the mozzarella, manchego, garlic, rosemary, bay and orange peel to a large bowl, pour over the marinade and then toss. Add the olives, stirring to make sure they are covered in the marinade. Cover and refrigerate for 8 hours or overnight.
  • Before serving, drain off any excess liquid. Add the cubed chorizo, toss and serve.

Similar to a tapenade, you can spread this on any fish fillet or chicken, wrap in a foil pouch, and grill. This green-and-red flecked spread looks particularly pretty over a pink salmon fillet. 1 cup pimento-stuffed green olives (Spanish)
2 tablespoons fresh breadcrumbs
1 tablespoon capers, drained
2 garlic cloves, coarsely chopped
1 teaspoon molasses
black pepper, freshly ground to taste

Steps:

  • In a blender or food processor, process the olives, bread crumbs, capers and garlic on low speed until pulverized into a mixture that loosely holds together. Do not puree.
  • Transfer to a bowl, and stir in the molasses and pepper.

What's not to love? This is an easy make-ahead appetizer that takes 15 minutes to prepare and is so yummy it will be gone 15 minutes after you set it on the table. Pitted black olives and pimiento-stuffed Spanish/Manzanilla olives make it look as colorful as it is delicious. Serve it with crackers or crispinis. I also use it as a sandwich spread...it really spruces up a plain old cold-cut or deli sandwich.

1/4 cup pitted black olives, finely chopped
1/4 cup pimiento-stuffed Spanish olives, finely chopped

1/4 teaspoon garlic powder
1 dash seasoning salt (optional)

Steps:

  • Mix well and chill for a minimum of 2 hours (overnight is best).
  • Serve with crackers or crispinis -- OR --

Marinated chicken with Spanish Olive Tapenade that turns out juicy with a smoky garlic and fresh olive and caper flavor tweak. Leftovers (if any) stay moist if held over in refrigerator for several days.

6 tablespoons salt
6 tablespoons sugar
1/2 teaspoon pepper, cracked
1 (3 -3 1/2 lb) whole chickens
10 pitted Spanish olives
3 tablespoons olive oil
1 garlic clove
1 teaspoon capers

Steps:

  • Marinade:.
  • Dissolve salt and sugar with pepper in 1 quart cold water and add with butterflied chicken in a gallon size zipper lock bag and refrigerate for at least 2 hours up to four hours. Remove chicken from bag,rinse thoroughly, pat dry with paper towels.
  • Tapenade:.
  • Pulse olives, olive oil, garlic and capers in food processor until mixture becomes a slightly chunky paste (do not overprocess). Loosen chicken skin and push tapenade under skin of breasts, thighs and legs and season with pepper to taste. At this stage you may also sprinkle with a good BBQ seasoning to taste.
  • Place chicken bone side down on grill over a medium heat. For a more smoky taste add a few wood chips.
  • Top chicken at this stage with a flat pan weighted with several bricks and grill until chicken is a deep brown, about 12 minutes.
  • Remove weighted sheet pan and bricks and flip chicken over with large metal spatula and grill until instant read thermometer reads 160 degrees at the deepest part of the thigh,and juice runs clear, about 12 to 15 minutes longer.
  • Upon removing chicken to platter, brush both sides with a mixture of honey and fresh lime juice. Cover with foil and let rest for 15 minutes before carving.
  • NOTE: If you have never butterflied a chicken let your butcher do it for you. Whether a prepackaged whole chicken or one from the butchers case, they will do it for you at no charge. This recipe excels with a butterflied chicken, cut up chicken, well it's just not the same.

1 tablespoon fresh rosemary

2 lbs Spanish olives, such as manzanilla, with pits
1 orange, unpeeled, sliced into 1/8 inch circles
1 cup whole almond, with skin
1/4 cup sherry wine vinegar
1 cup extra virgin olive oil
2 bay leaves
10 fresh thyme sprigs
1 red chili pepper, halved lengthwise

Steps:

  • Preheat the oven to 300 degrees F.
  • Combine the olives and the remaining ingredients in a mixing bowl.
  • Transfer the mixture to a baking dish, cover with foil, and bake for about 2 hours.
  • Drain the oil out (keep it to use as a bread dip!).
  • Serve the olive mixture warm or at room temperature.
  • They go nicely with assorted cheeses!

The toasts can be made a day ahead for this, and also the cream cheese mixture should be prepared a day ahead then covered and refrigerated, as the flavor will enhance if left overnight to chill, but bring to almost room temperature before spreading on the toasts. This will make about 36-40 canapes, and they are easy to make and delicious!

10 -12 slices white bread (just use sliced regular sandwich bread for this, can be a day old and place in the fridge overnight)
2 -3 tablespoons butter, melted (no subs!)
1/4 cup grated parmesan cheese (or to taste) or 1/4 cup romano cheese (or to taste)
3/4 cup cream cheese, softened
1/3 cup pimento stuffed olive, finely chopped
1/4 cup green onions or 1/4 cup scallion, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 teaspoon paprika (or to taste)

Steps:

  • Set oven to 375 degrees.
  • Set oven rack to middle position.
  • Cut out about 40 rounds with a 1-1/2 - 2-inch round cookie or biscuit cutter (can use end of a small glass but be very careful not to break glass, a biscuit cutter works the best!).
  • Place on a large baking sheet and brush one side with melted butter.
  • Bake for about 8 minutes, or until golden brown (leave the toasts on the baking sheet).
  • Set oven to broiler heat.
  • In a bowl mix together cream cheese, olives, green onion or scallions, red bell pepper and paprika (add a couple teaspoons of dry sherry in if you have some) mix until well combined.
  • Top each toast with about 1 teaspoon of the cream cheese mixture, then sprinkle with grated Parmesan cheese.
  • Broil 4-inches from heat until the Parmesan begins to turn golden (about 1 minute).
